Cidrerie du Vulcain · Trois Pépins · Organic · 2024

The Cidrerie du Vulcain has produced terroir ciders in the canton of Fribourg, Switzerland, since 2006. Jacques Perritaz, after meeting Eric Bordelet in Normandy, decided to use "forgotten" fruits from isolated and untreated old orchards in the Pays de Fribourg, pressed with custom equipment to make natural ciders. Since 2013, he has planted an orchard of 4 hectares in old varieties for juice, cider, perry, and calva, called Les Vergers du Vulcain. His orchard is cultivated in organic farming.

Winemaker Description

The Trois Pépins Dry Cider is made from apples, pears and quince partially fermented using the "guillage" (“foaming”) technique, fermentation of the juice recently funneled, which pushes the foam called yeast out of the barrel. It's a Pure Juice Cider, fermented with its native yeasts and coarsely filtered.

Cazé-Thibaut · Naturellement Blanc de Noirs Extra Brut · Base 2023 · Champagne

Fabien Cazé, a tenth-generation grower, farms selected family parcels for his own small Champagne project. Naturellement is made entirely from Pinot Meunier grown across six parcels in Châtillon-sur-Marne and Vandières, on the western side of the Vallée de la Marne.

The family has tended these vineyards for generations, and Fabien's estate has been certified organic since 2018. Vineyard work is done by hand without herbicides or pesticides, with minimal soil disturbance. In the cellar, the grapes are pressed slowly and gently, moved by gravity, and fermented with native yeasts in barrels.

Extended time on fine lees and a restrained cellar approach let the fruit and place remain at the center. The result is a pure, precise Blanc de Noirs Extra Brut that showcases Pinot Meunier in a focused Champagne style.

Julien Sunier is one of Beaujolais' most celebrated natural winemakers, known for producing wines of exceptional purity, precision, and terroir expression. Working from his base in the Beaujolais crus, Sunier farms all of his fruit organically and approaches winemaking with a philosophy of minimal intervention — allowing the Gamay grape and the land to speak for themselves. Wild Soul is his ‘anytime red’: a wine conceived for pure, effortless pleasure, and a perfect introduction to his singular style.

The 2024 Wild Soul is sourced from 4.5 hectares of organically farmed vineyards in Régnié, with the addition, for the first time, of some declassified Morgon and Fleurie — making this effectively a Beaujolais Cru blend in all but name. The vineyards sit at high altitude (400 meters), where cooler temperatures and granitic soils produce Gamay of exceptional freshness, aromatic vibrancy, and natural tension.

Vinification follows Sunier's signature approach: cold carbonic maceration without extraction, fermentation with indigenous yeasts, and maturation in 3,000-liter foudres on fine lees. Only 10mg/L of SO₂ is added just prior to bottling, and the wine is released unfiltered — preserving every nuance of the fruit and terroir.

The 2024 opens with an open, expressive bouquet of cranberry, tomato vine, and subtle ferrous notes — complex and well-defined for a Beaujolais-Villages. On the palate, the wine is medium-bodied, poised, and transparent, with fine tannins, lively acidity, and a tensile, persistent finish. Pure, vibrant Gamay at its most compelling. Best served slightly chilled.

"Open and expressive bouquet with cranberry and touches of tomato vine, very well defined and complex for a Beaujolais-Villages… The palate is medium-bodied with fine tannins, very poised and transparent, with a tensile and quite persistent finish. Excellent."

Winemaker Descrption

Milan Nestarec Youngster Red is a red natural wine made from a blend of Zweigelt, Cabernet Sauvignon, and Dornfelder. The grapes are hand-harvested and destemmed. The juice ferments in 2000-liter stainless steel tanks. The wine ferments for about 2 months, with occasional pigeage and indigenous yeast fermentation. Elevage takes place in the same tanks for about 2 months. The wine is bottled unfiltered, unfined, and with zero sulfur added.

Winemaker Description

A good balance of fresh but softly perfumed ripe red currant and strawberry fruits with a touch of rosewater and anise. The nose leads to well-rounded but lively crunchy red fruits on the palate with spice and chalk notes on the elegantly tailored finish.

