Winemaker Description

Harvest is done by hand to select the best fruit. Only the most mature berries are chosen, it is followed by a secondary selection to avoid any compromise on quality. Wild yeasts (pied de cuve) that are naturally present on the skins of the berries are used to obtain exceptional wines that really reflect the terroir with complex flavors and texture. After resting with the skins for 30 days, the juice is fermented in Troncais barrels of French oak barrels for 12-15 days with frequent pump overs. The wine then ages 18 months in Slavonian oak barrels and at least an additional 6 months in the bottle.

The end result is a wine with garnet color with red fruit and cassis aromas
with licorice, smoke and caramel notes with silky tannins.

Château Gillet | Bordeaux Rouge AOC | Entre-Deux-Mers, Bordeaux, France | 2022

Château Gillet is a family estate with roots stretching back over 150 years, situated on the limestone plateau of Faleyras in the heart of l'Entre-Deux-Mers, south of Libourne. Jean Louis and Christine Nadau, both born into winemaking families, oversee 70 hectares of vineyards that produce around 350,000 bottles annually — a testament to the estate's scale and consistency.

The vineyards are planted to Merlot, Cabernet Sauvignon, and Cabernet Franc, trained in a simple Guyot system with full grass cover between the rows. This classic Bordeaux blend brings together the roundness of Merlot with the structure and complexity of the two Cabernets, resulting in a wine that is both approachable and well-built.

Vinification is traditional: grapes are destemmed and crushed before alcoholic fermentation at controlled temperatures between 25°C and 28°C, with two pump-overs daily for optimal color extraction. The wine is then matured in oak casks to add depth and ennoble the vintage.

The 2022 shows a deep, sustained ruby color. The nose offers pleasing red fruit aromas — cherry, plum, and a hint of spice. On the palate, it is powerful on entry yet supple, with tight, well-integrated tannins and a clean, satisfying finish. An excellent everyday Bordeaux that punches well above its price.

The Producer

Bodegas Caro is a partnership between two of the wine world's great families: Domaine Barons de Rothschild (Lafite) from France and the Catena family from Argentina. The name Aruma means "night" in the native Quechua language, a nod to the cool mountain nights of the Andes that keep the fruit fresh and bright.

The Wine

The robe is deep red with hints of violet, and the nose opens with plum and red fruit. The palate is fresh and elegant, with remarkable balance between tannins, acidity and alcohol, leading to a long, delicate finish. Overall, a very convivial, attractive wine.

Domaine Graeme & Julie Bott Condrieu 2022 is an elegant and beautifully expressive Viognier from one of the Northern Rhône's most celebrated white wine appellations. Rich and aromatic yet remarkably fresh, it combines the lush fruit and floral character of Condrieu with the mineral precision and energy that define Graeme and Julie Bott's style.

The wine comes from approximately 25-year-old Viognier vines planted on the steep granite soils of Condrieu. These demanding hillside vineyards naturally produce small yields, helping to create a wine with concentration, depth and a strong sense of place.

Winemaking

The grapes are harvested by hand and carefully sorted in the vineyard before being whole-bunch pressed. After cold settling, fermentation takes place in barrel, followed by approximately 10 months of aging in French oak barrels before bottling. Production is extremely limited, at approximately 2,000 bottles.

Tasting Notes

Golden in color with pale yellow highlights, the 2022 Condrieu opens with expressive aromas of ripe peach, apricot and fresh yellow fruits accented by delicate white flowers and subtle violet notes. The palate is rich, concentrated and silky, yet beautifully balanced by freshness, mineral tension and a subtle saline character.

Despite its generous texture, the wine remains bright and energetic throughout, finishing long and precise with a delicate savory bitterness that brings definition and balance to the ripe Viognier fruit.

Greywacke Sauvignon Blanc — Wairau Valley, Marlborough, New Zealand 2025

Greywacke is the personal project of Kevin Judd — the winemaker who spent two decades building Cloudy Bay into one of the world's most recognized Sauvignon Blanc brands before striking out on his own. Named after the hard, dark stone that forms the riverbeds of Marlborough, Greywacke is a small-production estate focused on wines of genuine depth and site specificity. The Wairau Valley Sauvignon Blanc is their benchmark expression: harvested largely by machine during cool, often cold night-time conditions, picked earlier than normal over a three-week period commencing 16 March, transported directly to the winery in the Omaka Valley, lightly pressed for high-quality juice, and left on lees on individual vineyard batches until late June before blending. Marlborough Sauvignon Blanc with the volume turned down a notch — and all the better for it.

The 2025 pours a pale, luminous gold. The nose is vibrant and aromatic — lemon blossom, honeydew melon, orange blossom, passion fruit, white pineapple, kumquat, and lime sherbet, delicately infused with herb garden botanicals and a flourish of elderflower and wildflowers. On the palate, sleek and smooth with mid-palate richness, juicy lemon, steely cassis, beeswax, brine, and a generously textured finish with impressive structure and depth. Winemaker Description 

This Pet Nat from Straka is 100% Welschriesling fermented naturally in the ancestral method. The second fermentation occurs naturally inside the bottle creating trapped CO2. Bubbles!

At a low 12% alcohol this mineral yet fruit driven expression of the main white grape of Burgenland is eminently thirst quenching. As with all the Straka wines, the farming is organic, the intervention in the cellar minimal with no additions.

