95 Decanter Magazine: In the hands of Fèvre winemaker Didier Séguier, premier cru Montmains has a certain initial reserve. But with time, the green apple and gooseberry notes, touched with acacia blossoms and spice, open up on the palate. The texture is lively and fresh, yet there is substance here as well. The grapes are assembled from 10 parcels throughout Montmains, including some in Forêts and Butteaux. Séguier explains that Butteaux is deep in the valley and further from the Serein so it ripens later. The grapes are fermented in tank and older casks for 40–50% of the harvest.

Domaine William Fèvre’s Chablis Grand Cru Bougros 2023 is a superb expression of one of Chablis’ seven celebrated Grand Cru climats. Located at the western end of the Grand Cru slope, Bougros is traditionally known for producing wines of greater breadth, richness and power while retaining the vibrant acidity and mineral character that distinguish the finest Chablis.

Produced entirely from Chardonnay, the 2023 Bougros combines impressive concentration with remarkable freshness. The wine opens with aromas of ripe pear, peach and apple alongside citrus peel, white flowers and subtle notes of beeswax. As it develops, layers of chalk, crushed stone and marine-inflected minerality emerge.

The palate is broad and beautifully textured, with generous fruit balanced by bright, energetic acidity. There is richness here, but also precision: citrus, orchard fruit and mineral flavors build through the palate toward a persistent, dry and distinctly saline finish. Despite its concentration, the wine remains elegant and beautifully composed.

William Fèvre’s Bougros is produced from mature vines, many approximately 60 to 70 years old, growing in the deep soils of this historic Grand Cru. Among the most distinctive wines in the William Fèvre portfolio, Bougros Côte Bouguerots Grand Cru 2023 comes from a remarkable parcel at the lower, dramatically steep portion of the Bougros Grand Cru vineyard, close to the Serein River.

While classic Bougros is often known for its broad, generous and powerful character, Côte Bouguerots offers a very different expression. Cooler nights and the steep slope contribute remarkable freshness, tension and mineral definition, creating a Chablis of exceptional precision and energy.

The vineyard rises on an incline of approximately 40%, one of the steepest sections of the Chablis Grand Cru hillside. William Fèvre's Côte Bouguerots holding totals approximately 2.2 hectares, with the majority of the vines planted in 1979. The combination of mature vines, steep exposure and Chablis' celebrated Kimmeridgian soils gives this wine its extraordinary concentration and unmistakable mineral character.

It offers aromas of lemon oil, oyster shell and white flowers. Medium- to full-bodied, it is taut and structured, with bright acidity, ample dry extract and a long finish. Stylistically, it recalls Les Preuses more than the usual Bougros archetype. Of the 2.2 hectares, 1.8 were planted in 1979.

93 Vinous: The 2022 Chablis Les Clos Grand Cru has a surprisingly primal bouquet with gooseberry, melon, fruits de mer and citrus peel, with more oyster shell scents developing as it opens, though never quite achieving the flair of the Valmur. William Fèvre owns approximately 2.5 hectares in Les Preuses, divided between two distinct parcels. The Antique Collection’s uncut, unfiltered, wheated recipe bourbon is William Larue Weller. The previous release of this wheated bourbon was honored with a Double Gold medal at the 2022 San Francisco World Spirits Competition. 

The 2022 release was distilled in the spring of 2010 and barrels were aged in warehouses C, K and N. This bourbon registers at 124.7 proof. About Wine & Soul

Wine & Soul is the joint project of husband and wife Jorge Serôdio Borges and Sandra Tavares da Silva, both qualified oenologists. They bought an old port warehouse in the Vale de Mendiz in the heart of the Pinhão valley in 2003. The estate is 6 hectares with 2.5 ha under vine, averaging over 70 years old and planted with 30+ different varieties. The project is named after their dog Pintas, a Pointer.

Winemaking

Harvested in the second week of September in perfect conditions. All grapes were hand-selected, destemmed, and foot-trodden in traditional stone lagares throughout the full 10-day fermentation. Aging and malolactic fermentation in French oak barrels for 20 months.

Producer Description 

Gin flavored with handpicked juniper berries from its Hamptons estate, cardamom, cumin, coriander, fennel and anise. The most eye-catching detail about this spirit is definitely its trendy pink color, which winemaker and partner Roman Roth gets by using the vineyard's rosé wine as the base for the gin. Once the rosé is distilled, Roth adds a small amount of grape skin extract to get that subtle pink color.

Wölffer Estate is the Hamptons’ most iconic winery — and their Gold Label Rosé is the wine that put Long Island rosé on the map. Crafted from the estate’s maritime terroir on the East End of Long Island, where cooling sea breezes off the Atlantic preserve freshness and lift, this is a rosé of genuine complexity, understated elegance, and outstanding value. The growing season was shaped by hot, dry conditions in July and August that promoted small berry size and remarkable concentration, followed by a storm-free harvest and cooling October breezes that preserved vibrancy and balance. Rosé harvest ran from September 21 through October 7. Grapes were destemmed, pressed, and cold-settled at 40°F, then fermented slowly at 62°F over three weeks. The wine rested 12 weeks on the lees sur lie for added complexity and structure, fermented fully dry with no malolactic fermentation to preserve freshness.

The result: a radiant, delicate ruby rosé with honeysuckle, ripe wild strawberry, and classic floral aromas. On the palate, vibrant acidity and minerality balance beautifully concentrated fruit, with a refreshing, generous mouthfeel and a long, savory finish.

The Wine Enthusiast by Christina Pickard writes 92 Points | 2020 was a stellar vintage across New York State, despite the challenges of picking in a pandemic year. This charmingly demonstrates Long Island's prowess with Merlot. A fragrant fruit salad perfume of summer berries with subtle purple flower, vanilla and baking spice tucked beneath. It's supple, structured and harmonious, with firm, sappy tannins and a crunch of acidity.  

Winemaker Description

The Grapes of Roth is Winemaker Roman Roth's private label, and a true testament to his classic, yet adventerous, wine-making style. Wonderful dark cherry fruit with well integrated oak, classic graphite and great minerality is complimented by a very savory and elegant finish.

Dark red brick in color. Elegant aromas of cassis and fine toasted sandalwood fill the glass. The mouth-feel is rich and concentrated, yet balanced with wonderful fruit of plumbs, prunes and amazing minerality. The finish has layers of ripe tannins and nicely toasted oak with fine classic earthiness, leather and iodine notes. The fruit and alcohol provide great length and make this a very special Merlot that possesses great aging potential and is the perfect partner with food.

This is a wine to be aged. It has a huge maturation curve ahead and will gain many more nuances and facets. Serve just at room temperature. Pair this Merlot with dishes you might think of for big, bold wines: steak, cassoulet, duck and decadent dark chocolate desserts.