After being founded in the 1750s, in the mid-18th century, the Domaine de Montille century extended over 12 hectares. The family's financial problems meant that Etienne de Montille, the manager at that time, had to abandon certain parcels of land and focus on 3 hectares, mainly in Volnay. With the arrival of Hubert de Montille, Etienne's grandson, the domaine took off in another direction. Like his father, Hubert was a lawyer, however he would go on to lead a double life as a wine grower and a lawyer. He decided to produce his own wines from A to Z. Within a few decades, he would become one of the finest examples in the region, perfectly expressing the terroir of each climat with pure and elegant wines.

Today, the domaine is managed by Etienne and Alix de Montille, Hubert's children who also were originally steered towards a legal career. The domaine now has 20 hectares of vines, including 15 of grand and premier crus, on the best climats of Burgundy, in white and red! Domaine de Montille now produces its wines using biodynamic methodology, perpetuating the tradition of innovation and excellence introduced by Hubert de Montille. Etienne and Alix also created a mini trading structure, Maison Deux Montille Soeur Frère.

Expert Review — Vintage 2023

92 pts — James Suckling: “Ripe yet restrained, this sits on the edge of reduction, showing aromas of yellow apples, grilled peaches, lemon curd and a touch of struck flint. The palate reflects the cool vintage with bright acidity and a layered feel, delivering baked citrus, toasted almonds and subtle spices. Rounded and fresh with a savory, lingering finish. Drink or hold.”

Winemaker Notes

Grgich Hills’ estate-grown Chardonnay is a singular expression of Napa Valley — biodynamically farmed, and uniquely crafted without malolactic fermentation to preserve its natural, vibrant acidity. The 2023 vintage opens with aromas of sweet lime, fresh lemon, green mango, and white peach, leading to a palate of fresh citrus, star fruit, mango, and a hint of vanilla, all supported by juicy acidity and abundant minerality. The finish is long, layered, and deeply satisfying.

Our Professional Review

Oscar Garcia Moncada, 67Wine Buyer, writes: Raventós i Blanc De Nit Rosé is a benchmark rosé sparkling wine. The Raventós family’s commitment to biodynamic agriculture serves as the core philosophy of their winemaking. Fine bubbles with a nose of raspberry, red currants, and wild strawberries. Crisp and enticing finish. Serve chilled as an aperitif.

A Spanish sparkling rosé made with biodynamically grown estate grapes in the style of Cava. This Macabeo-driven blend has a pale light pink hue — matched on the palate with an elegant bouquet of pink grapefruit, rose petals, red berry fruits, and lively acidity.

Expert Reviews

Wine & Spirits Magazine — 94 Points | Pepe Raventós adds depth and a touch of color with fruit from Monastrell vines planted in 1974. That addition lays a smoky note and red-fruit hints over a base of Xarel·lo, Macabeo, and Parellada. Narcissus scents, peach fuzz, and brisk clarity of flavor — its elegance is hard to resist.

Decanter — 91 Points | Simple nose but very pretty red crunchy fruit and mulberries on the palate. Pleasant acidity and excellent length. Very pretty.

Expert Review - Vintage 2023

Vinous 93 Points | The 2023 Vouvray Sec Le Haut-Lieu is a pure, refined, seamless style with pear, pineapple and nectarine flavors. It boasts excellent clarity and refinement, with lovely freshness hailing from calibrated acidity that bursts through this blossoming wine. Considering this was only bottled three weeks before tasting, I’m very encouraged by the results.

Wine Spectator 92 Points | Fresh-crushed apple, quince and spice notes have an earthy dimension, with hints of roasted agave and wet soil. There's beautiful range and just enough plumpness to make this generous, yet it's held in check by a chalky mineral element and very fine tannins. Toasted almond and salted butter notes move in, with lime-edged acidity cleaning up the finish. Refined and complex. Drink now through 2037.