The 84 year old family estate is located in the Eisenberg district of Burgenland. The Eisenberg is a unique geological area where the foothills of the Alps meet the Pannonian lowlands and is comprised of metamorphic, magmatic rock and cristal schist.

One of only 3 places in the world with this soil composition. The deep rooted vines naturally show a distinct mineral character and a compelling purity of fruit.

Combined with the attention to farming and careful hand harvesting the Straka wines are a true find. 

Expert Review

John Gilman 96 Points | This is my first taste of Domaine des Closiers top bottling, les Trezellières, which is made from a parcel of old vines and given fully two years aging in barrel, with somewhere between ten and twenty percent of the casks new. The 2019 les Trezellières is beautifully deep and refined aromatically, delivering scents of black cherries, cassis, Cuban cigar wrapper, a very complex base of soil, a touch of Cheval Blanc-like menthol, a gentle dollop of tree bark, cedar and a topnote of cigar smoke. On the palate the wine is pure, full-bodied, elegant and rock solid at the core, with great focus and complex, superb soil undertow, fine-grained tannins and a very long, pure and classy finish.

The small percentage of new oak gives this wine more refinement than the les Coudraies bottling, but because it is no more than twenty percent new oak, the wood influence is far more subtle out of the blocks than in Clos Rougeard’s Le Bourg bottling, which is the closest comparison I can think of for this brilliant young Saumur Champigny. Give this beautiful wine plenty of time in the cellar to properly resolve its tannins and completely blossom! (2019).

This wine’s tart, spiky glints of passion fruit tease the nose amidst all its lemony freshness. With a little air, the passion fruit note grows smoother and fuller. The palate glows in this fruitiness and complements it with creamy richness. It’s lovely and seductive now but sure to get even better.

Billecart-Salmon Brut Réserve — Champagne NV

Billecart-Salmon’s Brut Réserve is one of Champagne’s most enduring benchmarks — a non-vintage blend whose overall composition has remained virtually unchanged for nearly fifty years. Winemaker Description 

The 2022 Slander delivers a medium ruby core with a lucid rim that's almost translucent. Aromatically, bing cherry, briar fruit and some raspberry give way to ripe strawberry and associated red fruits. Bright and enveloping on the entry, notes of fresh strawberry, watermelon, thyme and a hint of funk come through. Spicy on the finish, the wine closes with a flash of blue fruits and lift.

Deep ruby in color with pronounced aromas of black cherry, marionberries and plum with subtle aromas of cigar box, grains of paradise and dark chocolate. Robust body with lush texture and a depth of flavors led by black cherry and blackberries with intertwined notes of vanilla bean, leather, dark chocolate and baking spice. Firm tannins carry throughout the wine with supported acidity bringing great length to the mouthfeel. Pair with richer dishes like roasted leg of lamb over roasted vegetables or walnut-lentil Bolognese. Ideal drinking is 3 -15 years.

Each label pays homage to iconic NYC neighborhoods and landmarks, bringing a New York spirit to world-class wine regions. The Chardonnay is sourced from Chile's sun-drenched Central Valley, where the combination of warm days, cool nights, and Andean influence produces fruit of exceptional freshness and character.

The 2024 pours a bright straw with golden highlights. The nose is inviting and aromatic — ripe pear, pineapple, and delicate acacia flowers. On the palate, it's fresh and medium-bodied with a clean, fruit-forward character and distinct notes of exotic fruit on the finish. Crafted for everyday enjoyment without compromise, this is the kind of Chardonnay that makes any weeknight feel like a occasion.

Vineyard & Winemaking

We select the fruit for our alcohol-removed Chardonnay from California's finest marine-influenced vineyards, where cool breezes and fog allow the grapes to ripen slowly and evenly as they develop rich flavors and complexity. Our winemakers carefully craft this Chardonnay using traditional methods; then our exclusive spinning cone process gently removes the alcohol while preserving the wine's delicate aromas and flavors.

Expert Reviews - Vintage 2019

James Suckling 94 Points | Aromas of redcurrants, flowers and spices, such as nutmeg. Some cherries, too. It’s full-bodied, yet racy and energetic. Chewy tannins. Structured. One of the best Cos Labory in a long time. This needs three or four years to come together.

Decanter 92 Points | A Cru Classé that in recent years has clearly been striving to catch up with its 1855 neighbours. It remains far less polished than the other classified growths in the appellation, but that gives it a charm all of its own. There are plenty of firm tannins here, with cassis and bilberry fruits, along with clear austerity that is going to need a few more years to soften. A serious wine with a sense of identity, takes its time to reveal its hand and may move up when retasted in bottle. Tasted twice one week apar

Vinous 92 Points | The 2019 Cos Labory remains rather brawny, but it certainly has a ton of character. Black cherry, plum, gravel, licorice and scorched earth add to an impression of rusticity. Even so, there is plenty of depth and more than enough energy to support many years of fine drinking.

Jeb Dunnuck 90 Points | A classic Saint-Estèphe nose of darker currants, damp earth, leafy herbs, and cedar emerges from the 2019 Château Cos Labory, a medium-bodied, balanced 2019 with good mid-palate concentration, ripe, building tannins, and a great finish. It deserves 3-5 years of bottle age and will keep for 15-20 years.
