Kilchoman was founded in 2005 on the remote western shore of Islay — the first farm distillery built on the island in over 124 years. Anthony Wills set out to make whisky the old-fashioned way: growing barley on site, floor malting a portion of the production, and distilling in small batches with an obsessive focus on quality over volume. In just two decades, Kilchoman has become one of the most exciting names in Scotch, earning a devoted following among those who believe Islay deserves more than one or two great distilleries.
Machir Bay is their flagship — named after the two kilometres of wild, wind-swept beach on Islay’s west coast where turbulent Atlantic seas meet stunningly beautiful sunsets. A vatting of bourbon and sherry cask maturations, it is designed to showcase the full Kilchoman character: peated, coastal, and layered. The nose opens with lemon zest, vanilla, and a distinct maritime influence, giving way to floral intensity, juicy peach, and pear. The palate is generous — tropical fruit, dried sultanas, warming smoke, honey, malt, and butterscotch. The finish is long and complex, with sherry-soaked fruit, cracked black pepper, sea salt, and waves of citrus sweetness underpinned by maritime peat smoke.
