Vilmart & Cie is one of Champagne's most celebrated grower estates, farming Premier Cru vineyards in Rilly-la-Montagne and Villers-Allerand with a practicing organic approach and a commitment to traditional winemaking. The Cuvée Rubis is their signature rosé — a Pinot Noir-dominant blend of 90% Pinot Noir (including 15% red wine addition) and 10% Chardonnay, drawn from 35+ year old vines on clay and limestone soils. Fermented and aged entirely in large foudre with no malolactic fermentation, the wine is built for texture, depth, and longevity. Thirty-plus months on the lees and a 8 g/L dosage complete a cuvée that consistently earns scores of 90–93 points across the major critics.
Generous and expressive on the nose: red berries, plum, blood orange, and dried flowers with a lovely yeasty undercurrent. Intensely floral aromatics meld into a core of citrus fruit. All the elements are so nicely balanced. There's so much to like. All that is missing is a bit of depth in the mid-palate. No dosage. Winemaker Description
A third cuvee, Blanc de Sable, was added as of the 2018 vintage. It is 100% Chardonnay also from Mont Agé on sandy soils with fossils, and is aged in a combination of 228 and 500-liter barrels and bottled without fining and filtration. It sees 36 months of aging sur lattes before disgorgement without sugar/dosage. The terroirs of Mont Agé and Les Voyets are somewhat atypical for the region in that they contain a uniquely high percentage of sand which produces Champagnes marked by real finesse. As Cuillier points out, there is about 1 meter of sand over a bedrock of compacted rock and sand strewn with fossils, the combination of which gives fruitiness coupled with freshness and minerality. All in all, it is a perfect terroir for producing his style of Champagnes which are wonderfully textured, nuanced, and complex and develop beautifully in the glass with some aeration.

Prosecco Col Fondo is characterized by the deposit of the yeasts on the bottom: it is made according to the 'Ancestrale' method, which was used since ancient times, of second fermentation in the bottle without disgorgement. What is obtained is a dry, fruity and refreshing wine. The prolonged contact with the yeast confers a sapid and decisive finish and well-balanced flavors, with bread crust, green apple and white peach aromas.
Perfect as an aperitif wine, it works well also alongside the main entrée.

Opening the bottle comes the gas pleasantly exhaling the aroma of citrus fruits and delicate yeast, which in this case are wild.
In the mouth, delicate perlage, continuity of citrus fruits, but without exaggeration and in the end that brioche flavor typical of good white sparkling wines.
For those interested in sugar, this Prosecco is extra brut, that is, very low content, but subtly noticeable.

Certified sustainable by OCACIA, their parcels grow on calcareous-clay soils with stones, flint, and sand — a varied geology that contributes freshness, mineral tension, and complexity. The Brut Noir is the estate's signature cuvée: a blend of Pinot Meunier for generous fruit and suppleness, Pinot Noir for structure and depth, and Chardonnay for brightness and energy. Each variety is vinified separately in temperature-controlled stainless steel with full malolactic fermentation, then assembled and aged approximately five years on the lees in the Alexandre family's cool cellar before hand riddling and disgorgement.
