The Pazo de La Cuesta Godello Ribeira Sacra Blanco 2023 is a Galician white of excellent expression, crafted from hand-harvested Godello grapes in the steep, terraced vineyards of Ribeira Sacra. After destemming, the grapes undergo cold pre-fermentation maceration for 6 hours, followed by slow fermentation in stainless steel below 20°C for 60–70 days. The wine then ages for 4 months on fine lees with weekly rackings, building texture and complexity while preserving freshness.

The 2025 Val de Mer Chablis is assembled from three parcels situated in different parts of the Chablis appellation. Des Couverts is located in the village of Chablis, Préhy lies near Courgis, and the third parcel comes from Lignorelles. About Val de Mer
Val de Mer is Patrick Piuze's second winery, co-owned with Moutard-Diligent and based in Tonnerre near Chablis. Although separate from Patrick Piuze's namesake winery, Val de Mer follows a very similar winemaking philosophy. Grapes are harvested by hand, fermentations begin spontaneously with native yeasts, and the emphasis remains on transparent expressions of Chardonnay and Chablis terroir.
One important distinction is that Val de Mer works with different vineyard sources from Patrick Piuze's namesake wines. While Piuze frequently bottles village-level Chablis from individual terroirs, Val de Mer takes a more traditional approach by blending multiple parcels to create a broader expression of the appellation.

It really explodes on the palate with juicy, mouthwatering fruit and the perfect balance of sweetness and acidity.
