Caribbean Cask has been matured in traditional oak whisky casks for 14 years, and then ‘finished’ in casks that previously held Caribbean rum. To create the ideal finish, Malt Master David Stewart filled American oak casks with his own blend of select West Indian rums. When he judged the casks to be ready, the rum was replaced with the 14 year old spirit and the wood was put to work adding the final touches.

The result is an exceptional single malt whisky with the traditional smooth, honeyed character of The Balvenie, married with notes of toffee and a hint of fruit, with a warm, lingering finish. Rich, sweet and creamy toffee on the nose combines with fresh fruit notes. Rounded with vanilla and sweet oak notes, with a fruity character that develops with time. Soft and lingering.

Domaine de la Grosse Pierre — Chiroubles, Beaujolais 2024

Pauline Passot’s story is one of the most compelling in Beaujolais. A trained sommelier who worked at the Michelin-starred Pierre Orsi in Lyon, she returned to her family’s roots in Chiroubles in 2016 with a clear mission: to show the world what this underrated Cru could do. Produced from equal parts Pinot Noir and Grolleau, the fruit for this wine comes from Chidaine’s estate-grown, biodynamically farmed vineyards located just north of the Cher River between the villages of Montrichard and Chissay-en-Touraine.

The nose of gooseberries with floral notes is followed by a medium-full wine with a chalky texture. Excellent acidity and beautiful tension bring up the solid mineral core. Very refreshing but surprisingly complex — a perennial favorite where supply never meets demand.
