The racy acidity is seamlessly knit, buoying the lacy mousse and flavors of cassis, toasted brioche and tangerine, with accents of candied ginger, hazelnut and fleur de sel lingering on the long, creamy finish. 96 Points Wine Enthusiast:  The new release of this producer's prestige cuvée comes in its usual beautifully sculpted bottle. The Champagne, from a great vintage in the region, is just approaching maturity still showing minerality from the high amount of Chardonnay in the blend. Nutty flavors are creeping in, keeping the great texture adding complexity. Drink this very fine wine now although it will also age further.

It is round and opulent, with a fine and pillowy mousse, and retains freshness throughout, with apricot and yellow flowers. It is impressive and long, and fully luxurious. Drinking well now, it is sure to hold its own for years to come. Drink 2022-2044.

93 Points Wine Advocate:  The newly released 2008 Brut Cuvée Rare is very promising, unwinding in the glass with a youthfully reserved nose of citrus oil, crisp green apple, freshly baked bread, iodine and oyster shell, as well as some rather herbaceous characteristics that depress my score a little, even if I suspect that they will resolve with a bit more bottle age. Medium to full-bodied, incisive and tightly wound, if the 2006 vintage was gourmand and demonstrative, the 2008 is slower to show all its cards. Built around racy acids and complemented by a pillowy mousse, this rendition of Cuvée Rare will reward a few years more on cork.

Domaine Georges Lignier Chambolle-Musigny — Burgundy 2022

Domaine Georges Lignier’s Chambolle-Musigny is one of the quiet gems of the Côte de Nuits — and the 2022 vintage may be its finest expression yet. Sourced from a prime 0.71-hectare parcel of 70-year-old vines straddling the “Les Drazey” and “Les Bussières” vineyards, just below the Premier Cru “Les Sentiers” and adjacent to the Bonnes Mares grand cru, this is village Burgundy that performs well above its appellation. Matured in small oak barrels — none new — to preserve the purity and transparency of the Pinot Noir. James Suckling awarded it 93 points, calling it “a very charming Chambolle-Musigny village wine with a lot of floral finesse.”

The nose is classically Chambolle: red flowers, ripe cherry, wild raspberry, and a whisper of forest floor. On the palate, it is sweet and silky — warm, powdery tannins deftly supporting a long, polished finish with remarkable depth for a village-level wine. The ancient vines and ideal location produce a complexity that elevates this far beyond what one would expect from a Villages bottling.

Already at the first sip, the beautiful balance between the pleasant acidity and the rounder mouthfeel is striking, with the additional aroma of bitter orange. Vinous 92 Points | A blend of Chardonnay, Welschriesling and Sauvignon Blanc from the younger vines of the estate (~15 years old). Gentle nuttiness and a touch of tatami mat on the nose, very subtle and calm. With air, a hint of butter emerges. The palate is all clarity, all lightness and all brightness on a super-slender frame that is soothing and smooth. Bone-dry.

About the Wine

Velich Tó White takes its name from the Hungarian word for "lake" — a nod to the estate’s proximity to Neusiedlersee in Burgenland, Austria. The Tó cuvée is sourced from the estate’s younger vines (15–25 years old) and blends Chardonnay, Welschriesling, and Sauvignon Blanc into a wine of remarkable purity and restraint.

The Wine Advocate 94 Points | The 2019 Gold Vidal Icewine was fermented and aged for about 14 weeks in 90% new French oak. It comes in with 272 grams of residual sugar, 10.5 of total acidity and 10% alcohol. Rich and unctuous, this also has classic aromatics and a certain level of freshness that keeps it from being particularly cloying. This is also completely delicious, with a little of bit of spicy apricots on the mouthwatering finish. The acidity lifts the fruit and allows it to shine through. It's never going to be a nervy wine, but it is not flabby either. If you like stickies, this won't disappoint. It should age very well, acquiring a bit more character along the way. Many will like it the way it is, but it can acquire another dimension in time. Best After 2021

R. Pouillon & Fils is one of Champagne's most exciting and principled grower-producers, based in the Premier Cru village of Mareuil-sur-Aÿ in the Vallée de la Marne. Fabrice Pouillon farms his vineyards with rigorous organic principles and biodynamic practices — emphasizing healthy soils, balanced vines, careful observation, and minimal intervention, allowing each vineyard's natural character to remain at the center of the finished Champagne.

