Originally created by Maestro Mezcalero Lucio Moralesbas a gift to his wife, Agustina, “Zacate” is produced by the Morales family using the same traditional process as their classic “white tape” espadín, with one important twist:
Freshly cut lemongrass is added to the stills before the second distillation, and a bit more is macerated in the finished product for an extra touch of aromatics and
color.
The result is a bright and lively expression of espadín that makes a great highball, brings an interesting twist to classic mezcal cocktails, or works as a fun plug-and-
play substitute for gin.

Producer Description
The village of Yogana is located at the southern end of the Ejutla district of Oaxaca. Like all of his neighbors, Félix Ramirez is a full-time farmer. Unlike many of his neighbors, Félix is also a part-time mezcalero, working with several species of agave that he plants between rows of seasonal crops, and distills on equipment unique to Ejutla that allow his spirits to reach proof in a single pass.
His Espadin is cooked in a pre-hispanic style oven, traditionally tahona crushed, and is open fermented in cypress with well water. The single distillation to proof lends a wonderfully full body to this mezcal that retains tons of the beautiful earthy agave flavors that balance the smoke.

Pierde Almas is one of Mexico’s most revered artisanal mezcal producers — a house committed to methods unchanged since the late 16th century. La Puritita Verda is crafted from 100% Espadin agave grown in San Juan del Rio, harvested after 8–10 years of maturation, and produced by maestro mezcalero Rodolfo Hernández. Every step of production is resolutely traditional: agave hearts baked for up to ten days in earthen ovens, milled under a great stone wheel drawn by horses, fermented slowly without chemicals, and distilled in a wood-fired serpentine copper alembic whose design traces back to Moorish Spain.
The result is a savory, smoky joven mezcal with earthy undertones and genuine depth — complex enough to sip neat, versatile enough to anchor a serious cocktail.
Sustainability: Pierde Almas operates a Wild Agave Reforestation Program, actively replanting wild agave species in depleted areas each rainy season — inviting bartenders, chefs, and journalists to join their annual wild Tobalá planting.

Brilliant amber in color, the nose unveils layers of complexity. Leading with young leather, caramel and spices, the complex aroma profile shows hints at white flowers and lemongrass.
On the palate, this special expression showcases an explosion of floral notes followed by toasted nuts and mellow smoky undertones. This unique Tobalá Penca expression leaves a wonderful lingering, full mouth-feel.
Roasted for 5-8 days in underground pits before a ten-day to two week fermentation. Double distilled before 1-3 month aging in glass vessels with agave penca leaf.
