Cosmic Blanc brings together native Xarel·lo and Sauvignon Blanc in an aromatic white from Penedès. The producer describes vineyards on its Les Valls-Les Torres estate, at 600 meters above sea level within a Natural Park, where Xarel·lo provides the foundation and Sauvignon Blanc adds freshness.

The name Cosmic pays tribute to the biodynamic viticulture Parés Baltà has practiced since 2012. The producer identifies this wine as organic, biodynamic and suitable for vegans, with organic certification by CCPAE and biodynamic certification by Demeter.

Tasting Notes

Pale yellow in the glass, with intense aromas of flowers and white fruit accented by citrus and mineral notes. Fresh and smooth on the palate, it carries floral and citrus flavors, lively acidity and a long finish.

Winemaker Description

Parés Baltà: Hand harvest. After a light pellicular maceration of 4 hours, the grapes are gently pressed and fermented in stainless steel vats for 18 days at an average temperature of 16 °C. The wine is kept in contact with the lees for 3 months with daily batonnage.

Vinography, Alder Yarrow : “Cosmic smells of melting snow, white flowers and green apple. On the palate, green apple and white flower flavours merge with a deeply mineral quality that extends into a dry, tannic texture. The wine finishes with hints of grapefruit and camomile. Wonderful.”