Les Terres Froides — "the cold lands" — is a precise and mineral-driven Blanc de Blancs from a distinctive single vineyard in the village of Tauxières-Mutry, within the Montagne de Reims. Fabrice Pouillon farms approximately half a hectare in the lieu-dit Les Fourches, southwest of Tauxières-Mutry and close to Tours-sur-Marne. The vineyard's northern exposure and cool microclimate contribute to a long, gradual ripening season, preserving exceptional freshness, acidity, and aromatic precision. Tauxières-Mutry was historically awarded a 99% rating under the échelle des crus classification — just one point below Grand Cru status — and the soils in this parcel contain a higher proportion of chalk than those closer to the village, creating an exceptional environment for Chardonnay.

The wine is vinified in a combination of neutral barriques and traditional enameled tanks, undergoes malolactic fermentation, and is raised for approximately eight months before bottling — a restrained approach that preserves the freshness and saline character of the Chardonnay while adding subtle texture and complexity.

Lemon zest, crisp green apple, white peach, pear, and delicate white flowers on the nose, evolving into crushed chalk, oyster shell, fresh bread, and subtle spice. The AdamsWein Chardonnay Auf Dem Haun 2024 is an exceptionally refined, mineral-driven Chardonnay from Ingelheim in Germany’s Rheinhessen, crafted by winemaker Simone Adams. More reminiscent of fine white Burgundy than conventional German Chardonnay, it combines concentration and texture with striking freshness, salinity and precision.

The Auf dem Haun parcel sits higher on the slope than Adams’ Heerweg vineyard, where the leaner site naturally produces a more elegant expression. The soils are a complex mixture of loess, loam, clay and marl, giving the wine both depth and a distinctive stony, mineral character. The vineyard is organically farmed, and AdamsWein completed its organic conversion in 2023.

The 2024 opens gradually with lemon zest, yellow apple and restrained citrus fruit, layered with smoky reduction, wet stone, subtle herbs and delicate savory notes. With air, the fruit becomes broader and more expressive while remaining beautifully controlled. The palate is concentrated yet remarkably graceful, with a creamy texture balanced by energetic acidity and a pronounced saline, tactile minerality.

There is a distinctly Burgundian sensibility here: understated fruit, beautifully integrated oak and a structure built around texture and mineral tension rather than overt richness. Falstaff described the wine as possessing the imposing structure of a young great Burgundy and awarded the 2024 95 points. Vinous awarded 94 points, highlighting its brightness, deep stony character, saline freshness and exceptionally clear, persistent finish.

Winemaking

The Chardonnay grapes are whole-cluster pressed and spontaneously fermented, allowing indigenous yeasts to emphasize the character of the vineyard. The wine is matured for approximately 12 months in French barriques, with only a modest proportion of new oak, followed by minimal sulfur additions before bottling. The restrained élevage provides texture and complexity without obscuring the fruit or mineral character.

The finished wine is completely dry, with approximately 12.5% alcohol, preserving remarkable freshness despite its concentration. Falstaff reports just 0.8 g/L residual sugar.

Poggio al Tufo Rompicollo is a Tuscan “Super Value,” crafted from a single-vineyard site in the Alta Maremma.

Poggio al Tufo is the Maremma estate of Tommasi Family Estates, one of Italy's most respected multi-generational wine families. Situated in the Alta Maremma near Pitigliano, the estate takes its name from the volcanic tufo rock that defines its soils — porous, mineral-rich, and unlike anything found in the more celebrated corners of Tuscany. The Rompicollo vineyard sits on a south-facing slope where the combination of volcanic soils, Mediterranean warmth, and coastal breezes produces wines of uncommon depth and freshness for the price.

