Winemaker Description

Israel. 100% Petite Verdot Produced from grapes grown on old vines in the Carmel region. After fermentation and soaking on the skins, the wine aged in French oak barrels for 15 months.

The wine has a deep purple hue and aromas of blackberries, blueberries, licorice and leather. It is full bodied and has a long and well-balanced finish. Pair with lamb based casseroles, and pasta dishes with a mushroom or meat broth base.

The Special Edition series from Hayotzer showcases high-quality classic varietals crafted for connoisseurs who appreciate fine wine. Grapes were harvested at full maturation, then cold-soaked before fermentation at controlled temperatures. Following three weeks of maceration, the wine was aged in barrel and blended from the finest barrels of the vineyard.

Psagot Chardonnay M Series — Jerusalem Mountains, Judean Hills 2024

Psagot Winery was founded in 2003 by Yaakov Berg on the peaks of the Jerusalem Mountains — Psagot means “summit” in Hebrew — at 750 metres elevation, where vines are planted directly into terraced soft limestone bedrock. During construction, Yaakov discovered a cave beneath the winery dating to the Second Temple period, complete with an ancient wine press and period coins — one of which is reproduced on every bottle, connecting each glass to over two thousand years of winemaking history on this land. The grapes of our Volcanic Riesling grow in the Valley of Tears in the northern Golan Heights which is the coldest and highest viticultural area in Israel. The fermentation was at 15.0-18.0 degrees C to achieve a delicate extraction of colors, aromas and flavors.

The wine has a golden straw with hint of green hue, with scents of Jasmin, pear and lime. Through the palate light medium bodied wine, that have flavors of green apples and lime. With nice and well balanced acidity, as well as a crisp and mineral texture.

All Cabernet Sauvignon, from a site that neighbors Stagecoach Vineyard, this is a medium to full-bodied, densely concentrated example of mountain fruit, yet it's one that is not harsh or tough, with well-ripened tannins and a plush, lingering finish. Bravo. 

Jeb Dunnuck 94+ Points | All varietal, the 2021 Cabernet Sauvignon Peak Edcora Vineyard is another deep purple-hued wine in the lineup with tons to love. Pure cassis, graphite, leafy herbs, and damp earth-like nuances all shine here, and it's medium to full-bodied, with beautiful mid-palate depth, ripe, integrated, yet ample tannins, and a great finish. It offers pleasure today, yet I see no reason this shouldn't evolve for 15+ years if well stored. It's another gorgeous Cabernet Sauvignon in the vintage.

93 points Wine & Spirits | 2022 marks the fourteenth vintage for Covenant® Chardonnay Lavan®. The wine is made from grapes grown in a small vineyard on Sonoma Mountain. Jeff began working with this vineyard -- called Scopus -- back in 2010, when he made some Chardonnay for the vineyard's owners. He liked the wine so much, that he decided to make Scopus Vineyard the core of our Lavan® program the next year.
