Défaix Frères is a respected family domaine based in Milly, one of the most prized villages in the Chablis appellation. The Défaix family has been farming the chalky Kimmeridgian soils of Chablis for generations, producing wines of classic mineral precision and the austere, saline character that defines great Chablis at its finest. Their approach is rooted in respect for the terroir — minimal intervention in the cellar, allowing the unique geology of the appellation to speak clearly in every bottle.

The Chablis Village is sourced from estate vineyards planted on the appellation's signature Kimmeridgian limestone and clay soils — ancient marine sediments rich in fossilized oyster shells that impart the distinctive flinty minerality and saline tension that set Chablis apart from all other Chardonnay in the world. The cool continental climate of the Yonne valley, with its harsh winters and short, intense growing season, produces Chardonnay of natural freshness, high acidity, and restrained, precise fruit.

Vinification is carried out entirely in stainless steel, with the wine spending 10 months on the fine lees to develop texture and complexity while preserving the purity and tension that are the hallmarks of the style. No oak — just pure, unadulterated Chablis.

The 2023 opens with a restrained, elegant nose of white orchard fruit, citrus, green apple, and subtle floral notes, with a characteristic flinty, mineral undercurrent. On the palate, the wine is fresh and lively, with bright acidity, pronounced minerality, and a clean, saline finish. Pure, flinty, and edgy — classic Village-level Chablis at its most compelling.

Decanter Magazine 98 Points | The Montelena Estate is a gorgeous wine in 2021, built of 94.1% Cabernet Sauvignon, 4.9% Cabernet Franc, and 1.0% Petit Verdot, aged 22 months in 45% new French oak. It is super bright and wonderfully aromatic with gorgeous light brown spices, white pepper, and sagebrush. Medium-bodied with cranberry and huckleberry fruits, they have very ripe and powerful tannins with supreme granularity and a fine, pinpoint, pixelated texture. Fantastic, linear, and racy acidity brings this wine into focus. Tasted with winemaker Matt Crafton at Chateau Montelena, Crafton explained that 'the aromatic potential of the vintage leapt out.' For him, the challenge was to reflect the concentration and richness and keep the fresh aromatics. So he moved to very light toast barrels in this vintage.

Winemaker Description 

Fresh and lively, the wine opens exclusively with raspberry, mint and plum sauce. The baking spices soon follow, leaning clove initially but with plenty of cedar and vanilla. Still subtle, the ripe fruit elements, mostly cassis and fig at this stage, lurk beneath the surface along with beautiful hints of graphite and toasted sage, awaiting additional time in glass. Still very tightly wound, it’s the texture and mouthfeel that drive the palate initially.

The tannins in particular are somewhat coarse but not so angular to overshadow the abundant dark fruit. The dynamic tension on the mid-palate serves to focus and magnify the layers of black cherry, cocoa powder, and black pepper, before turning slightly earthy and dusty.

The structure is pronounced, but still harmonious and well defined. It’s in the transition to the finish that the acidity materializes in almost candy-like fashion, a beautiful contrast to the supple tannins. Here the wine’s density shines elegantly, well balanced between smoky, espresso bean and delicate, dried blackberry. It’s the latter that defines the finish at this moment, persistent in length and depth. 

Expert Review - Vintage 2023 

Vinous 95 Points | The 2023 Vouvray Sec Le Mont is precise, upright and flinty. It's less immediately charming than the styles we've seen in recent warmer vintages, but it was only tasted three weeks after bottling—this is one to revisit. There's just the right amount of juicy, peachy flesh within this light-bodied yet concentrated wine. It has the potential to charm but does so without showing off. Flinty and tightly sewn together, it has curves in the right places, but you're just going to have to wait for it to take shape.

Charles Curtis, MW of Decanter Magazine 96 Points | In 2021 the domaine protected this site above all from frost but still lost half their crop despite being surrounded by the also well-protected vines of Domaine Leflaive. Accessible almost even now the aromas of green apple and passionfruit coconut butter and baking spice are almost opening even now. There is a lovely freshness and silky texture yet this is a powerful wine with impressive length and density at the end. This should open in five years and continue to improve for at least twenty-five more. (Drink between 2027-2050).

Louis Latour Pouilly-Fuisse — Maconnais 2024

Maison Louis Latour has been one of Burgundy’s most storied negociants since 1797, and their Pouilly-Fuisse is a benchmark expression of the Maconnais appellation. The vineyards sit within a breathtaking limestone and heavy clay landscape — a terroir that gives Pouilly-Fuisse its distinctive richness and mineral backbone. Fermented in stainless steel with complete malolactic fermentation and aged 8 to 10 months on lees, this is a Chardonnay of genuine generosity and finesse.

The nose is bright and floral: honeysuckle, lime blossom, and a delicate citrus lift. On the palate, it is full-bodied and generous, with notes of fresh almonds and brioche underpinned by a clean, mineral thread. The finish is long, elegant, and unmistakably Burgundian.