Winemaker Description

The original Huët vineyard is nearly 9 hA. It has the richest soils of the domaine’s three crus - a deep limestone-clay - and the wines are generally the estate’s most approachable. In some vintages, small quantities from nearby estate parcels may be added to Le Haut-Lieu. Winemaker Description.

Expert Review - Vintage 2023

Vinous 95 Points | The 2023 Vouvray Sec Le Mont is precise, upright and flinty. It's less immediately charming than the styles we've seen in recent warmer vintages, but it was only tasted three weeks after bottling—this is one to revisit. There's just the right amount of juicy, peachy flesh within this light-bodied yet concentrated wine. It has the potential to charm but does so without showing off. Flinty and tightly sewn together, it has curves in the right places, but you're just going to have to wait for it to take shape.

Winemaker Description

Le Mont wines are often the estate's most reticent, but develop the strongest perfume with age. Mineral-driven with a crystalline purity, this is the precision we've come to rely on with Le Mont.

Crop Harvest Earth Meyer Lemon Vodka — USA

Crop Harvest Earth is an American artisanal spirits brand built on a simple but powerful idea: that the best vodka starts with the best ingredients, grown responsibly from the earth. Crop Meyer Lemon Vodka is crafted from organically grown Meyer lemons — the prized hybrid citrus known for its sweeter, more floral character compared to standard lemons — and distilled to capture the authentic brightness and balance of the fruit in its purest form. At 70 proof, it is lighter and more delicate than standard vodka, designed to let the natural Meyer lemon character shine through in cocktails and sipping alike. The result is a refreshing, versatile citrus vodka that delivers the perfect balance between sweet and tart — a genuine expression of one of America's most beloved citrus fruits.

On the palate, it is crisp and clean with the distinctive sweet-tart balance of a perfectly ripe Meyer lemon, finishing with a refreshing citrus lift. Wonderful with club soda, in a cosmopolitan, or as the key ingredient in a lemon drop martini — versatile enough to complement any cocktail.

Producer Notes

Villa di Capezzana’s Barco Reale di Carmignano is often called the ‘little brother’ to the estate’s prestigious Carmignano DOCG — offering a more accessible, youthful entry into one of Tuscany’s most historic and unique wine regions. A blend of Sangiovese, Cabernet Sauvignon, and Canaiolo. the 2023 is dusty and floral with autumnal spices, cedar shavings, Tuscan dust, and dried strawberries. Soft-textured and supple on the palate with mineral-tinged red berry fruits and a web of fine tannins. Finishes with hints of orange citrus and a tart cherry twang.

Expert Reviews — Vintage 2023

• Wine Enthusiast 92pts | A primarily herbaceous, earthy nose has warm Bing cherry undertones to provide balance. Cherries grow into themselves on the palate, above a latent bitterness of coffee and bergamot. Acidity is fierce, and tannins clear the mouth, but dynamism doesn't come at the expense of coherence.
• Vinous Media 91 pts | The 2023 Barco Reale is a total pleasure to the senses, as crushed cherries and wild berries mix with sweet sage and spice. It possesses a pretty inner sweetness offset by crisp mineral tones and a steely sensation. Tart blackberries mix with a sour citrus twang as it finishes long and staining yet remarkably fresh. The 2023 Barco Reale is a total pleasure to taste.

• Bistecca alla Fiorentina or wild boar ragù pasta

Winemaker Description

Ruby-red color. The nose is complex and elegant. Notes of dry flowers, hay and rose petal, accompanied by a hint of chamomile. It is fresh, balanced, silky, enveloping and full-bodied on the palate. The tannins are prominent yet well-integrated. The finish is long and persistent. We recommend decanting a few hours before serving.

Expert Reviews - Vintage 2020

Jeb Dunnuck 98 Points | A medium red hue, the 2020 Barolo Rocche Di Castiglione offers more complexity and is more nuanced in the glass, with notes of dried raspberries, tangerine, roses, dried herbs, and cedar. Medium-bodied, it is crunchy with an elegant feel but has balanced structure and retains a somewhat more chiseled feel that’s true to the vintage. It has a lot to enjoy now and also has a wide drinking window. Drink 2025-2050.

