Parés Baltà has been farming the Penedès since the 18th century, and today it is one of Catalonia’s most respected organic estates. Materia Prima — Spanish for “raw ingredients” — is their love letter to Xarel·lo in its most elemental form: a Pétillant Naturel made by the Méthode Ancestrale, the oldest sparkling wine method in existence. No second fermentation, no disgorgement, no additions. The wine is bottled mid-fermentation, trapping natural CO₂ from the first and only fermentation. The result is a hazy, living, gloriously unfiltered sparkling wine that feels like the vineyard in a glass.
Pale golden and lightly cloudy, the 2024 opens with an expressive bouquet of citrus blossom, quince, white pear, and apricot. The bubbles are gentle and creamy — softer than traditional method sparkling, with a playful fizz that animates without overwhelming. The palate is vivacious and dry, with bright, saline acidity and a long, refreshing finish that calls for another pour. 100% organically farmed Xarel·lo from the Penedès. Vegan. Serve well chilled.
