Gerald Diem is a fifth-generation winemaker whose family has farmed the foot of the Manharts mountain since 1848. He and his wife took over the estate in 2000, converting their 25 hectares to certified organic viticulture — dry farmed, hand harvested, and rooted in sand and clay sediment soils that give D’Ora wines their distinctive texture and character. The Orange Grüner Veltliner is their most expressive bottling: a skin-contact white that is completely dry yet evokes the pleasure of an orange creamsicle, in the best possible way.

The 2024 pours a dusty tangerine with luminous clarity. The nose opens with yellow apple, vanilla wafers, and warm spice — inviting and aromatic. On the palate, layers of sweet apple, orange creamsicle, and gentle tannin from skin contact give way to a clean, refreshing finish. Half-Bottle. This wine is a gastronomic specialty made from hand-picked frozen grapes that were harvested in the early morning hours at 10F. These grapes produce only a small amount of highly concentrated juice.

Isole e Olena is one of Chianti Classico’s most storied estates, born from the union of two medieval villages in the heart of the appellation. Founded in 1956 by Francesco De Marchi and shaped into a benchmark producer by his son Paolo, the estate has long been synonymous with authentic, terroir-driven Sangiovese. In 2022, the De Marchi family passed the baton to Christopher Descours, whose team — led by longtime estate director Emanuele Reolon — continues the same mission: to give voice to an extraordinary region through wines of superb character. Sella & Mosca Cannonau di Sardegna Riserva — Sardinia, Italy 2021

Sella & Mosca is Sardinia's most storied and important winery, founded in 1899 near Alghero in the northwest of the island. With over 500 hectares under vine, it is one of Europe's largest single-estate wineries — and its Cannonau di Sardegna Riserva is the benchmark expression of the island's most celebrated indigenous red grape. Cannonau — known on the mainland and in France as Grenache — has been grown in Sardinia for centuries and thrives in the island's sun-drenched, wind-swept terrain. The Riserva designation requires extended aging, adding structure and complexity to the grape's naturally generous fruit character.

The 2021 pours a ruby red with garnet hues, translucent and brilliant. Allan Meadows  of Burghound writes 91 Points | Bright red and dark berry fruit aromas are nuanced by notes of spice, earth and plenty of floral nuances, especially violet. The rich, concentrated and palate coating medium weight flavors possess plenty of sappy dry extract that buffers the firm tannins supporting the elegant yet powerful finish. At least some patience is strongly recommended. I would note that this example showed markedly better than one from last year, in fact so much so that I have no explanation.

The AdamsWein Pares Spätburgunder 2023 is one of Simone Adams’ most ambitious and profound Pinot Noirs, produced from the historic Pares vineyard in Ingelheim, Rheinhessen. Pares is recognized as a VDP.GROSSE LAGE, Germany’s equivalent of a Grand Cru vineyard, and is widely regarded as one of Ingelheim’s most important sites for Spätburgunder. AdamsWein itself is not a VDP member, however, so the estate cannot officially place “GG” on its label.

Situated at approximately 250 meters elevation on the western slope of the Mainzer Berg, Pares combines loess and sandy loam over a limestone base. The limestone gives the wine its unmistakable tension, mineral drive and finely structured finish, while the site’s elevation and exposure help preserve freshness and aromatic clarity.

Simone Adams’ parcel has an unusual history. The land had been abandoned for roughly three decades before Adams reclaimed and replanted it, using her own selections derived from traditional German Pinot material rather than relying on Burgundian clones. The result is a Spätburgunder with an identity distinctly its own—powerful and complex, yet unmistakably tied to Ingelheim.

The 2023 Pares sits at the pinnacle of the AdamsWein Pinot Noir range. It shows remarkable depth and intensity, with raspberry and ripe cherry at its core, surrounded by darker berry fruit, floral notes, savory spice and an earthy, limestone-derived mineral character. Gerstl describes an exceptionally noble aromatic expression, with Burgundian raspberry and cherry notes rising from considerable depth, and awarded the wine a perfect 20/20. Robert Parker awarded the 2023 Pares 95 points.

On the palate, the wine is layered and concentrated without becoming heavy. There is a compelling wildness to the fruit, but also tremendous clarity, freshness and precision. Fine tannins give the wine structure while vibrant acidity and chalky minerality keep everything focused through the long, persistent finish. A recent tasting at the estate singled out the 2023 Pares as the most complete of the single-vineyard wines, emphasizing its combination of depth, layered fruit and freshness.

Winemaking

The 2023 single-vineyard Spätburgunders at AdamsWein were made with 100% whole clusters and matured for approximately 18 months in barrel. Treating the vineyard wines similarly in the cellar allows the differences among Ingelheim’s individual sites to remain particularly transparent.

Adams favors spontaneous fermentation, restrained intervention and minimal sulfur. The estate does not filter or fine its wines, emphasizing purity of fruit and vineyard expression.

Organic & Biodynamic Farming

The 2023 Pares is certified organic, with German retailer Weinfurore specifically identifying the wine as coming from controlled organic cultivation and displaying certification DE-ÖKO-022.

AdamsWein began ecological soil cultivation in 2017 and converted the estate completely to biodynamic farming in 2020. U.S. importer Bowler Wine likewise categorizes AdamsWein’s Pares as biodynamically farmed.

Serving & Cellaring

Serve slightly cool at approximately 55–60°F (13–16°C). In its youth, this is a wine worth giving one to two hours in a decanter. Its structure and concentration point toward exceptional longevity; Gerstl gives a suggested drinking window of 2032–2060, although the wine is already impressive today. 

The Montrachet glass is perfect to reveal the intensity of full-bodied white wines, including the wine's multi-layered aromas. With a larger volume, the wide open-mouthed bowl enables the rich bouquet to develop its wonderfully diverse range of aromas, emphasizing the finesse while minimizing the risk of richer style white wines becoming over-concentrated.

Vinous 98 Points | Bollinger’s 2014 La Grande Année is a great way to start the evening as guests mill around Wheeler Farms. It is early evening in Napa, but there is still plenty of action in the winery, where various lots are being pressed under the watchful eye of winemaker Nigel Kinsman. There are some moments where I would very much like to be a civilian, a regular person enjoying the night, but I am more concerned with our guests having a great night, so I quickly go back to check on our wines. The Bollinger 2014 is everything I expected; bright, focused and full of all the energy this late-ripening vintage conferred to the best wines.

Full-bodied, lush and refined on the palate, this is a rich yet elegant and fresh BA based on Chardonnay and Welschriesling. Pineapple aromas populate the finish that pairs fine tannins and a caramelly salinity that is so typical for wines from the Seewinkel. To be released in September this year. 11% stated alcohol. Fabrice Pouillon farms his vineyards according to organic and biodynamic principles, with a deep commitment to expressing the individual character of each parcel and the terroir of Mareuil-sur-Aÿ.

Soléra Extra-Brut is one of Fabrice Pouillon's most distinctive and intellectually compelling Champagnes — a multi-vintage cuvée created from a perpetual reserve established in 1997, designed to diminish the influence of any single harvest and place the character of Mareuil-sur-Aÿ firmly at the center of the wine. Each year, approximately 30% of the soléra is drawn off for secondary fermentation and replaced with 30% wine from the new harvest. This continuous process allows numerous vintages to become seamlessly integrated, adding layers of maturity and complexity while preserving the freshness and vitality of the most recent wine.
