Francesc Ricart Brut is a cava made following its Traditional Method in the most representative area of the DO Cava, which is the region of Penedes and Sant Sadurní d´Anoia.

Expressing aromas of toast, honeycomb, sourdough and nougat. Elegant sparkling wine with an intense flavour of the local varieties and fine texture. Citrus peel and hint of forest floor flavours are supported by the toasted bread. 

A careful selection of the best Xarel-lo, Macabeo and Perellada local varieties and a meticulous winemaking process -the second fermentation and the subsequent ageing take place in the bottle- are the basis of this cava. Deep garnet-purple in color. Ripe and deeply scented on the nose and palate, a lingering florality follows the dark black fruits from start to finish. This has a lovely richness, more textural depth than some with salty, liquorice and wet stone tannins that support the fruit and give the frame. Rich and intense but so sleek. Super glamour on show, but elegant in its presentation. Definitely mineral, a salty coolness on the finish but textured tannins giving an appealing chalkiness too. Bold but restrained and super refreshing. A great wine.

The 2020 Château Prieuré-Lichine has a solid perfume of redcurrants, blueberries, smoky oak, and chocolate that shows more and more floral nuances with time in the glass. Nicely textured on the palate, with medium to full-bodied richness, solid mid-palate depth, ripe tannins, and a great finish. It needs a solid 4–6 years of bottle age but is another impressive 2020 with real class.

Domaine Clos de la Chapelle’s 2023 Corton-Charlemagne is a profound and exceptionally limited expression of one of Burgundy’s most celebrated white-wine vineyards. Produced entirely from Chardonnay, it combines the natural richness and power of the Corton hill with vibrant acidity, stony minerality and the remarkable precision for which the finest Corton-Charlemagne wines are known.

The Place

Corton-Charlemagne is a Grand Cru appellation situated at the northern end of Burgundy’s Côte de Beaune, where the rounded Hill of Corton rises above the villages of Aloxe-Corton, Pernand-Vergelesses and Ladoix-Serrigny. The appellation occupies the hill’s higher, cooler slopes at approximately 280 to 330 meters above sea level.

These elevated vineyards are planted on steep slopes composed of limestone, marl and thin, stony soils. The combination of altitude, exposure and mineral-rich geology gives Corton-Charlemagne its distinctive balance of concentration, freshness and long-lived structure. Although the appellation covers approximately 60 hectares currently under production, individual domaine holdings are often extremely small.

The Vineyard

Domaine Clos de la Chapelle farms just 0.30 hectare—less than one acre—of Corton-Charlemagne. Its parcel is located on the Pernand-Vergelesses side of the hill, facing west, and is planted with approximately 45-year-old Chardonnay vines. The soils contain a high proportion of limestone and marl, contributing to the wine’s firm mineral backbone, chalky texture and naturally persistent finish.

Production is correspondingly tiny, making this one of the domaine’s rarest and most sought-after bottlings.

The Grape

100% Chardonnay. Corton-Charlemagne is reserved exclusively for white Grand Cru Burgundy produced from Chardonnay. In this remarkable terroir, the grape develops considerable body and concentration while retaining the acidity, mineral tension and definition necessary for extended bottle aging.

Winemaking

Following harvest and sorting, the grapes are whole-cluster pressed. After a short settling of the juice, fermentation takes place in barrel with native yeasts. The wine is then matured in barrel for approximately 12 to 18 months, depending upon the character of the vintage, followed by a light fining before bottling.

Jasper Morris noted that the 2023 was produced from five barrels, with the fruit pressed without prior crushing and one barrel reserved for a longer period of élevage.

Tasting Notes

The 2023 opens with expansive aromas of lemon, ripe apple, fresh citrus, crushed stone and discreetly toasted oak. With air, additional notes of white flowers, orchard fruit and subtle spice begin to emerge.

The palate is broad and expressive yet beautifully controlled, supported by vibrant acidity and a firm, steely mineral backbone. Ripe citrus and apple flavors are layered with chalk, stone and finely integrated oak. There is impressive depth through the middle of the palate, followed by a long, focused and seemingly endless finish marked by freshness, chalky texture and mouthwatering mineral persistence.

