Stefan Wellanschitz of Kolfok wanted to make an orange wine that broke the mold — one with the structure and texture of skin contact, but none of the heavy tannins or oxidative roughness that can make the style feel difficult. His answer was intracellular fermentation: whole, uncrushed grapes rested in a closed vessel, where native yeasts slowly began working inside the berries themselves, drawing color and character from the skins with extraordinary gentleness before the fruit was pressed off into massive 1,100 and 1,500-liter used oak barrels to finish.
The result is Intra! — pale amber in the glass, bone dry, smooth, and mineral. The nose lifts with apple, grapefruit, melon, white flowers, and a subtle yeast breadth. The palate is simultaneously tropical and structured, with a fistful-of-blossoms quality that lingers long after the sip. A blend of Grüner Veltliner, Welschriesling, and Chardonnay from organically farmed Burgenland fruit. Vegan. No added sulfites.
