Winemaker Description
The Brut Souverain is the most historical cuvée in the region, as it was the first cuvée Apolline Henriot produced in 1808. Apolline aspired to put the light on her vineyards through the expression of a champagne. According to her, one year was not enough to tell the story of the terroirs, so she decided to put wines in reserve each year to incorporate them into a future blend.
Therefore, she founded the House by creating a Champagne that would have blending as its fundamental principle. The House respects this philosophy today and uses every terroir in this multi-cru, multi-vintage cuvée. It was named Brut Souverain by Ernest Henriot, Apolline's grandson, when the House was appointed the official champagne supplier to the Courts of the King of Holland and of the Emperor of Austria-Hungary.

Winemaker Description
100% Savagnin. The lieu-dit Savagnier is located in the commune of Lavigny, close to Balanoz. The vines are planted on gravel and marl soil. This cuvée is made in a non-oxidized style and aged on the lees for 10 months in stainless steel tanks.
Aromas of citrus and exotic fruits, lots of minerality on the palate. Drink within 5 years and enjoy as an aperitif or with light fare.

Les Abbesses is J. Vignier’s single-vineyard expression of the Côte de Sézanne — a 100% Chardonnay Blanc de Blancs from one exceptional parcel in Vindey, a village whose name is believed to derive from the Latin vinum dei: “wine of God.” The vineyard is planted on a rare combination of silex and alluvial soils over deep Cretaceous chalk — the flint-rich surface absorbs warmth during the day, driving full Chardonnay maturity, while the underlying chalk preserves freshness, tension, and mineral precision. 2015 was the inaugural vintage of this cuvée. Vinified in stainless steel with full malolactic fermentation and aged 60 months in bottle, it emerges with the depth and integration of a wine that has found its voice. Certified sustainable by Socofret.
Deep and self-possessed on the nose: white flowers, ripe orchard fruit, and fresh citrus, with subtle brioche and a focused mineral core emerging with air. The palate is elegant yet generous — fine bubbles, creamy texture, and a chalky freshness that carries through a long, dry, and graceful finish. The Sézanne terroir gives the wine a rounder, more expressive character than the northern Côte des Blancs, while the silex soils add a distinctive smoky, flinty edge that sets Les Abbesses apart.

Tucked behind Dalton Mountain, Kerem Nadav is surrounded by the wild Birkat Kash nature reserve at approximately 700m elevation. Two varieties — Cabernet Sauvignon (70%) and Petit Verdot (30%) — grow together in this single vineyard rooted in heavy Basalt soil, co-fermenting to create a uniquely expressive wine of place. Each wine in Dalton's Single Vineyard series encapsulates a site-specific microcosmos: its soil, landscape, and the climate that shapes them.
The vineyard is farmed using sustainable practices, with rich biodiversity: nesting boxes for owls, and goats that graze in winter to reduce reliance on fossil fuels.

James Suckling 97 Points | Outstanding balance and complexity from the beginning that showcases concentrated black fruits and purple flowers with plenty of spices and subtle yet harmonious toast and cedar aromas. Intense graphite and stony minerality, too. Full- to medium-bodied on the mid-palate with delightful acidity that gives this wonderful crunchiness. Fine-grained juicy tannins. Precisely focused wine that is colorful and sound. Beautiful length, too. Already so drinkable now but will age gracefully, especially for Atlas Peak.