This is a powerful yet precise Corton-Charlemagne: already expressive, but structured to reward patient cellaring.

94 Points — Jasper Morris, MW, Inside Burgundy 5 barrels, without crushing before pressing, one will be kept back for a longer elevage. Quite a deep yellow. The bouquet is very different to Pierre Meurgey’s Corton-Charlemagne (more or less the same fruit but some was crushed), the Clos de la Chapelle version offering more precision but less character. This version has a steely backbone, some ripe citrus, a little flesh, medium tension, apples at the back. Just needs a little more tension for the 4th star. Barrel Sample: 92-94

The Domaine

Domaine Clos de la Chapelle is based in Volnay and takes its name from the historic Volnay Premier Cru Clos de la Chapelle monopole, acquired by Victor Boillot in 1865. After remaining with the Boillot family for nearly 150 years, the estate was acquired in 2010 by Burgundy enthusiast Mark O’Connell and his Burgundian partners.

Today, the domaine cultivates approximately five hectares divided among 16 vineyards, including prized Premier Cru and Grand Cru parcels in Volnay, Pommard, Beaune, Meursault and Corton. Annual production is extremely limited, totaling approximately 2,000 cases across the entire estate.

Food Pairing and Service

Serve at approximately 54–57°F. This structured, mineral-driven white Burgundy is an exceptional partner for lobster, scallops, halibut, sea bass, crab, roast poultry, veal in cream sauce, escargots and richly textured cheeses such as Comté or Délice de Bourgogne.

While the wine may be enjoyed young with decanting, Corton-Charlemagne is renowned for its ability to develop for decades. Additional bottle age will allow its citrus, stone and oak elements to integrate while revealing more complex notes of honey, toasted nuts, truffle and spice.

Cline Rock Carved Cabernet Sauvignon — Alexander Valley 2023

In prehistoric times, a rampaging Russian River carved the Alexander Valley — leaving behind sedimentary rock that defines the vineyard soils to this day, while the towering surrounding hills trap summer heat like an oven. It is this dramatic geological history that gives Rock Carved its name and its character. The wine is sourced from the Rio Lago Vineyard, owned and managed by the Horowitz family since 1990 — a site at the western foothills of the Mayacamas Mountain range that experiences one of the wettest microclimates within the Alexander Valley AVA. Planted in diverse clay-loam and silty-loam soils, the vineyard is cooled each evening by marine air moving in along the Russian River from the Pacific Ocean. The combination of daytime heat to ripen the grapes and cool evening air to preserve freshness and acidity is the key to producing ultra-premium quality Cabernet Sauvignon here.

Grapes are hand-harvested at night, sorted, and gently destemmed. Fermentation is carried out by native yeasts, warming to temperatures peaking at 100°F, with the wine left on skins for 24 days. After gentle pressing, the wine undergoes malolactic fermentation in barrel and ages for 14 months in 50% new French oak. The result is full-bodied, multilayered, and genuinely complex: blackberry, black plum, and black currant, with cedar, leather, and mocha, balanced acidity, smooth rich tannins, and a long, powerful finish. James Suckling awarded it 91 points; Wine Enthusiast 90 points.

This biodynamic, sulfur-free Carménère immediately captivated us: immediately very present, enormously aromatic, a true powerhouse! On the nose, green pepper, black pepper, coffee, cloves, and other spices, with grassy, vegetal notes. A very successful blend of fruit and complex vegetal aromas. Initially astringent and fully dry, the palate displays powerful cherry fruit with tobacco, cocoa, and pepper, then becomes increasingly smooth, soft, and supple.

Winemaker Description 

With a straw yellow colour, Yzaguirre Blanco Clasico Vermouth has an intense aroma with herby and spicy notes. Mild balsamic touches give it a pleasant and very unique structure. Fresh and smooth in the mouth and very well balanced, it has notes of vanilla and cinnamon.

Excellent as an everyday aperitif. Serve with 2 anchovy-stuffed olives, 2 or 3 ice cubes and a twist of orange. Serve very chilled.

