Papillon — French for “butterfly” — is Orin Swift’s flagship Napa Bordeaux blend, and one of California’s most distinctive cult reds. A wine of deliberate juxtapositions: delicate name, powerful wine; a boisterous personality with an elegant core. The 2022 is sourced primarily from the legendary Stagecoach Vineyard on Atlas Peak, with a small portion from Monte Rosso just over the county line — which is why it is labeled Napa County rather than Napa Valley. The blend brings together all five Bordeaux varietals: 71% Cabernet Sauvignon, 7% each Malbec and Syrah, 6% Cabernet Franc, 5% Petit Verdot, and 4% Merlot, aged 13 months in French oak, 40% new. The label was photographed by fellow winemaker and friend Greg Gorman.
The 2022 pours an opaque crimson core with a brooding cardinal rim. The nose opens with ripe cassis, blackberry, coastal chaparral, cedar box, and allspice. On the palate, cassis, pluot, blueberry, boysenberry, shaved fennel bulb, and a touch of earth lead to a round, weighty mid-palate. Dusty, coating tannins give way to a charming, supple finish of barbecue tri-tip, Madagascar vanilla, and toffee. Full-bodied, silky-textured, and built for the cellar.

Sourced from five distinctive Napa Valley sites — Cypress Ranch, Antica Estate, Amendola, DeConinck, and Fish Ranch — each lot was barrel-fermented and aged on lees for five months in 100% neutral French oak, with gentle bâtonnage to enhance mid-palate richness while preserving purity. Winemaker Katie Vogt manages the canopy to encourage early ripening with acidity retention, blending acid-driven valley floor fruit with intense mountain fruit for nuance and depth.

Wine & Spirits Magazine 96 Points | The 2019 vintage might be something of an outlier for Cathy Corison, who picked two weeks later than usual, taking advantage of the cool season from summer into fall. This wine is, in fact, an idealized version of her benchland cabernet sauvignon, holding on to the elegance she regularly achieves, while adding a luscious textural beauty that more often comes from bottle age. James Conley of NYC’s Keen’s Chophouse found the aroma suggested a more delicate wine than the density and extract this one carries in its “cabernet grape tannins and intriguing, lifted fruit. If someone said, ‘I love Napa, but show me what I’m missing.’ I’d say, ‘Well, try this.’” Warm and explosive in its energy, this wine carries an imprint of the benchland soils in the play of darkness and light, in the detailed tannins that make you crave another taste. The Cline family has farmed the Sonoma Coast for decades, and their 'Seven Ranchlands' Chardonnay draws from two of their most prized sites — Catapult Ranch and Tolay Vista — situated in the Petaluma Gap, the cool corridor where Pacific air funnels east through the Sonoma mountain range and slows ripening to a crawl. The result is a Chardonnay with the kind of natural acidity and layered flavor development that most California whites have to work hard to achieve. 2024 was a warm, consistent vintage with a late heat spike that allowed grapes to reach perfect ripeness without sacrificing freshness — and at $14.99 with JS:92 and WE:91, this is one of the best-value Chardonnays in Sonoma.
Handpicked before dawn, each parcel is vinified separately: destemmed, lightly crushed, and pressed to extract richness, then racked after 24 hours to retain solids. Half ferments in stainless steel (inoculated), half in barrel with native yeast. Both go through 100% malolactic fermentation and age 8 months in French oak before blending. On the nose: ripe stone fruit, toasted brioche, and a hint of vanilla. On the palate: creamy and full-bodied with bright acidity, flavors of peach, lemon curd, and toasted oak, finishing long and clean.

Knox Alexander Pinot Noir harmoniously combines the distinct characteristics of two esteemed estate vineyards: Bien Nacido and Rancho La Cuna.

Winemaker Description
Cherry, pomegranate, and floral notes of lavender and violets. Dried cranberry, black raspberry, cocoa, vanilla, and black pepper spice.
Intense, vibrant red fruit—black cherry, cranberry, pomegranate—mixed with darker flavors of currant, plum, and hints of chocolate and vanilla. Nice acidity, making the wine balanced and sweet, but not at all cloying—an ideal dessert wine.
Dashe Cellars has made Late Harvest Zinfandels since 1997, and this luscious and balanced dessert wine has always been a favorite. This particular Late Harvest Zinfandel is made from grapes grown on the Louvau Vineyard in Dry Creek Valley. One of the reasons that we love this vineyard is the wonderful acidity of the grapes. The resulting wine is focused and clear—it’s never cloying, and always finishes with a crisp, clean, sweet-spicy note.
We create the conditions for making Late Harvest Zinfandel by allowing the grapes to hang on the vine approximately 3--4 weeks after they normally would be picked for a dry wine. These grapes were picked on October 30th on a beautiful Fall day, and the grapes arrived at the winery at 40° Brix of sugar. We crushed the grapes into a small 1,500-gallon tank and as is our tradition at Dashe Cellars, we fermented the grapes naturally, using the native yeasts that naturally live on the skins of the grapes. We let the grapes macerate to gain color and flavor, and then allowed the tank to warm. The fermentation took off quickly, and then naturally halted when the alcohol had reached about 15.5% and the sugar level was about 9%. We always allow the wine to achieve its balance of sweetness and alcohol naturally, by letting the fermentation finish on its own. The wine was aged in older French oak barrels so as to not overpower the intensity of the fruit. We bottled the wine as soon as possible to maintain its fresh fruit flavors and conserve its sweet concentration and purity. The wine is unfined and received minimal handling to the bottle.

The Melon hails from the decomposed granite and limestone soils of the Chalone appellation, on a high elevation south-facing site planted in 1985 by the legendary DIck Graff.
