The Dalmore 12 is recognized as a whisky with character far beyond its age. The spirit is initially matured in American white oak ex-Bourbon casks, yielding soft vanilla and honey notes. A proportion of the spirit is then finessed in pinnacle Sherry casks, including 30-Year Old Matusalem Oloroso casks, exclusive to The Dalmore, to give the whisky a rich, nutty character.
