Nearly a century on, the family still crafts wine the way it has always been done: hand-harvested grapes, fermentation in oak vats with indigenous yeasts, 22 months of aging in barrels made in their own cooperage (90% French, 10% American oak), traditional clarification with fresh egg whites, and a minimum of 9 months of bottle rest before release. The 2022 vintage earned 93 points from Wine Advocate and landed at #51 on Wine Spectator's Top 100 of 2024. The nose shows great aromatic intensity — ripe red and black fruit, cedary spice, leather, violet, and delicate hints of undergrowth. On the palate, the wine is medium- to full-bodied, concentrated but sleek and polished, with fine-grained, silky tannins and very supple flavors. Encomienda de Cervera Vulcanus Sauvignon Blanc/Verdejo — Campo de Calatrava 2025

Encomienda de Cervera is one of Spain’s most singular estate wineries — a historic property with documented vineyard records dating to 1741, situated in the Campo de Calatrava, a volcanic appellation in Castilla-La Mancha that remains one of the country’s best-kept secrets. The estate’s vineyards grow on volcanic soils at 750–850 meters of altitude, cooled by mountain microclimates with cold nights that preserve natural acidity and generate exceptional aromatic complexity. Vulcanus — named for the volcanic terroir that defines it — is a blend of Sauvignon Blanc and Verdejo, harvested selectively during the coolest hours of the day at optimal ripeness. Certified organic, the wine is fermented in restored 1927 concrete tanks that impart a distinctive creaminess through malolactic fermentation. The Cline family has farmed the Sonoma Coast for decades, and their 'Seven Ranchlands' Chardonnay draws from two of their most prized sites — Catapult Ranch and Tolay Vista — situated in the Petaluma Gap, the cool corridor where Pacific air funnels east through the Sonoma mountain range and slows ripening to a crawl. The result is a Chardonnay with the kind of natural acidity and layered flavor development that most California whites have to work hard to achieve. 2024 was a warm, consistent vintage with a late heat spike that allowed grapes to reach perfect ripeness without sacrificing freshness — and at $14.99 with JS:92 and WE:91, this is one of the best-value Chardonnays in Sonoma.

Handpicked before dawn, each parcel is vinified separately: destemmed, lightly crushed, and pressed to extract richness, then racked after 24 hours to retain solids. Half ferments in stainless steel (inoculated), half in barrel with native yeast. Both go through 100% malolactic fermentation and age 8 months in French oak before blending. On the nose: ripe stone fruit, toasted brioche, and a hint of vanilla. On the palate: creamy and full-bodied with bright acidity, flavors of peach, lemon curd, and toasted oak, finishing long and clean.

The Dabouki grape — historically used for Arak or table grapes — is being rediscovered by top Israeli winemakers for its unique desert-friendly profile. This wine is a collaboration between Teperberg Winery, Israel's oldest family-owned winery, and internationally renowned street artist Dede, whose iconic graffiti adorns cities from Tel Aviv to major capitals worldwide.

Dede began painting his signature band-aids as a response to PTSD from military service. The heart-shaped band-aid on the capsule symbolizes healing and hope — making this bottle as meaningful as it is beautiful, and a standout gift or conversation piece for any holiday table.

Vinous 92 Points | A blend of Chardonnay, Welschriesling and Sauvignon Blanc from the younger vines of the estate (~15 years old). Gentle nuttiness and a touch of tatami mat on the nose, very subtle and calm. With air, a hint of butter emerges. The palate is all clarity, all lightness and all brightness on a super-slender frame that is soothing and smooth. Bone-dry.

About the Wine

Velich Tó White takes its name from the Hungarian word for "lake" — a nod to the estate’s proximity to Neusiedlersee in Burgenland, Austria. The Tó cuvée is sourced from the estate’s younger vines (15–25 years old) and blends Chardonnay, Welschriesling, and Sauvignon Blanc into a wine of remarkable purity and restraint.

The second sample that was blended was pure and ripe, with detailed layers of youthful cherry liqueur, fresh herbs, and lavender perfume. The palate offers medium to full-bodied richness, with a supple and primary feel, though it starts to reveal its underlying refined structure. While this was an early preliminary look at what the wine could look like, I’m looking forward to next year’s tasting to see how it develops. 

The Wine Spectator 92 Points | Pure and juicy, revealing black cherry, blackberry, floral and Mediterranean herb notes, plus touches of spices. Light-bodied, elegant and deftly balanced, with a lingering, mouthwatering finish. This is approachable now but will benefit from another 612 months aging. Cabernet Sauvignon and Merlot. Vinous 92 Points | The 2023 Guidalberto is another terrific wine from Tenuta San Guido in this vintage. Aromatic, medium in body and gracious, the 2023 is pure charm. Crushed flowers, bright red-toned fruit, spice and blood orange all pulse through a vibrant, refreshing Guidalberto that will drink well on release. The more refined side of Bolgheri is very much on display. This is a fine effort in a year marked by heavy rains and elevated disease pressure. What a delight.

