Viticulture

Both Ivan and his brother Pierpaolo are entomologists, making biodiversity central to their philosophy. Winemaking

Maceration on the skins for 18 hours followed by very soft pressing. Fermentation of the free-run must in stainless steel at controlled temperature. Aged for a couple of months in bottle before release.