The Wine Advocate 96 Points | The Vietti 2020 Barolo Rocche di Castiglione is a very delineated wine with sharp ferrous notes, cherry cola, redcurrant and chalky mineral. It is extremely precise in terms of its aromas. The effect is direct and layered, showing different sides and increasing complexity as it opens in the glass. Dried floral notes, purple flower and iris also appear delicately. The chalky tannins feel abrupt at this young stage, but this wine is built to last nonetheless. Only 3,512 bottles were created.

Vinous 96 Points | The 2020 Barolo Rocche di Castiglione is a magical wine from a magical site. It marries finesse and volume to a degree that is not found in most of the other wines in this range. Castiglione Falletto is the center of the Barolo production zone, literally and figuratively, the place where many different soil types meet. As a result, the wines often possess mind-blowing balance, which is very much the case here.

Critical Acclaim — Vintage 2023

James Suckling — 98 Points
"Dark and complex wine, earthy and concentrated yet balanced. Vibrant aromas of cassis, violets, licorice, pencil shavings and graphite. Full-bodied, it displays a dynamic palate with dense, velvety tannins, fruit concentration and crisp, integrated acidity, which keeps it in balance. Gorgeous now, but even better in two or three years and beyond."

Enjoy Balta Pairs: Mas Petit Organic 2021

Expert Review - Vintage 2021

James Suckling writes 91 Points |  A well-balanced and flavorful blend of garnatxa and cabernet. Dark cherries, plums and earth aromas mingle on the nose and follow through to a medium body with creamy tannins. Vibrant with a fruity and chocolaty finish. From organically grown grapes. Vegan. Drink now.

Winemaker Description

Rhone meets Bordeaux in Penedes. The Cab here provides the body and power, Grenache for the florality and freshness. A cold maceration and fermentation in stainless before finishing in oak. Rich, velvety, dark berry, vanilla, baking spice, and a touch of licorice lead the way. Very generous fruit, big body, framed nicely in oak without it taking a front seat. This is the big red that will appeal to many.

Memo Summary Notes

The Parés Baltà Mas Petit 2021 is a characterful, eco-conscious red blend from the Penedès region of Catalonia, Spain. Produced by a family estate that has been organic since 1790, this wine is a "Crianza" style that balances Mediterranean warmth with soft oak influence.

Jean Marc Brocard Chablis Sainte Claire Biodynamic — Chablis, Burgundy 2024

Jean Marc Brocard is one of Chablis' most respected and forward-thinking producers, farming biodynamically across his estate to honor the region's singular Kimmeridgian limestone terroir. Chablis is the northernmost appellation of Burgundy — a place where Chardonnay expresses itself with a precision, purity, and mineral tension found nowhere else in the world. The Sainte Claire is Brocard's entry point into the appellation and a benchmark for what classic Chablis should be: 100% Chardonnay, hand-harvested, naturally fermented with minimal intervention, and vinified without synthetic inputs. Nothing added, nothing taken away — just the wine and its terroir.

The 2024 pours a pale gold with green reflections. The nose opens with lemon, yellow stone fruit, and fresh citrus — clean, precise, and inviting. On the palate, it's wrapped and balanced with a tangy, layered character: Kimmeridgian minerality, crisp acidity, and a clean saline finish that makes it one of the most food-friendly whites in the shop. Serve well chilled and let the terroir do the talking.

Winemaker Description & Memo Notes

The Umathum Zweigelt Rotburger Classic 2022 is a standout example of Austria’s most-planted red grape. Produced by Josef "Pepi" Umathum, a pioneer in biodynamic viticulture in the Burgenland region, this wine is celebrated for being "crushable" yet sophisticated.

The name "Rotburger" is used here as a nod to the grape's historical name (Zweigelt is a cross of Blaufränkisch and St. Laurent).

Tasting Notes

•    Appearance: Deep ruby red with a youthful purple rim.

•    Nose: A "cherry bomb" on the nose—expect intense aromas of sour cherry, blackberry, and raspberry, accented by a distinct black pepper spice and a touch of damp earth or flint.

