The Wairau Valley Sauvignon Blanc is their benchmark expression: harvested largely by machine during cool, often cold night-time conditions, picked earlier than normal over a three-week period commencing 16 March, transported directly to the winery in the Omaka Valley, lightly pressed for high-quality juice, and left on lees on individual vineyard batches until late June before blending.
