The vineyards are dry-farmed with an average age of thirty-five years, grown in a mix of clay and limestone. Following the Milú philosophy of \"happy wines made from happy grapes,\" the grapes are de-stemmed and fermented at cold temperature from native yeasts. A slight maceration before the end of fermentation creates a delicate and fresh wine.
