Cherry, pomegranate, and floral notes of lavender and violets. Dried cranberry, black raspberry, cocoa, vanilla, and black pepper spice.

Intense, vibrant red fruit—black cherry, cranberry, pomegranate—mixed with darker flavors of currant, plum, and hints of chocolate and vanilla. Nice acidity, making the wine balanced and sweet, but not at all cloying—an ideal dessert wine.

Dashe Cellars has made Late Harvest Zinfandels since 1997, and this luscious and balanced dessert wine has always been a favorite. This particular Late Harvest Zinfandel is made from grapes grown on the Louvau Vineyard in Dry Creek Valley. One of the reasons that we love this vineyard is the wonderful acidity of the grapes. The resulting wine is focused and clear—it’s never cloying, and always finishes with a crisp, clean, sweet-spicy note.

We create the conditions for making Late Harvest Zinfandel by allowing the grapes to hang on the vine approximately 3--4 weeks after they normally would be picked for a dry wine. These grapes were picked on October 30th on a beautiful Fall day, and the grapes arrived at the winery at 40° Brix of sugar. We crushed the grapes into a small 1,500-gallon tank and as is our tradition at Dashe Cellars, we fermented the grapes naturally, using the native yeasts that naturally live on the skins of the grapes. We let the grapes macerate to gain color and flavor, and then allowed the tank to warm. The fermentation took off quickly, and then naturally halted when the alcohol had reached about 15.5% and the sugar level was about 9%. We always allow the wine to achieve its balance of sweetness and alcohol naturally, by letting the fermentation finish on its own. The wine was aged in older French oak barrels so as to not overpower the intensity of the fruit. We bottled the wine as soon as possible to maintain its fresh fruit flavors and conserve its sweet concentration and purity. The wine is unfined and received minimal handling to the bottle.

The 2022 growing season began with a mild spring that warmed into a temperate summer. The certified-organic grapes for this 2022 Napa Valley Cabernet Sauvignon matured smoothly and steadily, with a heat spike in early September that helped ripen the fruit to an ideal brix.

Following ZD’s signature style of producing big, ripe, fruit-forward wines, we sourced the grapes from small, organically certified vineyards, each with its own unique “terroir.” Each vineyard lot was fermented separately in small open-top fermenters and punched down three times a day, ensuring a gentle but effective extraction of color and tannins.

The individual lots were then aged in small American Oak cooperage for a year until final blending. The wine was returned to barrel and aged for an additional year before bottling.

This wine has a beautiful, deep ruby color with nuanced aromas blending cassis, anise, cola, black cherry pie, and subtle hints of baking spices complemented with cedar and vanilla. On the palate, red and dark fruits are forward and bright with fine, well-integrated tannins that gives it an unctuous mouthfeel. Lingering hints of blackberry, cocoa and toasty vanilla round out the long, lush finish. The balance of this wine leads to it drinking wonderfully now and it will continue to develop more complexity with age.

This juicy and aromatic Pinot Noir is loaded with flavors of red fruit, meaty cherries, tree bark, and sweet baking spice. It's a blend of de-classified barrels and press wine from the Littorai Sonoma Coast vineyards, including Hirsch, Pivot, Mays Canyon, Thieriot and The Haven, primarily on Gold Ridge loam soils, farmed using organic and biodynamic methods.

The Littorai path flows from a dedication to producing wines of place, wines which reflect the genius of an individual site. There are no substitutes for low yields and careful site and vine selection. Winegrowing is a wonderful word, for it implies that the object is not to produce the most beautiful vine or grape cluster but to produce the finest wine. Such wine should be a reflection of the vineyard and not the cellar. Littorai believes that additives such as cultured yeasts, cultured bacteria, acidification, and enzymes are not appropriate to the greatest expression of terroir; rather than looking to technology, the focus stays on hands-on farming and working with Mother Nature.

Wine is a reflection of the culture from which it springs. He was the first American ever hired as winemaker and vineyard manager of an estate in Burgundy, Domaine Guy Roulot in Meursault, where he resided until 1984, and went on to work at Domaine Georges Roumier, Domaine Bruno Clair, Domaine Parent, Domaine De Villaine, Domaine Delorme, and Domaine Dujac.

Upon returning to the United States, Ted worked as a winemaker in Napa Valley and became a consultant to a number of prominent wineries in California, Oregon, and New Zealand.

Heidi worked at several estates in Napa prior to founding Littorai: Domaine Chandon, Robert Pecota Winery, Robert Long Vineyards, and Stag's Leap Wine Cellars.

The top Cabernet is the 2017 Cabernet Sauvignon Dancing Bear Ranch, which comes all from the Howell Mountain AVA. It's another inky colored beauty boasting a terrific perfume of black and blue fruits, ground herbs, spice box, graphite, and forest floor. With brilliant minerality on the palate as well as full-bodied richness and an expansive, opulent texture, it has sweet tannins and is approachable today, yet will benefit from short-term cellaring and cruise for 25-30 years. Bottled only three weeks ago, the 2017 Cabernet Sauvignon Dancing Bear Ranch is composed of 89% Cabernet Sauvignon, 10% Cabernet Franc and 1% Merlot, having spent 22 months in 60% new French oak. Very deep garnet-purple in color, it reveals beautiful notions of kirsch, red and black currant preserves, raspberry pie and warm plums with hints of red roses, stewed tea, underbrush and cinnamon stick. Medium-bodied, the palate has wonderful red fruit and floral intensity intermingled with black fruits, framed by firm, grainy tannins and a wicked backbone of freshness, finishing very long and mineral laced.