Often called "Sassicaia’s little brother," Guidalberto is a distinct, standalone wine designed to be more approachable in its youth while still possessing the elegance of Bolgheri's coastal terroir.

In 2023, the blend shifted slightly due to a hot start to August that made the Merlot more challenging to manage. As a result, the Cabernet Sauvignon plays a more dominant role than in recent previous years.

Roederer Estate L’Ermitage Anderson Valley Brut 2019

When Louis Roederer — one of Champagne’s most prestigious houses — looked to California, they bypassed Napa and Sonoma entirely, heading north to the cool, fog-laced Anderson Valley in Mendocino County. The cooler climate, longer growing season, and distinctive soils of this remote appellation offered something rare: the conditions to make world-class sparkling wine with genuine terroir expression. Roederer Estate has been doing exactly that since 1982, and L’Ermitage is the pinnacle of their work — a tête de cuvée produced only in exceptional years, using the same philosophy that guides Cristal in Champagne.

The 2019 L’Ermitage marks a historic milestone: it is the first vintage of this wine to undergo malolactic fermentation, resulting in a rounder, more immediately expressive style with lower dosage (6 g/L) and an earlier drinking window than previous releases. The blend is 52% Chardonnay and 48% Pinot Noir, all estate-grown, with 3.9% Chardonnay reserve wine from 2016. Approximately 4.9% was fermented in oak cask with gentle bâtonnage for eight weeks. The wine rested on its lees for four years before disgorgement, followed by an additional seven months of cork aging prior to release.

An attractive greenish-yellow colour. Its ageing in foudres has lent it citrus and green chilli pepper aromas, as well as saline notes. In the mouth, it is very structured and tense thanks to its high acidity and minerality. The finish is clean and persistent, with a subtle saline note coming through. This highly complex Sauvignon Blanc tempts you to enjoy it with food.

Block 22 is located on the first terrace of the river Huasco. It has very old, stony soils from the river which have very special qualities: a little clay and a lot of calcareous soil – lime, calcium carbonate – white soils. Domaine de L’Arlot is one of the seminal properties in Nuits St. Georges.  The domaine was co-owned by Jean-Pierre de Smet, who spent eight years alongside Jacques Seysses of Domaine Dujac before taking over L’Arlot in 1986.  Today, the domaine consists of 14 hectares planted to mostly Pinot Noir. In 2015 the very talented Geraldine Godot took over the domaine. While retaining the core values of l’Arlot, including biodynamic farming, Geraldine has brought her own style to this historic estate, with extraction kept to a minimum, and the wines seeing less new oak than in the past. All of this is done to preserve the gorgeous fruit from their cherished vineyards. The 2023 Hautes Cotes de Nuits Le Mont has a fresh, juicy nose of raspberry and cherry that explodes on opening. The latest vintage of this wine is lively yet delicate on the palate, with silky, enveloping tannins. Gaston Chiquet is one of Champagne’s most storied grower-producers. In 1919, brothers Fernand and Gaston Chiquet became pioneers among the region’s independent growers by producing and selling Champagne from their own fruit — a tradition now carried forward by eighth-generation Nicolas Chiquet from the Premier Cru village of Dizy in the Vallée de la Marne. Tradition is the house’s flagship non-vintage Brut, a classic three-grape blend that has defined the Chiquet style for generations and earned a place on Wine Spectator’s Top 100 list.

The blend is led by Pinot Noir, with Pinot Meunier and Chardonnay, drawn entirely from Premier Cru vineyards in Dizy, Hautvillers, Mareuil-sur-Ay and Ay. The vines are rooted in clay and limestone soils over the region’s underlying chalk. Grapes are harvested by hand and vinified entirely in stainless steel, preserving the purity of fruit and the character of each vineyard site. Malolactic fermentation is completed in full. Following secondary fermentation in bottle, Tradition spends more than 48 months aging on its lees, developing a fine, persistent mousse and layers of fresh bread, biscuit and toasted nut complexity. Finished at a dosage of approximately 6 grams per liter.

Golden yellow in the glass, the wine opens with aromas of dried apricot, golden peach, fresh citrus and a hint of honeycomb, followed by warm biscuit, chamomile and ginger. The palate is lively and richly textured — nectarine, candied orange peel, white peach and slivered almond are carried by a lacy mousse and bright, racy acidity through a long, fragrant finish of white blossoms and lemon thyme.

Serve well chilled at 46–50°F. Pairs beautifully with oysters, shrimp, smoked salmon, sushi, roast chicken, pork, charcuterie, fried appetizers, mushroom dishes and moderately aged cheeses.
