Fabrice Pouillon farms his vineyards according to biodynamic principles — a commitment to the land that goes beyond organic certification, working in harmony with natural cycles to produce wines of exceptional purity, vitality, and terroir expression.
Les Blanchiens is considered one of the defining wines of the Pouillon estate — a mono-cru vintage Champagne from a single south-facing parcel in Mareuil-sur-Aÿ, farmed biodynamically on clay-limestone soils. An equal blend of Pinot Noir and Chardonnay, the two varieties are fermented separately in used neutral barriques and raised for approximately 18 months in neutral oak before bottling — the restrained use of older oak adding texture and complexity without masking the purity of the fruit or the distinctive character of the terroir.
As a Brut Nature Champagne, Les Blanchiens is finished without dosage — zero grams per liter — placing the focus entirely on the quality of the fruit, the structure of the vintage, and the mineral tension of the vineyard. This is a wine that demands and rewards attention.
The bouquet is distinctive and complex — opening with unique aromas of black tea and bitter orange, joined by ripe citrus, orchard fruit, dried flowers, gentle spice, toasted grain, and subtle chalky minerality. Chateau Simone Palette Rouge 2019 750ml RED

This historic estate, situated in the hills just south of Aix-en-Provence, has been in the hands of the Rougier family for two centuries and holds a virtual monopoly on the appellation of Palette. Château Simone encompasses twenty hectares of vineyards that sit on limestone soils at elevations between 500 and 750 feet above sea level on the slopes of Montaiguet. The special mesoclimate of this appellation is influenced by the encircling pine forests, the mass of Mont Sainte-Victoire, and the Arc River.
The vineyards were reconstituted after the invasion of phylloxera but many vines are over a century old. The Rougiers maintain the particular vinification methods developed and cherished over many decades. All of the grapes are hand harvested, destemmed, lightly pressed and fermented for 15 to 20 days in small wooden vats with only wild yeast, then put into small foudre to rest on the lees.
The red from Simone is an elegant yet well-constituted wine of great depth. It is primarily composed of Grenache and Mourvèdre but its special character reflects the presence of a mélange other grape varieties, albeit in small proportion, including Cinsault, Syrah, Carignan, Cabernet Sauvignon, Castet, Manosquin, Théoulier, Tibouren, Picpoul Noir, and Muscat de Hambourg.

The combo of dryness, cheek-sucking, orange peel acidity and chalky texture makes for a somewhat austere wine solo, but pair with a creamy goat's cheese or seafood risotto and watch it shine.

Originally a pastoral run dating back to 1839, and originally named Wolta Wolta, Jim Barry purchased the land for The Lodge Hill Vineyard in 1977 as he was sure it would “produce some of the best Riesling in the Clare Valley.” Situated at 480 meters above sea level and situated on the Eastern Ranges of the Clare Valley, the grapes at our Lodge Hill Vineyard are exposed to concentrated bursts of sunlight and cool nights which encourage slower ripening. This helps deliver beautiful natural acidity and citrus characters that ripen early because of the small crop it produces. Gentle pressing and a rapid move into the fermentation allows the natural fruit flavors to be preserved.
Aromas of fresh lime, spice, citrus blossom, white peach, and nectarine skins open on the nose. In the mouth, the lime flavors take center stage commanding attention on entry. The fruit is fleshy with considerable weight and framed with a refreshing driving acid. A lot of wine!

Fabrice Pouillon farms his vineyards according to organic and biodynamic principles, with a deep commitment to expressing the individual character of each parcel and the terroir of Mareuil-sur-Aÿ.
Soléra Extra-Brut is one of Fabrice Pouillon's most distinctive and intellectually compelling Champagnes — a multi-vintage cuvée created from a perpetual reserve established in 1997, designed to diminish the influence of any single harvest and place the character of Mareuil-sur-Aÿ firmly at the center of the wine. Each year, approximately 30% of the soléra is drawn off for secondary fermentation and replaced with 30% wine from the new harvest. This continuous process allows numerous vintages to become seamlessly integrated, adding layers of maturity and complexity while preserving the freshness and vitality of the most recent wine.
The blend is an equal partnership of Chardonnay and Pinot Noir from Mareuil-sur-Aÿ — Pinot Noir contributing structure, depth, and vinous power; Chardonnay bringing freshness, lift, and finely defined acidity. From the creation of the soléra through the addition of the 2010 vintage, the reserve was aged entirely in stainless steel. Tinto Rey means Red King. Tempranillo is the king of Spanish red wines, the most important varietal in our Matchbook Vineyard and the foundation of this unique Tempranillo/Syrah blend.
The aromas of our 2022 Tinto Rey are pure Spain in a glass: dark chocolate and earth and dusty cellar. The flavors are dense and complex with cedar and mocha layered over dried blueberry, poached fig and baking spices. A hint of eucalyptus hangs in the background. The finish is smooth with a balanced grip of tannins; silk with a backbone. This full-bodied red wine will pair well with the best cuts of meat.
Laetitia San Luis Obispo Coast California Brut Cuvée NV 750ml
Laetitia, too, has its roots in Champagne. It was established in 1982 as the American outpost of the Champagne producer Deutz, but was sold in 1997 to Jean-Claude Tardivat, who renamed it after his daughter, and then sold again last year to Eric Hickey, the winemaker, and his partners.
It now makes a full range of reds, whites and sparklers. Brut Cuvée is the entry level sparkling wine and it’s quite good — rich, creamy, toasty and apple fresh.

