The Dassai 39 Junmai Daiginjo Sake 300ml is named for its 39% rice polishing ratio — each grain of Yamada-Nishiki milled until only 39% of the original grain remains. By removing the outer layers of the rice, which contain fats and proteins, the brewer reaches the pure starchy heart, resulting in a cleaner, more floral, and more elegant profile.
