The Brut Souverain is the most historical cuvée in the region, as it was the first cuvée Apolline Henriot produced in 1808. Apolline aspired to put the light on her vineyards through the expression of a champagne. According to her, one year was not enough to tell the story of the terroirs, so she decided to put wines in reserve each year to incorporate them into a future blend.
Therefore, she founded the House by creating a Champagne that would have blending as its fundamental principle. The House respects this philosophy today and uses every terroir in this multi-cru, multi-vintage cuvée. In 1919, brothers Fernand and Gaston Chiquet became pioneers among the region's independent growers by producing and selling Champagne from their own fruit — a tradition now carried forward by eighth-generation Nicolas Chiquet from the Premier Cru village of Dizy in the Vallée de la Marne. Grapes are harvested by hand and vinified entirely in stainless steel, preserving the purity of fruit and the character of each vineyard site. Following secondary fermentation in bottle, Tradition spends more than 48 months aging on its lees — an extended maturation that develops a fine, persistent mousse and layers of fresh bread, biscuit and toasted nut complexity. Champagne Palmer & Co concentrates its vineyard holdings in the Montagne de Reims: in the grand cru villages of Mailly and Verzenay and the premier cru villages of Trépail and Villers-Marmery. While they also have holdings in the Marne Valley, the Côte de Sézanne and the Côte des Bar, their prestige cuvée Grands Terroirs, channels those north- and north-east-facing slopes with power and precision.
The 2015 vintage is blended from 50% Pinot Noir, 38% Chardonnay and 12% Pinot Meunier, sourced from Mailly and Verzenay as well as Trépail, Villers-Marmery, Ludes, Chigny-les-Roses and Rilly-la-Montagne. Palmer & Co refers to the vintage as “exceptional” because it combined high temperatures and little rainfall – spelling little disease pressure and even ripening. Sunny days and cool nights in August, they say, allowed for “perfect” ripening.
