Champ d'Alouettes — "Field of Larks" — is a single mid-slope lieu-dit in the heart of Le Mesnil-sur-Oger. The parcel's chalk-rich, freely draining soils encourage the vines to develop extraordinarily deep root systems, giving the finished Champagne remarkable mineral intensity and depth. Pascal Doquet selected fruit from some of the estate's finest vines in this parcel to produce a wine that reflects the identity of the site with exceptional clarity.
The 2005 vintage in Champagne was warm and generous, producing wines of exceptional concentration and ripeness. The wine was vinified and matured partly in oak barrels, adding texture and subtle breadth without overwhelming its mineral character. Malolactic fermentation was deliberately avoided to preserve the natural freshness and tension of the Chardonnay. It then spent an exceptionally long period — approximately 15 years — aging on its lees in bottle, developing the fine mousse, creamy texture, and complex mature aromas associated with carefully cellared vintage Champagne. Final dosage of approximately 3 g/L places it firmly in the Extra-Brut category.
Deep golden in the glass with a fine, persistent bead. The bouquet opens with lemon oil, candied citrus peel, baked apple, and ripe pear, followed by layers of toasted brioche, hazelnut, almond, dried white flowers, and subtle honeycomb. With air, notes of crushed chalk, oyster shell, smoke, and warm spice emerge, revealing the extraordinary complexity of extended lees aging. On the palate, structured, vinous, and beautifully concentrated — preserved lemon, yellow apple, Mirabelle plum, and citrus zest balanced by toasted nuts, biscuit, and delicate spice. A firm chalky backbone provides freshness and precision despite the richness of the mature vintage. The Extra-Brut dosage keeps the finish dry, focused, and saline, with lingering notes of citrus, roasted hazelnut, and mineral chalk.

Pascal Doquet is one of the Côte des Blancs' most respected grower-producers, farming certified organic vineyards across several important Champagne villages. His Cœur de Terroir — "heart of the terroir" — collection is devoted to individual villages, historic parcels, and the distinctive character of their soils. The Vertus Cœur de Terroir was the very first wine conceived for this series — a fitting tribute to Vertus, the village at the heart of Doquet's estate.
The fruit comes from Pascal's finest Premier Cru sites in Vertus: Barrilliers, Nuisats, Vieille Voie, Corvées, Grange au Bar, Les Grues, and La Barre — vineyards rooted in Cretaceous chalk and clay that give the wine both mineral definition and a broader, more generous texture than the sharply linear Champagnes of nearby Le Mesnil-sur-Oger. All vineyards are certified organic by Ecocert.
The 2009 blend is composed of 70% Chardonnay and 30% Pinot Noir — the Pinot Noir sourced from La Barre, contributing structure, depth, and a subtle red-fruit character, while the Chardonnay provides freshness, chalky tension, and length. The wine was vinified and matured for approximately 11 months in neutral oak barrels, with full malolactic fermentation adding creaminess and roundness. After bottling, the Champagne spent an exceptional 12 years aging sur latte before disgorgement, developing extraordinary complexity and richness while preserving the mineral energy of the Vertus terroir. Mont Aimé is a historic chalk outcrop situated east of Vertus in the southern Côte des Blancs — a less familiar but genuinely distinctive corner of Champagne. Although the vineyards face south, the site has a noticeably cooler microclimate than Doquet's parcels in Vertus and Le Mesnil-sur-Oger. The Chardonnay here ripens approximately one week later, extending the growing season and helping the fruit retain exceptional freshness, acidity, and aromatic precision. The site's chalky soils contribute the firm mineral structure and persistent saline character that distinguish this Champagne.
The 2007 Mont Aimé is therefore both a mature vintage Champagne and a focused expression of this cooler terroir. Made without added sulfites. Extended bottle aging has given this Champagne considerable depth and tertiary complexity while preserving the energy and mineral definition associated with Pascal Doquet's wines.

Since its 175th anniversary, Pol Roger has decided to offer a very limited range of older vintages from its iconic cuvées. After the original disgorgement, these bottles were then returned to the famously deep and cool Pol Roger cellars for additional extended maturation where they have rested undisturbed until their release. Not only do these bottles have a label, cap and collar based on a historic Pol Roger design, they also have been dressed by hand and arrive in an elegant wooden box.
The Sir Winston Churchill Cuvée was created in 1975 as a tribute to the "Old Lion", using the qualities he appreciated in champagne : robustness, structure and maturity. Whilst its exact composition is a secret guarded by family members, it is undeniable that it is based on a formula of which its dedicatee would have approved : "My tastes are simple, I am easily satisfied with the best". Made exclusively with grapes from the Grands Crus of Pinot Noir and Chardonnay already in production during the Churchill era, this cuvée is only produced in the very best vintages.