The 2022 Rompicollo is a blend of 60% Sangiovese and 40% Cabernet Sauvignon — a Tuscan-international marriage that works beautifully here. The Sangiovese brings structure, acidity, and that characteristic Tuscan earthiness; the Cabernet adds body, dark fruit, and a plush mid-palate that rounds out the blend. Winemaker Description 

This vintage is the fruit of setting up my establishment. It embodies my doubts, my
fears, my mistakes, my great joy, my passion, my convictions.

This wine plot is located on a rocky outcrop, on the summit of the Palais Mount. Its name comes from the Latin word “barra”, copied from the Gallic “barro” which means
“elevation, summit, peak”. Chalky brown soils, clay-limestone subsoils. Located at 300 meters high, on a plateau.

There is a forest which occupies the ridge of the mountain which protects and shelters the vineyard from the wind. This cool environment helps to produce the floral and aromatic character plus the freshness of the wines.

Fresh white fruits aromas accompanied by floral touches and mineral notes. It leaves a fresh cool taste in mouth and blends together a tonic effect with smoothness. This tense and invigorating juice leaves a long-lasting intense sensation in the mouth. The end result is remarkable thanks to the aromatic, sapid and well-delineated finality.

Nikolaihof is the oldest winery in Austria, with nearly 2,000 years of history and one of the first estates in the world to adopt biodynamic farming. Owned by the Saahs family since 1894 and Demeter-certified, the estate's vineyards in the Wachau are farmed without herbicides, pesticides, or synthetic sprays — guided instead by biodynamic preparations and a deep respect for the land.

Winemaker Description

Domaine De Souch. Located at the foot of the Pyrenees, near the Atlantic Ocean, at an altitude of 332 meters above sea level. This is where the pure, crisp wines of Domaine De Souch are produced. Winemaker Yvonne Hegoburu was 60 years old when she decided to start making wine here in 1987. At the time, she was one of the first to work entirely biodynamically in the region. Today, she owns 7 hectares of land; the vineyards face south and are largely planted with Petit Manseng and Gros Manseng.

Yvonne Hegoburu, who passed away in 2023 at the age of 95, was living proof that it is never too late to follow your winemaking dreams. It all started when Yvonne and her husband René purchased 16 hectares of land in the Jurançon region in southwest France. The couple lived together in the small hilltop village of Laroin until 1987, when René unexpectedly passed away. Yvonne recalled how the duo would fervently discuss their winemaking dreams; in her husband’s honor, she decided to pursue viticulture for the first time at the age of 60. Today, Domaine de Souch is comprised of 7 hectares of biodynamically farmed vines, which have been certified since 1994.

Yvonne was taken by biodynamics early on. She believed that farming without herbicides and pesticides is the truest and most honest form of winemaking. The vines are double guyot trained and rooted into flinty clay soils. All fruit is hand-harvested and comes from south-facing vines grown at 1,000+ feet above sea level. The vineyards are mostly dedicated to Petit Manseng and Gros Manseng, two of southwest France’s most well-known varieties.

Yvonne herself said it best in the acclaimed documentary, Mondovino: “I planted vines when my husband died. Ever since then, all this love inside me, I give it to the vines. I talk to them. I have an exchange with them. I ask them to drive their roots deep down into the soil to get the best from the land.” Yvonne worked the vines tirelessly until 2014, when she handed over the operation of the domaine to her son Jean-René, who continues to make wine in the style of his mother to this day. We are inspired by the Hegoburu family’s robust work ethic and passion for honest viticulture as the domaine continues into the next generation.

The vineyards have been fully biodynamically certified since 1994. The yields are low, never more than 30 hl per hectare, and the soil consists of heavy "flinty" clay called poudingues. This combination results in intense wines with high acidity and exceptional minerality.