A classic, mineral-driven Chablis that beautifully reflects the lesser-known Cote de Brechain. A pale, shimmering gold in the glass, the wine opens with aromas of tart green apple, lemon zest, and soft, white flower hints. These notes of apple and citrus carry over to the palate, where they are met by a prominent, yet balanced acidity and the characteristic, oh-so-slightly chalky Chablis minerality that provides for a satisfying, lengthy finish.

Herzog Special Reserve Chenin Blanc — Clarksburg, California 2024

Herzog Wine Cellars is California’s most celebrated kosher winery, and the Special Reserve series represents their finest expression — small-lot, artisan winemaking from California’s most regarded wine-growing regions. This Chenin Blanc comes from estate-grown old vines in Clarksburg, a cool Sacramento Delta appellation ideally suited to the variety. Left to ripen late into the season, low yields and botrytis bring about complex, concentrated flavors. Barrel fermented with native yeast and aged 12 months on a blend of 41% new French oak and 59% neutral French oak. Fined and filtered. Kosher.

The nose is aromatic and inviting: quince, baked apple, orange peel, and dried chamomile. On the palate, flavors of persimmon and pear layer with hints of lemon curd and brioche, carrying through to a long, pleasing finish. Rich, textural, and beautifully balanced — a Chenin Blanc that rewards serious attention.

California Chenin Blanc at its most serious — Herzog’s Special Reserve is old-vine complexity and kosher craftsmanship in every glass.

Winemaker Description 

A good balance of fresh but softly perfumed ripe red currant and strawberry fruits with a touch of rosewater and anise. The nose leads to well-rounded but lively crunchy red fruits on the palate with spice and chalk notes on the elegantly tailored finish.

After being founded in the 1750s, in the mid-18th century, the Domaine de Montille century extended over 12 hectares. The family's financial problems meant that Etienne de Montille, the manager at that time, had to abandon certain parcels of land and focus on 3 hectares, mainly in Volnay. With the arrival of Hubert de Montille, Etienne's grandson, the domaine took off in another direction. Like his father, Hubert was a lawyer, however he would go on to lead a double life as a wine grower and a lawyer. He decided to produce his own wines from A to Z. Within a few decades, he would become one of the finest examples in the region, perfectly expressing the terroir of each climat with pure and elegant wines.

Today, the domaine is managed by Etienne and Alix de Montille, Hubert's children who also were originally steered towards a legal career. The domaine now has 20 hectares of vines, including 15 of grand and premier crus, on the best climats of Burgundy, in white and red! Domaine de Montille now produces its wines using biodynamic methodology, perpetuating the tradition of innovation and excellence introduced by Hubert de Montille. Etienne and Alix also created a mini trading structure, Maison Deux Montille Soeur Frère.

Producer Notes — Vintage 2024

Domaine Guiberteau is one of the Loire Valley’s most celebrated estates, and Les Moulins is their entry-level rosé — a cuvée originally created for vineyards undergoing organic certification, now showcasing purchased grapes and young Domaine vines alongside the estate’s signature precision. Produced under the Chai de la Dive négociant project.

Made from Cabernet Franc, whole-cluster pressed and fermented with ambient yeasts in stainless steel, with malolactic conversion blocked to preserve freshness. The result is a bright, precise, and food-friendly rosé with real Loire character.

Terroir

Sourced from multiple sites across Berrie (clay-sand over Turonian limestone), Puy-Notre-Dame (silty-sandy-clay over Turonian limestone), and Montreuil-Bellay (clay-sand over Jurassic limestone) — each contributing distinct texture and minerality to the blend.

Vinification

Whole-cluster pressing → 24-hour settling → 3-week ambient yeast fermentation in stainless steel → malolactic blocked → 6 months on stainless → tangential flow filtration. Low SO2 intervention throughout.

• Jasper Morris 90 Points | Pale with a lime streak. Classically Montagny with a crushed shell note on the nose. Very intense overall, pure white fruit, just a light lemon rinse, stretching out nicely at the finish. Does just what it should. Drink 2026–2029.

Winemaker Notes

Very spicy on the nose and on the palate. Creamy vanilla bean flavors, round and silky in texture with lovely acidity and juicy fruit — a beautiful balance of tropical pineapple and citrus with a lingering finish.
