Encomienda de Cervera is one of Spain’s most singular estate wineries — a historic property with documented vineyard records dating to 1741, situated in the Campo de Calatrava, a volcanic appellation in Castilla-La Mancha that remains one of the country’s best-kept secrets. The estate’s vineyards grow on volcanic soils at 750–850 meters of altitude, cooled by mountain microclimates with cold nights that preserve natural acidity and generate exceptional aromatic complexity. Vulcanus — named for the volcanic terroir that defines it — is a blend of Sauvignon Blanc and Verdejo, harvested selectively during the coolest hours of the day at optimal ripeness. Certified organic, the wine is fermented in restored 1927 concrete tanks that impart a distinctive creaminess through malolactic fermentation. This is Spanish white wine from a place unlike any other.

The color is a bright straw yellow. The nose is floral, fresh, and expressive: white flowers, white peach, currant, citrus, and aromatic herbs, with the stony, mineral undercurrent of volcanic soil. The Cline family has farmed the Sonoma Coast for decades, and their 'Seven Ranchlands' Chardonnay draws from two of their most prized sites — Catapult Ranch and Tolay Vista — situated in the Petaluma Gap, the cool corridor where Pacific air funnels east through the Sonoma mountain range and slows ripening to a crawl. The result is a Chardonnay with the kind of natural acidity and layered flavor development that most California whites have to work hard to achieve. 2024 was a warm, consistent vintage with a late heat spike that allowed grapes to reach perfect ripeness without sacrificing freshness — and at $14.99 with JS:92 and WE:91, this is one of the best-value Chardonnays in Sonoma.

Handpicked before dawn, each parcel is vinified separately: destemmed, lightly crushed, and pressed to extract richness, then racked after 24 hours to retain solids. Half ferments in stainless steel (inoculated), half in barrel with native yeast. Both go through 100% malolactic fermentation and age 8 months in French oak before blending. On the nose: ripe stone fruit, toasted brioche, and a hint of vanilla. On the palate: creamy and full-bodied with bright acidity, flavors of peach, lemon curd, and toasted oak, finishing long and clean.

Défaix Frères is a respected family domaine based in Milly, one of the most prized villages in the Chablis appellation. Frog’s Leap Flycatcher 2023 is a California red blend crafted to showcase the diversity and vibrancy of the state’s wine country. It’s designed as a fresh, approachable, and food-friendly wine made from a mix of grapes sourced “with intention” from heritage vineyards across California, reflecting different terroirs beyond the winery’s Napa home.

The blend typically features a variety of varietals — including Zinfandel, Petite Sirah, Merlot, Tempranillo, Cinsault, Carignane, and Syrah — that together create a generous, fruit-forward profile with red berry aromatics, savory depth, and balanced structure. Vinous 92 Points | The 2023 Brut Nature Reserva blends Macabeo and Xarel·lo from Penedès and was aged 2 years on lees. Citrus, lime, soft herbs and a nutty note define the nose. Dry and vibrant, it has fine, well-integrated bubbles, a touch of malic grip and a saline finish.

You might notice it isn't labeled as "Cava." AT Roca is part of Corpinnat, an elite group of producers who broke away from the Cava DO to maintain stricter quality standards, including 100% organic grapes, hand-harvesting, and vinification entirely on the estate.

Pairing: Its high acidity and bone-dry profile make it incredible with sushi, oily fish (like salmon), or light Mediterranean rice dishes. It’s also sharp enough to cut through fried appetizers or salty cured meats.

A new wine in this range, the 2022 Brut Nature Blanc de Noirs Fusion is a blend of 60% Pinot Noir and 40% Meunier. Rich, ample and layered in the glass, the 2022 is so impressive. Dried pear, crushed flowers, spice, ginger and dried herbs all build as the 2022 gradually unfurls in the glass. Readers will find a Champagne of real breadth and texture. I loved it. Bottled with no dosage. Disgorged: March 2025; multiple disgorgements throughout the year.

The Bordeaux Blanc from Antonins is a surprisingly crisp and zesty white wine. Reds often garner all of the attention in Bordeaux, but this is a "year-round" white that is great to have on hand to enjoy anytime.

