Maestri ages their Prosciutto Italiano for over 400 days, well beyond the minimum required for even the finest DOP designations, allowing the ham to develop a depth of flavor, silky texture, and complex sweetness that shorter aging simply cannot achieve. Mahi is the project of Brian Bicknell, one of Marlborough's most thoughtful and independent-minded winemakers. Where much of the region's Sauvignon Blanc is made in a loud, industrial style — cold-fermented in stainless steel to maximize tropical fruit and aromatic punch — Bicknell takes a fundamentally different approach. Drawing on what he calls a "chef's philosophy," he incorporates wild yeast ferments and aging in old oak barrels to build texture, complexity and genuine depth into a variety that is too often reduced to a single dimension. The result is a Sauvignon Blanc that stands apart: more sophisticated, more food-friendly and more interesting than the category norm.

The 2025 opens with an expressive and layered nose — lemon peel, grapefruit pith, apple blossom and pastry, with citrus and tropical notes woven through secondary characters that emerge from the wild ferments and barrel aging. The palate is elegant and well-structured, with a creamy, textural mid-palate that sets it apart from the region's stainless-steel standard. Bright acidity provides freshness and lift, while the long, complex finish reflects the care and intention behind the winemaking.

A fresh and engergetic Chardonnay that expresses the true character of Burgundy’s signature white grape variety. Perron de Mypont Chardonnay is sourced from selected vineyard parcels in the classic Chardonnay areas of the Côte de Beaune, Côte Chalonnaise, and Chablis. 

To ensure elegance and delicacy in the wine, the grapes were picked at optimal ripeness during cool mornings early in the harvest. Following fermentation, the wine was matured for nine months in used French oak barriques and 600-liter demi-muids to develop texture and complexity, while maintaining freshness. T

he finished wine is rounded and well balanced, with an aroma of white fruits and delicate flowers atop a fine mineral structure.

Vineyard Terroir

The vineyard area of Margaux is essentially based on the Garonne's layers, made up of gravel and pebbles from the quaternary period. Traditional Winemaking

Harvest: When fully mature, the grapes are for the most part hand-picked
Vinification: Grapes are crushed and destemmed, then put into fermenters. The harvest is heated to around 22°C to allow a quick start to fermentation. Twice daily pumping over with aeration takes place to extract maximum color and tannin. After alcoholic fermentation, vats are maintained at around 30°C for 15 to 21 days
Aging: 6 to 8 months aging in French oak barrels with racking every 4 weeks. Traditional aging in oak barrels creates oaky, toasty notes that blend harmoniously with fruity aromas
Finishing: Wines are fined and filtered on earth before bottling