The soils are volcanic and iron-rich, the yields are brutally low, and the fruit that survives is among the most concentrated and complex in all of Napa. Carpenter’s philosophy is one of restraint and terroir transparency — allowing Mt. Veeder to reveal itself in each vintage rather than imposing a winemaker’s hand. The Producer

In 2002, Marc started his first winemaking project on the ground floor of his grandparents' family home in the historic center of Gandesa. Until 2011 he worked alone, making a single wine, Borretes, a varietal Cariñena. That year Lluís joined the project, the two began signing as Celler Balart, and they started producing Garnachas and growing the range. In 2020 they moved to new, more efficient facilities. Today Marc manages the vineyards, Lluís runs sales, and together they share responsibility for the winemaking.

The Wine

Àmfora Blanc is 100% Garnatxa Blanca from Terra Alta in Catalonia, rested in terracotta amphorae, a method that dates back to Roman times. The clay adds a citrusy, mineral edge to the grape's natural orchard fruit.

That decision — made in 1972 and never abandoned — is what gives Silver Oak its signature: wines that are immediately approachable, generous with fruit, and possessed of a smooth, polished texture that makes them as enjoyable now as they are over a decade in the cellar.

The 2022 Alexander Valley is blended before barrel aging — another Silver Oak hallmark, allowing the components to integrate on the basis of terroir and varietal character before oak influence shapes the final wine. The blend is anchored by 95.2% Cabernet Sauvignon with small additions of Merlot, Cabernet Franc, Petit Verdot, and Malbec, aged 24 months in American oak barrels from their own cooperage, The Oak.

The 2022 vintage shows Silver Oak at its most expressive: plum, anise, black cherry, and sweet spice on the nose, with a mid-palate that is juicy and structured without being heavy. Fine-grained tannins and lively acidity carry a flavorful mix of red and black fruit through a long, clean finish. Fresh and drinkable now, with the structure to age elegantly through 2035 and beyond.

A nectar from one end of the tasting to the other! An intensely golden adornment, a nose of perfectly over-ripe Chenin, underlined by great elegance, a note of almond cream, quince, very ripe peach skin.

The palate is very straight, freshness, tension and sweetness so well integrated, a finish of candy sugar crystals but also the fine bitterness of the schists, it is a very beautiful vintage, a wine built to last and already so pleasant to taste now. It is the cuvée representative of the estate's terroir, i.e. almost five vines.

Castel Blanc du Castel — Judean Hills, Israel 2023

Domaine du Castel is the founding estate of modern Israeli fine wine. In 1988, Eli Ben Zaken planted the first contemporary vineyard in the Judean Hills in the backyard of his home in Ramat Raziel — almost by chance, and almost entirely by conviction. Within four years, family and friends gathered to harvest the grapes that would become Castel Grand Vin 1992, and a benchmark was set. Today, Eli’s children carry the tradition forward: Ariel (CEO, trained in Beaune), Eytan (winemaker alongside Eli), and Ilana (Director of Export & Procurement). The grandchildren have vineyards bearing their names. This is a family winery in the truest sense — and Blanc du Castel is its most celebrated white wine.

Made from 100% Chardonnay, fermented and matured in French oak barrels for approximately one year in the Burgundian style, with residual sugars preserved to add richness and texture. The result is a wine of genuine complexity: rich and buttery on the nose, with refreshing acidity, citrus, tropical fruit, and roasted almonds. Full, round, and well-balanced, with a fine, long finish. The 2021 Extra Brut Blanc de Blancs Montagne de Reims No. 2, from vines in Villers-Marmery, is bright and very nicely sculpted. Lemon peel, white flowers, dried herbs, chalk and white pepper all race out of the glass. This Blanc de Blancs really sizzles with tension and salivating energy. Neal Martin writes:  The 2020 Chassagne-Montrachet Les Champs Gain 1er Cru has a touch more mineralité on the nose compared to the Les Chenevottes, touches of gypsum and oyster shell intermingling with light white linen scents. Winemaker Description 

Founded in 1970 by Marc Colin and his wife Michele, Domaine Marc Colin now spans 15 hectares encompassing 26 appellations in St. Aubin, Chassagne, Puligny, and Santenay. Most of the land was inherited from past generations of Colin and Ponavoy; certain parcels have been in the family for more than 100 years. While the family does own prime territory in Chassagne, home base in St. Aubin features parcels of the very best vineyards, En Remilly and Chatenière, to name a few. These vineyards accrue prestige due to their sloped location; while much of St. Aubin resides on flat ground (rendering less interesting wines) the Colin properties are all situated on finely pitched hillsides. The resulting wines shimmer with savory minerality and luster.

Today Joseph, Caroline, and Damien, the children of Marc and Michele, own and run the domaine. The fourth sibling Pierre-Yves (who made the wine at Marc Colin for 10 years) established his own project in 2005. Sustainable and organic agriculture, older vines, and clay-limestone soils are just some of the components contributing to the quality of the final product. Winemaking style would best be called traditional, though Joseph (who makes the whites) and Damien (who makes the reds) are certainly not shy of innovation. Whites strive for optimum freshness; there is no heavy, ungainly wood here. The red wines are characterized by silky texture, ever-present fruit and a certain roundness with just a kiss of oak. Production consists of 70% white and 30% red with total production maxing out at 120,000 bottles.
