Les Châtaigniers is a distinctive single-vineyard Champagne from the village of Festigny, situated on the left bank of the Marne Valley in the Vallée du Flagot. Soléra Extra-Brut is one of Fabrice Pouillon's most distinctive and intellectually compelling Champagnes — a multi-vintage cuvée created from a perpetual reserve established in 1997, designed to diminish the influence of any single harvest and place the character of Mareuil-sur-Aÿ firmly at the center of the wine. Each year, approximately 30% of the soléra is drawn off for secondary fermentation and replaced with 30% wine from the new harvest. Chemin du Bois is one of Fabrice Pouillon's most innovative and daring Champagnes — created to demonstrate how thoughtful farming, natural ripeness, and minimal intervention can reshape the traditional Champagne method. Produced entirely from Pinot Noir grown in the single Chemin du Bois vineyard in Mareuil-sur-Aÿ on clay-limestone soils, this cuvée is defined by Pouillon's proprietary Méthode Fabrice Pouillon — a radical departure from conventional Champagne production.

Conventional Champagne permits the addition of externally sourced sugar at three stages: chaptalization, the prise de mousse that creates the bubbles, and dosage after disgorgement. Chemin du Bois uses none of it. Instead, approximately 15% of the juice is reserved in stainless steel until spring. The remaining juice ferments spontaneously with ambient yeasts in neutral barrels. After approximately 12 months, the finished base wine is blended with the reserved grape juice, initiating a second natural fermentation entirely from the estate's own fruit. When dosage is used, it too is prepared from grape juice rather than refined sugar. The result is a Champagne of remarkable purity, individuality, and direct terroir connection.

Full-bodied and muscular, the 2018 combines the generosity and warmth of the vintage with Pouillon's characteristic precision. The Rosé de Macération is a deeply individual and highly distinctive rosé Champagne made entirely from Pinot Noir grown on clay-limestone soils in Mareuil-sur-Aÿ. Rather than producing the rosé by blending white Champagne with still red wine — the conventional method — Fabrice allows the freshly pressed juice to remain in contact with the grape skins for up to 12 hours. This short maceration extracts color, aroma, and gentle tannin while preserving the freshness and precision essential to Champagne, giving the wine its distinctive pale ruby color, structure, and expressive red-fruit character.

Fermentation takes place in a combination of traditional enameled tanks and neutral oak barrels. Approximately 80% of the wine is élevaged for eight months, while the remaining 20% is aged for 18 months in neutral oak. You may say to yourself this is so different in the tradition of a wine from old world France in the bard yard style. Its power immediately comes at you. If you prefer modern style California Zinfandel, then this wine is not for you. If you are an explorer, with a skydiver personality, I highly recommend this wine.

The 2020 County Line Zinfandel is characterized by powerful fruit and spice aromas balanced by refreshing acidity and herbal complexity. It speaks to both the robust essence of the grape and the nuances of its Sonoma Coast terroir. David Ramey is one of California's most celebrated winemakers — a Burgundy-trained perfectionist who has spent decades proving that the Russian River Valley can produce Chardonnay of genuine world-class stature. The 2023 Russian River Valley Chardonnay is sourced from seven exceptional cool-climate vineyard sites — Lafranchi, Westside Farms, Sonoma Foothills, Martinelli Laughlin, Kilcullen, Dutton Sebastopol, and Frank Johnson — all planted on low-vigor Goldridge loam soils between 1978 and 2017. Wine Advocate 94 Points | The NV RP 30 Year Old Tawny Port comes in with 119 grams per liter of residual sugar and was bottled in 2015. This is the new release. This mingles complexity of flavor with a fresh and surprisingly elegant feel (relative to the category, of course). The finish is very long, complex and persistent, adding new flavors as it lingers. Beautifully constructed and balanced, this is a 30 that starts with a bit of understatement and keeps getting more impressive. It's fun to just smell, but you expect that with long-aged Tawnies. The lift to the fruit and the sunny demeanor aren't always as guaranteed. It has a surprisingly supple and fresh style that I rather appreciated, delivering those old Tawny flavors while also seeming remarkably elegant. Then, it finishes with that big acidity. It was notably better a few days later, no longer seeming quite so understated, particularly in regards to its concentrated flavors and intense aromatics. Note that this comes with a bar top cork. If you're wondering, this is their oldest NV Tawny; Ramos Pinto does not make a 40.

