A remarkable limited-edition Champagne created for a historic celebration, the Billecart-Salmon 250th Anniversary Cuvée Extra Brut 2018 commemorates the 250th anniversary of the Declaration of Independence of the United States. Created exclusively for the American market, this special cuvée also highlights the longstanding relationship between the United States and Billecart-Salmon, one of Champagne's most respected family-owned houses.

For this exceptional release, Billecart-Salmon selected the outstanding 2018 vintage, a year of impressive ripeness, concentration and freshness. The Champagne is composed of 65% Pinot Noir from the Montagne de Reims and 35% Chardonnay from the Côte des Blancs, sourced from prestigious Grand Cru and Premier Cru vineyards.

Only a small portion — approximately 3% — was vinified in oak, with the remainder in stainless steel to preserve freshness, purity and precision. The Champagne then spent an impressive 63 months aging on the lees, developing complexity and texture while retaining the finely etched character that defines the Billecart-Salmon style. A restrained Extra Brut dosage of 4.9 g/L emphasizes the wine's mineral structure and remarkable purity.

In the glass, it displays a luminous pale-gold color with a fine, energetic stream of bubbles. The bouquet is sophisticated and expressive, revealing nectarine, mirabelle plum and blueberry, layered with delicate white and violet flowers and subtle chalky minerality. Notes of biscuit and brioche emerge as the wine opens, adding further depth and complexity.

The palate begins with a beautifully creamy texture before developing remarkable energy and precision. Poached pear, white flowers and brioche are framed by an intensely chalky mineral backbone. Notes of almond, peach and citrus add dimension, while the Chardonnay brings finesse and structure and the Pinot Noir contributes depth and power.

The finish is exceptionally persistent — dry, mineral and finely sculpted, with impressive freshness balancing the richness of the vintage. The nose of gooseberries with floral notes is followed by a medium-full wine with a chalky texture. Excellent acidity and beautiful tension bring up the solid mineral core. Very refreshing but surprisingly complex — a perennial favorite where supply never meets demand.

For more than 50 years, the name Ratti has been indissolubly tied to Barolo — and to the very soul of Piedmontese winemaking. Renato Ratti was a pioneer who helped define the modern style of Nebbiolo, and today the estate in La Morra continues his legacy with the same commitment to elegance, transparency, and terroir. The Ochetti is their benchmark Langhe Nebbiolo: an ancient wine originally sourced from the sandy hills of Roero on the left bank of the Tanaro River, now blended with fruit from cooler sites in Dogliani for added freshness and lift. Mahi is the project of Brian Bicknell, one of Marlborough's most thoughtful and independent-minded winemakers. Where much of the region's Sauvignon Blanc is made in a loud, industrial style — cold-fermented in stainless steel to maximize tropical fruit and aromatic punch — Bicknell takes a fundamentally different approach. Drawing on what he calls a "chef's philosophy," he incorporates wild yeast ferments and aging in old oak barrels to build texture, complexity and genuine depth into a variety that is too often reduced to a single dimension. The result is a Sauvignon Blanc that stands apart: more sophisticated, more food-friendly and more interesting than the category norm.

The 2025 opens with an expressive and layered nose — lemon peel, grapefruit pith, apple blossom and pastry, with citrus and tropical notes woven through secondary characters that emerge from the wild ferments and barrel aging. The palate is elegant and well-structured, with a creamy, textural mid-palate that sets it apart from the region's stainless-steel standard. Bright acidity provides freshness and lift, while the long, complex finish reflects the care and intention behind the winemaking.

Serve well chilled at 46–50°F. One of the few Sauvignon Blancs with the weight and texture to handle lightly seared scallops or oysters without overpowering them. Also excellent with grilled fish, shellfish, fresh goat cheese (chèvre), Greek salad with feta, light pasta and herb-driven dishes.

Vinous | A savory, structured, dry Vouvray. There's restrained fruit, all baked apple pastries, citrus and baking spices in the 2019 Grosse Pierre. A firm thread of acidity and flint-derived tension course through the core and continue long after you've tasted the wine, giving structure and purpose. Slight warmth from the 14% alcohol, but it does not detract from the overall balance and the satisfying sinewy nature of this wine.
