Our small batch Kentucky Straight Bourbon Whiskeys are offered as a Small Batch, up to 12 barrels per batch, which was the result of one fermenter. The goal of the Small Batch is to capture the total essence of more complex notes from multiple barrels from distillate of the same fermenter. Weve decided to release the Small Batch Bourbon as a Bottled in Bond so fans of our Wheated Single Barrel Bourbon can do a side-by-side comparison.

Our Small Batch release mash bill is 64 percent corn, 24 percent rye and 12 percent malted barley using our yeast strains. We entered the cooper select, toasted and #4 char barrel at 110 proof after coming off the still around 137 proof. All of our whiskeys are aged and matured on our 168-acre campus inside any one of our six rickhouses. We have more than 100,000 barrels aging onsite.

Ardbeg is one of Islay’s most legendary distilleries — a remote, windswept outpost on the southern shore of the island that has been producing some of Scotland’s most intensely peated single malts since 1815. For devotees of smoky whisky, Ardbeg is a pilgrimage destination; for everyone else, it is a revelation.

An Oa (pronounced “an-OH”, named for the Oa peninsula at Islay’s southern tip) is the most approachable expression in the Ardbeg range — and the most deliberately rounded. Its singular character comes from time spent in a bespoke oak Gathering Vat, where whiskies from multiple cask types — sweet Pedro Ximénez, spicy virgin charred oak, and intense ex-bourbon — are brought together to harmonize before bottling. The result is Ardbeg’s hallmark peat and dark chocolate, mellowed by a delectable smooth sweetness: aniseed, silky butterscotch, black pepper, and clove, rising to an intense crescendo of flavor. Distilled from estate-grown Blue Weber agave from 300 ha lowland site, practicing organic farming. Agave are roasted at 120° C for 15 hours and allowed to rest for another 15 hours. Fermented in El Llano's original cement vat with house yeast for six to seven days to about 4-5% abv. Twice distilled in stainless steel pot stills with interior copper condenser by Eduardo Orendain before being aged in ex-Bourbon barrels for 11 months.

Featuring fruity-sweet flavor notes, the tighter cut of the distillate ensures less acetone flavors and puts an emphasis on a mid-palate wash of mint, pepper, vanilla, and ripe apple and plum.

Water, alcohol, sugar, raspberries and burnt sugar are blended together in refrigerated vats. When the alcohol content reaches a desirable level, the mixture is then filtered and bottled. Gin flavored with handpicked juniper berries from its Hamptons estate, cardamom, cumin, coriander, fennel and anise. The most eye-catching detail about this spirit is definitely its trendy pink color, which winemaker and partner Roman Roth gets by using the vineyard's rosé wine as the base for the gin. Once the rosé is distilled, Roth adds a small amount of grape skin extract to get that subtle pink color.

At PM Spirits, we're always on the lookout not just for superlative spirits, but also for like-minded people. When we met Jose Luis Gutierrez, we knew right away he was someone special.

Having spent years working both independently and for the Mexican Trade Commission throughout Europe – promoting and establishing reciprocity of the Tequila Denomination of Origin – Jose Luis later started working closely with producers in Jalisco in order to source and provide quality Tequila directly to European brands and bottlers.

We had been wanting to collaborate with someone on bottling a PM Spirits Project Tequila for quite some time. Jose Luis' passion for and knowledge of the spirit was apparent to us from day one, and we could think of no better person to have worked with to make this project happen. Thank you, Jose Luis.

This Tequila is the product of one single oven or horno. It was distilled from 100% estate-grown Blue Weber Agave. Bottled at two strengths – 80 proof and still strength 110 proof. No additives.
