Viticulture
Both Ivan and his brother Pierpaolo are entomologists, making biodiversity central to their philosophy. The winery is certified “Biodiversity Friend” — an organization that surveys and protects biodiversity, ensuring the production process does not lead to environmental loss and that the producer is committed to improving the quality of the surrounding ecosystem.
Winemaking

About the Producer
The Ronchi di Cialla winery sits within its own valley like something out of a fairy tale — roads curving through rows of vines planted between outcroppings of forest, with the family home and cellar perched at the top of a hill overlooking vineyards in all directions. Ivan Rapuzzi runs the winery with his mother and brother, following the same traditional methods as their father before them.

Winemaker Description
Santi Valpolicella Classico Superiore is a “ripasso” method Valpolicella; meaning that following primary fermentation the wine sees a second fermentation with the addition of Amarone grapes and skins, creating a richer, more complex and more exciting final wine.
Terroir: Santi Solane is sourced from estate vineyards within the original Valpolicella appellation of Valpolicella Classico.
Vinification: When primary fermentation is complete in early winter, grapes, skins and pomace from Santi’s Amarone are added to the vats. The additional sugars from the Amarone trigger a second fermentation which adds additional layers of complexity, rich fruit and structure. The wine is blended and then aged for more 3-5 months in small oak cask followed by an additional 12 months in larger neutral casks prior to bottling.
