Winemaker Description

We embraced the structure up front when making this wine because we wanted a strong phenolic profile to bind with and stabilize the tannin. Baking spices (clove and cinnamon) with a kiss of oak.

Ripe black fruit on the palate, black currant and blackberry. A hint of vanilla and smooth tannins on the plush finish.

Winemaker Description 

The Habla la Tierra is a cuvée of Tempranillo, Cabernet Sauvignon and Syrah. The grapes come from quite young vines planted around 2000 on slate soils. After the harvest, the grapes were cool pre-fermented and then fermented in stainless steel fermenters.

This was followed by ageing in French wood for four to five months.  The Habla de la Tierra presents itself juicy ripe, dark and spicy on the nose. The unusual cuvée of Tempranillo, Cabernet and Syrah alternates between the scent of freshly sliced plums, figs, ripe elderberries, peonies and black pepper as well as anise, earthy pray and black tea. In addition, one thinks one can already perceive a trace of extract sweetness in the fragrance.

The Habla la Tierra 2021 shows itself very juicy on the palate. The dark fruit is ripe and accompanied by earthy aromas and herbal spice. In addition, a cool, fresh vein runs through the wine, while the tannin proves to be ripe and delicate. The red wine is down-to-earth in the most pleasant sense, uncomplicated and easy to drink, and at the same time it has character.

Miguel Torres Estelado País Brut Rosé — Traditional Method, Valle del Maule, Chile

Miguel Torres Chile is one of South America's most pioneering wine estates, and Estelado is their most historically significant project: a sparkling rosé made entirely from País — the ancient grape brought to Chile by Spanish missionaries in the 16th century and long dismissed as a workhorse variety. Torres recognized what others overlooked: that old-vine País, farmed in the granite and clay soils of the Valle del Maule, has the acidity, freshness, and character to make a genuinely compelling traditional-method sparkling wine. González Byass Alfonso Oloroso Seco is a wine made from Palomino Fino from their own vineyards.

As soon as the grapes arrive at the winery, they are softly pressed to obtain the free-run must (mosto yema), which will be used to make this wine. After fermentation, classification and fortification at 18% vol., the wine enters the "solera", where it will remain for an average of eight years in American oak butts, following the traditional "solera" system. The wine ages in full contact with the air, which allows its complete oxidation. 

Mas de Valériole “Vé” — IGP Méditerranée Rosé 2025

Just ten miles south of Arles — where Van Gogh, Gauguin, and Picasso once set up shop to capture the Camargue’s spellbinding southern light — the Michel family stewards Mas de Valériole, a 45-hectare estate founded in the early 15th century. Certified organic since 2006, the estate’s vineyards sit on a mosaic of sand, clay, limestone, and alluvial loam deposited by the Grand Rhône, cooled by a steady Mediterranean wind that keeps alcohol modest and freshness intact. “Vé” is a local Provençal expression meaning “Look at that!” — and this rosé earns the exclamation.