This complex, perfectly balanced port shows rich aromas of dried fruit and vanilla. Agitate the glass and spice aromas of cinnamon and cocoa are liberated. In the mouth, the attack is fresh, fine and delicate. Ripe, dried fruit softly merges with almond and hazelnut, culminating in vanilla flavors which linger gracefully on the palate. The Wine Advocate 93 Points | The 2022 De La Finca comes exclusively from their own vineyards, 60% Xarel.lo, 30% Macabeu and 10% Parellada, and has the added complexity and nuance from a longer élevage, no less than 30 months in bottle with lees and closed with a cork after refermenting. It's bone dry, not adjusted, and sold as a brut nature. It has a bright, almost fluorescent yellow color and a very expressive nose with notes of yeasts and Mediterranean herbs, subtler, more complex and with smaller, more integrated bubbles and a vibrant, clean and precise palate, super tasty. It comes from the plots on slopes already classified by Pepe Raventós's grandfather. Here, they have lower yields, accentuated by the vintage, which is more marked in the wine, as it's always from the same plots. The whole clusters are pressed, looking for longer aging potential, and fermentation is in concrete, always thinking about a longer-lived wine. It's a generous wine from a generous year. 55,000 bottles and 1,000 magnums were produced.

This characterises the structure and the soil composition of this vineyard. Jeb Dunnuck 90 Points | Lastly, this estate fashioned a solid 2018 Cabernet Sauvignon Mohrhardt Ridge Vineyard, which comes from the Fort Ross-Seaview appellation, and you don’t see many Bordeaux varieties from this region. This inky-hued beauty offers lots of cassis and blueberry fruit as well as sappy green herbs, tobacco, and subtle cedar-like aromas and flavors. It’s medium-bodied and has ripe, building tannins, good overall balance, and a solid finish. It will benefit from another year or three of bottle age and should drink nicely for a solid decade. Rémi Leroy is one of the Côte des Bar's most compelling young grower-producers. After completing graduate studies in oenology and viticulture in Bordeaux, Leroy returned to his family's vineyards in Meurville in the Aube — the southern reaches of Champagne, where Pinot Noir reigns and the soils bear a striking resemblance to those of nearby Chablis. He farms a selection of carefully chosen parcels across the villages of Meurville, Bergères and Fontaine using practicing-organic methods, with an emphasis on precision, transparency and minimal intervention in the cellar.

The Réserve Blanc de Noirs is made from 100% Pinot Noir sourced from vines approximately 30 years old. What sets these vineyards apart is the soil composition: approximately 60% of the fruit comes from Kimmeridgian clay-limestone — the same ancient seabed geology that defines the finest vineyards of Chablis — while the remaining 40% comes from the rarer Portlandian limestone soils found around Meurville. The interplay between these two soil types gives the wine both generous fruit and a firm, chalky mineral backbone.

The current release blends 85% from the 2022 harvest with 15% from 2021, adding complexity and balance while preserving the freshness and ripe red fruit character of the primary base year. Vinification and maturation take place entirely in stainless steel, preserving the clarity and natural character of the Pinot Noir. Malolactic fermentation is completed in full. The wines are generally bottled without fining or filtration. After secondary fermentation in bottle, the Champagne spends approximately 24 months aging on its lees and is disgorged at an exceptionally low dosage of approximately 1 gram per liter — a near-zero addition that keeps the wine bone dry and allows the fruit and mineral terroir to speak without interference.

The wine opens with aromas of raspberry, wild strawberry, red cherry and crisp red apple, followed by blood orange, citrus peel, dried flowers and fresh bread. Subtle hints of almond, chalk and gentle spice emerge with air. The palate is energetic and finely textured — a lively mousse carries ripe red fruit and citrus freshness, while Pinot Noir provides structure, depth and a lightly savory character. Cranberry, orange peel, toasted grain and green almond lead into a dry, persistent finish marked by limestone minerality and a refreshing saline quality.