The Château des Antonins Bordeaux Blanc 2023 is a standout example of a modern, accessible Bordeaux white. Produced at an estate with roots dating back to a 13th-century monastery, this vintage strikes a beautiful balance between historic terroir and vibrant, "New World" aromatic intensity.

The estate was originally an abbey for the Monks of Saint Anthony.

Winemaker Antoine de Roquefeuil spent time honing his craft in New Zealand. You can taste that influence here; it has the "zing" and tropical edge of a Marlborough Sauvignon Blanc but retains the stony, structured backbone that only Bordeaux soil provides.

About the Wine

The Dabouki grape — historically used for Arak or table grapes — is being rediscovered by top Israeli winemakers for its unique desert-friendly profile. This wine is a collaboration between Teperberg Winery, Israel's oldest family-owned winery, and internationally renowned street artist Dede, whose iconic graffiti adorns cities from Tel Aviv to major capitals worldwide.

Dede began painting his signature band-aids as a response to PTSD from military service. The heart-shaped band-aid on the capsule symbolizes healing and hope — making this bottle as meaningful as it is beautiful, and a standout gift or conversation piece for any holiday table.

Vinous 92 Points | A blend of Chardonnay, Welschriesling and Sauvignon Blanc from the younger vines of the estate (~15 years old). Gentle nuttiness and a touch of tatami mat on the nose, very subtle and calm. With air, a hint of butter emerges. The palate is all clarity, all lightness and all brightness on a super-slender frame that is soothing and smooth. Bone-dry.

About the Wine

Velich Tó White takes its name from the Hungarian word for "lake" — a nod to the estate’s proximity to Neusiedlersee in Burgenland, Austria. The Tó cuvée is sourced from the estate’s younger vines (15–25 years old) and blends Chardonnay, Welschriesling, and Sauvignon Blanc into a wine of remarkable purity and restraint.

Jeb Dunnuck 92-94 Points | The 2023 Guidalberto was tasted as a preview and was a preliminary blend of barrel samples prepared for this tasting by the winery team, led by Carlo Paoli. The second sample that was blended was pure and ripe, with detailed layers of youthful cherry liqueur, fresh herbs, and lavender perfume. The palate offers medium to full-bodied richness, with a supple and primary feel, though it starts to reveal its underlying refined structure. While this was an early preliminary look at what the wine could look like, I’m looking forward to next year’s tasting to see how it develops. 

The Wine Spectator 92 Points | Pure and juicy, revealing black cherry, blackberry, floral and Mediterranean herb notes, plus touches of spices. Light-bodied, elegant and deftly balanced, with a lingering, mouthwatering finish. This is approachable now but will benefit from another 612 months aging. Cabernet Sauvignon and Merlot. Vinous 92 Points | The 2023 Guidalberto is another terrific wine from Tenuta San Guido in this vintage. Aromatic, medium in body and gracious, the 2023 is pure charm. Crushed flowers, bright red-toned fruit, spice and blood orange all pulse through a vibrant, refreshing Guidalberto that will drink well on release. The more refined side of Bolgheri is very much on display. This is a fine effort in a year marked by heavy rains and elevated disease pressure. What a delight.

Often called "Sassicaia’s little brother," Guidalberto is a distinct, standalone wine designed to be more approachable in its youth while still possessing the elegance of Bolgheri's coastal terroir.

In 2023, the blend shifted slightly due to a hot start to August that made the Merlot more challenging to manage. As a result, the Cabernet Sauvignon plays a more dominant role than in recent previous years.

Roederer Estate L’Ermitage Anderson Valley Brut 2019

When Louis Roederer — one of Champagne’s most prestigious houses — looked to California, they bypassed Napa and Sonoma entirely, heading north to the cool, fog-laced Anderson Valley in Mendocino County. The blend is 52% Chardonnay and 48% Pinot Noir, all estate-grown, with 3.9% Chardonnay reserve wine from 2016. Approximately 4.9% was fermented in oak cask with gentle bâtonnage for eight weeks. The wine rested on its lees for four years before disgorgement, followed by an additional seven months of cork aging prior to release.
