J. Vignier Champagne Aux Origines Blanc de Blancs Brut (2017 Base) 750ml (Pre-Sale Price)
The Côte de Sézanne lies south of the Côte des Blancs and is known for producing generous, expressive Chardonnay. Here, the vines grow in clay and sandy soils over chalk, contributing both ripe fruit character and the mineral freshness associated with fine Champagne. The vineyard is farmed according to certified sustainable practices.
Made from 100% Chardonnay, the wine is fermented in stainless-steel tanks and undergoes full malolactic fermentation, lending softness and harmony to its naturally bright profile. It rests for seven months on its fine lees before bottling and receives a minimum of 36 months of bottle aging prior to disgorgement, allowing the wine to develop added depth, texture and complexity.
Elegant and inviting, Aux Origines offers a beautiful balance of fresh orchard fruit, citrus, white flowers and subtle brioche, supported by chalky minerality and a fine, persistent mousse. Its rounded texture and vibrant finish make it equally appealing as an aperitif or at the table.
Serve well chilled with oysters, caviar, shellfish, sushi, delicate white fish, soft cheeses or light poultry dishes.
