J. Vignier’s Pur Cramant is a rare, single-vineyard Grand Cru Champagne created to capture the character of one exceptional parcel in Cramant. For this cuvée, Nathalie Vignier selects a different lieu-dit from her family’s Cramant holdings according to which site she believes most clearly expresses the personality of the vintage. For the 2016 release, that vineyard was Les Fourches.

Located in the southern part of Cramant, close to the renowned Bateau vineyard, Les Fourches is planted with Chardonnay vines more than 55 years old. The parcel’s northeast-facing slopes and distinctive combination of clay-rich marl over pure Cretaceous chalk create a Champagne with both depth and precision. The marl contributes texture and power, while the deep chalk subsoil provides freshness, tension and the refined mineral character associated with the finest wines of the Côte des Blancs.

Produced entirely from Grand Cru Chardonnay, the wine was fermented and aged in stainless steel to preserve the purity of the fruit and the clarity of the vineyard expression. It underwent full malolactic fermentation and remained on its lees until bottling in April following the harvest. The Champagne then spent approximately 64 months aging en tirage before disgorgement, developing a fine mousse, greater complexity and a beautifully integrated texture.

Pur Cramant Les Fourches is precise, concentrated and elegantly structured. Aromas of lemon zest, white peach, green apple and white flowers are complemented by subtle notes of brioche, almond and chalk. The palate is energetic and finely textured, with bright citrus, ripe orchard fruit and a pronounced mineral core. Its Extra-Brut dosage keeps the finish dry, focused and persistent while allowing the character of the old vines and chalk-rich terroir to remain at the forefront.

The cuvée honors Nathalie Vignier’s great-grandmother Elise, who helped establish the three Cramant lieux-dits at its heart: Chenelots, Marais, and Herbin. The vines were between 25 and 45 years old at harvest, rooted in Cretaceous chalk, marl, and loam — the geological foundation of Grand Cru Cramant Chardonnay. Fermented and aged in neutral oak barrels on the fine lees, bottled in June 2009, and then aged an extraordinary 13 years en tirage before hand disgorgement. Dosed at just 2.7 g/L. The name says it all: Silexus Sezannensis is a Champagne defined entirely by its soil. Drawn from the Chatet parcel near Saudoy in the Côte de Sézanne — where four of the Vignier family’s twelve hectares are planted — this 100% Chardonnay cuvée grows on a complex mixture of silex and sand over deep Cretaceous chalk, with marl, clay, and silica adding further texture and character. The dark flint stones absorb warmth during the day and release it slowly around the vines at night, encouraging even ripening and full Chardonnay maturity. The underlying chalk preserves freshness, acidity, and a pronounced mineral drive. Vinified in stainless steel with full malolactic fermentation and aged a minimum of 84 months en tirage, the 2016 base emerges with depth, integration, and a flinty character that is unmistakably its own. Expressive and mineral-driven on the nose: ripe citrus, yellow apple, white peach, and delicate flowers, with subtle brioche, almond, and crushed stone emerging with air. It’s medium-bodied with a wonderful harmony of silky acidity, a hauntingly subtle minerality and a very long, stony finish that somehow manages to be very gentle. From organically grown grapes. Drink or hold. 

Winemaker Description 

The nose here is just a shade riper, with tart citrus flirting with barely ripe apricot, heading toward the peach register though highlighted by lemon curd and lemon zest, pretty citrus elements to brighten it up, even the riper twang of a lime. This has more density, for sure, more richness, though it has plenty of definition. Thinking of these wines in the context of the Rheingau is just crazy; my teeth are aching. The whole collection has acids – I should get the numbers here, if Eva hasn’t already sent them [note to reader: I never got any numbers on the acids b/c I'm just too buried in work right now]. There is a limey quality to this, sticky but fresh, gripping, that I really like. These are very damn good. 

Hans-Josef Becker’s grandfather (J.B.) founded this winery in 1893, and it is home to some truly astounding wines. The Spätlese Trocken is somehow both very serious and firmly structured, yet remains bright and affable. The old vines show incredible concentration - this wine is just a baby and could be cellared for decades. On the other hand, the 2022 vintage displays plenty of juicy, expressive fruit with crushing acidity and a bold mouthfeel. These wines have achieved cult-status for good reason.

Winemaker Description 

Sarpa, the bridge between the past and the future. This Grappa was conceived in 1983, but it took a few years to see the light of day. The goal was clear in my mind: a Grappa to encase the aromas of Tradition, but without the typical flaws of old fashion Grappas, often stingy, aggressive and oily. It had to be an authentic Grappa, sincere and genuine, what one would now call a classic Grappa.

Moreover, it was meant to be a bridge between the Grappa of the past and the Grappa of the future, representing the present of Grappa with its best typical features. It took some time to figure out which vines to use and after various trials I turned to the timeless Bordeaux blend, that mix of Cabernet Franc, Cabernet Sauvignon and Merlot that gave rise to the best wines in the world, the Bordeaux wines.

These vines have successfully been grown in the Veneto region for a long time and it seemed just natural to use them to try to produce a symbolic Grappa, the Grappa that should have embodied years of experience and passion. 

Sarpa di Poli has a robust, almost rustic character, with pleasantly grassy scents that remind of freshly cut grass, an aroma of wine and red flowers like geranium, rose and violet that make it a timeless classic.