•    Palate: Fresh and juicy with medium body. It features vibrant acidity and soft, silky tannins. The palate mirrors the nose with tart red fruit and a savory, spicy finish.

•     Structure: Fermented with natural yeasts and aged for one year in large, neutral Austrian oak barrels (foudres) to preserve the purity of the fruit rather than adding heavy oak flavors.

Pepi Umathum is one of Austria's best known producers. In the Burgenland growing district called Neusiedlersee (Lake Neusiedl), he counts as one of the great champions of the traditional Austrian grape varieties. His main holdings are Rotburger (Zweigelt), St Laurent and Blaufrankisch with a bit of Welschriesling, Roter Traminer, the extremely rare Gelber Traminer, and the unusual ancient Lindenblattriger (Harslevelu in Hungary).

Pepi has embraced the intricacies and harmonies of biodynamic viticulture, and for most of his wines, which are all hand-harvested, he prefers to use large barrels of native Austrian oak, which underscores the clear fruit aromatics of the wines. Some of the high-toned single vineyard bottlings are matured in smaller oak barrels and barriques, and are first released three years after the vintage.

Memo Summary Notes

Notably, Umathum uses the name "Rotburger" (the original name for Zweigelt) to move away from the controversial historical associations of the grape's namesake, Dr. Zweigelt.

Crop Harvest Earth Cucumber Vodka — USA

Crop Harvest Earth is an American artisanal spirits brand built on a simple but powerful idea: that the best vodka starts with the best ingredients, grown responsibly from the earth. Crop Cucumber Vodka is crafted from organically grown cucumbers and distilled to capture the authentic, garden-fresh character of the vegetable in its purest form — not a synthetic flavoring, but a genuine expression of the ingredient itself. At 70 proof, it is lighter and more delicate than standard vodka, designed to let the natural cucumber character shine through in cocktails and sipping alike. The result is one of the most acclaimed flavored vodkas on the market, earning top scores from the industry's most respected tasting panels.

It's like taking a walk in the vegetable garden. The nose is lightly vegetal with white floral notes — the aroma of the earth, the savoriness of the green skin, and the fleshy, crunchy, juicy core of a freshly-picked cucumber. On the palate, it is clean and crisp with authentic cucumber character and a light, spa-like freshness. A brininess on the finish leaves a friendly open door for creative cocktails. Delicious on its own or as the key ingredient to a remarkable Bloody Mary, cucumber lemonade, or simply with club soda and a slice of fresh cucumber.

Tasting Panel 95 — "Cucumber is all grown up in this artisanal flavored vodka. The aroma of the earth, the savoriness of the green skin, and the fleshy, crunchy, and juicy core. A brininess on the finish leaves a friendly open door for creative cocktails."

Expert Reviews - Vintage 2022

Jeb Dunnuck 96 Points | The 2022 Pinot Noir Les Dijonnais comes from the oldest vines on the property, planted in 1995 with all Dijon clones. Bottled in late January of this year, the wine sports a vibrant ruby hue and shows off notes of wild raspberries, mixed berries, a hint of fresh violets, clove spice, forest herbs, and brambly earth. It’s chiseled in its structure, with coiled tannins and a good deal of youthful tension, and also offers mineral persistence, with wonderful salinity and dark undertones of earth. It demands another few years in cool cellars to soften and expand as it evolves and will drink well over the long haul. Drink 2026-2040. 590 cases were produced.

Winemaker Description

Planted in 1995, the Dijon block is now in its prime, delivering the complexity and elegance one expects from carefully tended twenty-six-year-old vines. The 2021 “DJ,” as it is known in-house, shows characteristic black raspberry and rose hip notes. Consistent with previous vintages, it displays Asian five spice, briar and even hints of blood orange coupled with a refreshing acidity and persistent finish. It is a superior vintage, one of the best of the decade. While the 2021 Les Dijonnais Pinot Noir is delicious right now, it will reward patience after a few years in a cool cellar.  Winemaker Description.
