The 2025 Val de Mer Chablis is assembled from three parcels situated in different parts of the Chablis appellation. Des Couverts is located in the village of Chablis, Préhy lies near Courgis, and the third parcel comes from Lignorelles. Bringing these sites together creates a broader expression of Chablis while maintaining the freshness, tension and mineral character associated with the appellation.
About Val de Mer
Val de Mer is Patrick Piuze's second winery, co-owned with Moutard-Diligent and based in Tonnerre near Chablis. Although separate from Patrick Piuze's namesake winery, Val de Mer follows a very similar winemaking philosophy. Grapes are harvested by hand, fermentations begin spontaneously with native yeasts, and the emphasis remains on transparent expressions of Chardonnay and Chablis terroir.
One important distinction is that Val de Mer works with different vineyard sources from Patrick Piuze's namesake wines. While Piuze frequently bottles village-level Chablis from individual terroirs, Val de Mer takes a more traditional approach by blending multiple parcels to create a broader expression of the appellation.

Patrick Piuze's 2025 Chablis Premier Cru Butteaux comes from 75-year-old Chardonnay vines rooted in the classic Kimmeridgian limestone and clay soils of Chablis. Located on the Left Bank of the Serein, Butteaux forms part of the greater Montmains Premier Cru and is known for producing wines with impressive depth, mineral intensity and a distinctive combination of richness and freshness.
Butteaux sits at the southwestern end of Montmains in a small side valley. Compared with some neighboring Premier Cru sites, its greater clay component gives the wine additional breadth and texture, while the limestone-rich terroir contributes the flinty, chalky and saline character that defines great Chablis.
The early 2025 vintage delivered beautifully ripe fruit while retaining the firm mineral structure and freshness of the region. Patrick Piuze's 2025 Chablis "Terroir de Courgis" is a distinctive village-level Chablis from a single vineyard on the Left Bank of the Serein. Planted in 1937, the old Chardonnay vines grow in clay-rich topsoil over classic Kimmeridgian limestone bedrock, producing one of the richest and most generously textured wines in Piuze's Terroir series.
The greater proportion of clay found on the Left Bank contributes weight, texture and ripe fruit, while the underlying limestone provides the freshness, chalky structure and mineral character that define classic Chablis.
