With Assemblage 4, IWA continues to explore the possibilities of assemblage through contrast and balance. There is richness here, but it is never heavy. Instead, the sake moves effortlessly across the palate, with bright aromatics and savory complexity creating a sense of constant motion.
The nose opens with delicate notes of marzipan and fresh citrus zest, followed by the distinctive aromatic lift of sansho pepper. As the sake develops, subtle herbal and anise-like tones of fennel emerge, adding freshness and complexity.
