Choose when time is of the essence
It is the perfect glass for light and medium-bodied white wines; these wines do not require prolonged contact with oxygen to best enhance their bouquet. Indeed, a slightly narrower opening of the glass is recommended: this helps the concentration and the direction of the aromas towards the nose. In this way, the perception of the aromas is increased, enhancing the sensations.
Biancolella Ischia DOC is a white wine made by the Cenatiempo winery, a cellar capable of enhancing the terroir of the Campania island. It is obtained from the single-variety vinification of grapes of the native Biancolella variety, grown in various Ischia municipalities, including Barano and Serrara Fontana. What makes the island's soils so special is the composition of the substrate, which derives from volcanic origins and gives the grapes minerality. The plots are located between 50 and 300 meters above sea level and therefore enjoy a remarkable diversity in terms of sun exposure.
The manual harvest extends from mid-September to the end of October. In the cellar, destemming of the bunches is followed by fermentation in cement tanks with temperature monitoring. The subsequent refinement is divided between steel and cement, to end with a month of rest in the bottle. Biancolella Ischia DOC is a white wine capable of surprising as soon as it is bottled, but also after 2-3 years of aging in the bottle.