About the Wine
Domaine des Tourettes is the flagship Hermitage of Delas Frères, one of the Northern Rhône’s most respected négociant-éleveurs. The 2022 is sourced from two prized sectors of the legendary Hermitage hill: Les Bessards (7 hectares of granite-rich soils) and Les Grandes Vignes (2 hectares of the highest vines on the hill). Fermented with 80% whole clusters for Les Grandes Vignes, then matured for 15 months in Burgundian oak barrels (25% new). The result is a Hermitage of remarkable elegance, structure, and complexity — approachable now with decanting, but built to shine over the next decade and beyond.

This 2023 Napa Valley Cabernet Sauvignon will certainly evolve in the cellar, but it has been crafted to be enjoyed right away. Dark red fruits, red raspberries, graphite and exotic woods are just a few of the complexities that come forward immediately. The savory tones and freshness of Coombsville meld well with the generous black fruits and solid structure of Oakville. Careful tannin extraction, barrel aging for twenty months in 50% new French oak barrels, and botting without fining or filtration, ensure that the wine retains fruit intensity and maintains its bold texture and generous length.

Nuanced, refined and hauntingly balanced, with perfumed oak, lovely texture and balance, leafy, graphite-like complexity and the length of a world-class wine. 2023-35.
Jane Anson 95 Points | Muscular, slate hewn tannins, this has a rugged quality where nothing is overpowered by oak and yet it hugs the palate, making its presence felt. Serious tannic architecture that softens through the mid palate to show creamy raspberry and red cherry fruits, spiced aniseed, fennel and liqourice root, sinewy tannins, totally moreish. Aged in 25% new oak, 10% amphora, and the rest in neutral barrels. Jean-Claude and Jeff Berrouet consultants, with winemaker Montxo Martinez and owners Marcos and Carlos Yllera. About Wine & Soul
Wine & Soul is the joint project of husband and wife Jorge Serôdio Borges and Sandra Tavares da Silva, both qualified oenologists. They bought an old port warehouse in the Vale de Mendiz in the heart of the Pinhão valley in 2003. The estate is 6 hectares with 2.5 ha under vine, averaging over 70 years old and planted with 30+ different varieties. The project is named after their dog Pintas, a Pointer.
Winemaking
Harvested in the second week of September in perfect conditions. All grapes were hand-selected, destemmed, and foot-trodden in traditional stone lagares throughout the full 10-day fermentation. Aging and malolactic fermentation in French oak barrels for 20 months.

There is more clay here, and less limestone than in Les Cras, and the tannic structure is not as firm. The grapes are from Drouhin's massive 6.75ha here, not far from Pommard; they are partially destemmed and fermented on native yeasts before ageing in cask (25% new) for 14–18 months.

JEB DUNNUCK 97 POINTS: Black raspberries, ground pepper, white pepper, and sappy floral notes all make an appearance in the 2023 Châteauneuf Du Pape Colombis, another remarkable wine from this family. With medium to full-bodied richness, it's incredibly well-balanced, has ultra-fine tannins, no hard edges, and a great finish. As with the estate’s other cuvées, it reminds me of their 2020. As usual, this cuvée is 100% Grenache that’s from a mix of three parcels (Rayas, Les Roues, and Colombis). It was not destemmed and was brought up in a mix of concrete, foudre, and clay jars.
VINOUS 96 POINTS: The 2023 Châteauneuf-du-Pape Colombis is magnificent, bursting from the glass with prominent rose petal, crushed violets, strawberry compote, spicy licorice, dried herbs and minty shadings. Enveloped in velvety tannins, the perfumed 2023 is shaping up to be a wildly alluring Colombis, closing with a subtle phenolic kick on the focused finish. I can’t wait to taste it from bottle.
THE WINE ADVOCATE 94 POINTS: A pure Grenache Noir planted in the north part of the appellation and vinified with 30% whole bunches, the 2023 Châteauneuf-du-Pape Colombis has turned out beautifully. Silky tannins wrap around a core of red-toned fruit, mint, white pepper, blood orange and exotic spice.
Decanter 97 Points | The Romanée-St-Vivant has developed more complexity since bottling, with a savoury, almost gamey edge to the lush berry fruit aromas and a hint of spice. The grip and freshness of the wine are impressive and seem to carry this wine to a new level of intensity. Although this wine had originally seemed ethereal and silky, the substantial nature of the structure is now evident, aided perhaps by the stricter selection. Bertrand de Villaine confirms that two parcels in this vineyard were pulled up due to issues with the rootstock, leaving them 23,699 bottles in 2022.

The Gelin family invested in a larger, more efficient winery, which was upgraded and ready for the 2011 harvest. “The new winery allows us more flexibility during harvest, as well as the technology to increase wine quality,” says Pierre-Emmanuel. The wines of Domaine Pierre Gelin have always been de-stemmed with a long cuvaison of 8-10 days and a judicious use of oak. Only indigenous yeasts are used for fermentation which takes place in stainless-steel and oak tanks. Malolactic fermentation occurs in barrel and the wines are aged for 20-24 months in varying percentages of new oak: up to 80% new oak for the Grand Cru, and 25% new for the premier crus. They use older barrels for village wines.