The Wine Advocate 93 Points | A blend of Sauvignon Blanc and Semillon, the Savage Wines 2023 Savage White is the only wine in the portfolio that sees a little bit (10%) of new oak. The intent is to offer a textural interpretation of these two grapes. The wine shows natural freshness, white flowers, wood spice and a hint of reduction. The 2023 vintage was cooler, like 2017, making for a classical growing season. This wine has a long saline finish with orchard fruit and pear with a mid-weight approach. The wine is left on the lees for as long as possible to augment that impression of salinity and to create longevity.

Jasper Morris, MW of Inside Burgundy writes 96-98 Points | Fractionally denser in colour than Clos St-Denis with a meatier bouquet, some blood orange as well as the traditional blueberry of this vineyard. A little white pepper comes up. This is brilliantly complete, no feeling of a lighter vintage, with superb grace at the finish. Ripe alpine strawberries. 76% whole bunches. Drink from 2030-2038.
Christy Canterbury, MW of TimAtkin.com writes 97 Points | Spicy and smoky on the nose, tangy red currants and raspberries soak into the palate. The tingly acidity makes you sit up straight! The mulberry and açai flavors on the palate are complemented by lively minty lift. Dense and structured, this has mercifully eternal length. This beautifully expresses its structuring terroir and the vivid freshness of the vintage.
Neal Martin of Vinous writes 96 Points | The 2021 Clos-de-la-Roche Grand Cru comes from five lieux-dits. This was slightly more reduced than the Clos Saint-Denis, dark berry fruit, briary; a faint touch of seaweed emerges with time. The palate is medium-bodied with finely-sculpted tannins, harmonious and tensile, again, discretely building with a transparent, lightly peppered finish that lingers in the mouth. Excellent. Charles Curtis, MW of Decanter writes 96 Points | This wine is a contender for best in class and one of the very best of the vintage across all appellations. The colour is a fairly deep ruby hue, and the wine displays a lovely ripe plummy fruit with accents of mineral, cigar wrapper and earth on the nose. The texture is initially silky and approachable, but with time one sees that this is a powerful wine with lots of tannin behind that; it is a wine built for ageing. This wine has it all. Drinking Window: 2027-2050.
John Gilman 95 Points | The 2021 Clos de la Roche from Domaine Dujac is also an outstanding young wine. The beautifully complex nose offers up scents of red and black cherries, plums, chocolate, mustard seed, venison, sweet stem tones, a marvelous base of soil and cedary oak. On the palate the wine is deep, full-bodied and complex, with fine depth at the core, good soil undertow, ripe, buried tannins and a long, impeccably balanced and vibrant finish. Bodegas Portia is Grupo Faustino’s most recent winery project and is the 7th winery in the group. Located in the heart of Ribera del Duero, the Portia winery is a display of modern design, winemaking function and artistic detail. The brand offers very small production wines - intense, energetic & balanced.
Harvesting at night allows the grapes to maintain all of their organoleptic qualities, as well as a balance between alcohol content and acidity. Once in the winery, the grapes are cold-macerated for a few hours before being pressed. Fermentation takes place in stainless steel tanks at a low temperature to maintain all the characteristics of the best Verdejo white wine.

Luis Gutierrez writes: The white 2020 Blanco is a little closed, young, clean and tender with subtle oak. They produced a little bit more in 2020, and the wine has less oak and less buttery sensations, a change that started with the 2017 vintage, which seems to have found its style harvesting earlier to retain freshness; it has 13.04% alcohol and a pH @ 3.23 and matured in larger oak containers, 500-liter oak barrels and some concrete for 12 months. It's floral and expressive, a blend of Viura with 20% Garnacha Blanca that they still consider work in progress but moving in the direction they want to go. 16,200 bottles and 100 magnums were filled in March 2022. Contino Blanco 2020 shows a very intense nose, marked by its aging in barrel. It is fresh and fruity wine, a true reflection of the identity of our vineyard. San Gregorio offers a Garnacha Blanca with great complexity and volume. The soils are clayey-calcareous, with medium stoniness, key for good drainage.