R. Pouillon & Fils is one of Champagne's most exciting and principled grower-producers, based in the Premier Cru village of Mareuil-sur-Aÿ in the Vallée de la Marne. Fabrice Pouillon farms his vineyards according to biodynamic principles — a commitment to the land that goes beyond organic certification, working in harmony with natural cycles to produce wines of exceptional purity, vitality, and terroir expression.

Grande Vallée — formerly known as Réserve Brut — is a compelling expression of the Vallée de la Marne through the distinctive lens of Fabrice Pouillon. The cuvée brings together fruit from across the domaine's holdings in the Vallée de la Marne and Montagne de Reims, creating a broad and detailed portrait of the estate's varied terroirs. The blend is approximately 65% Pinot Noir, 20% Pinot Meunier, and 15% Chardonnay, grown on clay-limestone soils — the Pinot Noir providing structure and depth, Pinot Meunier contributing generous fruit and suppleness, and Chardonnay bringing lift, freshness, and precision.

Fermentation takes place with native yeasts in a combination of neutral barrels, small vats, and traditional enameled tanks. The wine undergoes full malolactic fermentation and is raised for approximately eight months before bottling. Since the 2019 vintage, Pouillon has employed his innovative Méthode Fabrice Pouillon across the range — using naturally sweet grape must from the estate rather than externally sourced sugar for the secondary fermentation and dosage, preserving a purer connection between the finished Champagne, its fruit, and its place of origin.

Luminous golden in the glass with an expressive, earthy bouquet. Aromas of juicy plum, ripe orchard fruit, subtle savory notes, gentle wood influence, and a faint oxidative complexity. On the palate, lighter and more energetic than the nose initially suggests — generous fruit with fine tension, firm Pinot structure, and bright, refreshing acidity. The texture is expansive yet remarkably agile, with a persistent mousse and a long, mineral-driven finish. Depth without heaviness, intensity without excess.

Excellent as an aperitif and particularly well suited to oysters, shellfish, roast poultry, mushroom dishes, aged cheeses, and savory pastries.

Winemaker Description

In clay-chalk soil, the vine is grown biodynamically in order for the terroir to fully express itself. The nose is particularly complex and fruity. Whilst the absence of sulphur during vinification is evident, it remains precise. On the palate, fruits and spices are the notes that dominate. Its supple mouthfeel is supported by unctuous tannins. A wine that pairs well with either white or red meat.

The domain might still carry the name of his parents, but Stéphane Tissot (and his wife Bénédicte) took over the family business over 20 years ago. In 1995, Stéphane began to reduce the amount of fertiliser so as to pave the way for organic viticulture. Around this time he also stopped using chemical herbicides altogether. In 1999, the then 28 hectares (now 46 hectares) became entirely organic and, after a few years, the whole domain became biodynamic in 2004 (Demeter certification). Stéphane's hard work has transformed the quality of the grapes. With such good quality fruit, vinifications are relatively easy and require very little intervention. Natural yeasts are used in fermentation and a very small amount of sulphites are added, nothing else. The end result is an excellent expression of terroir with intense aromas. Stéphane's quest to convey his many different terroirs has led him to produce nearly 50 different cuvées from many different grape varieties using various vinification methods. For example, for the Savagnin, a variety typical of the Jura, the property produces wines with and without oxidation (i.e. topping up of the barrels) and vin jaune. This domain is at its zenith and is one of the Jura's (and iDealwine's) best kept secrets.

The 2024 is harvested in three components, hand-sorted, de-stemmed, and slightly crushed. Extended skin contact post-fermentation, followed by 12 months in 225L and 500L French oak barrels. Deep plum in the glass with a purple rim. The nose is fresh and inviting — lively berry, cherry, tobacco, and savoury spice. On the palate: medium-bodied but bold, with an elegant structure, luscious berry and cherry fruit, and a long, refined finish. Drink now through 2029.
