Pacific Redwood is a third-generation family winery rooted at the pristine headwaters of the Russian River in Redwood Valley, Mendocino County. Pajé is a small 1.83-hectare (4.52-acre) strip of land facing southwest, particularly rich in calcareous marl with a high content of active limestone. The vines range from 25 to 50 years of age (averaging over 40), and all new plantings are propagated using the massale selection method — clippings pruned exclusively from the Pajé vineyard itself.

The Grappa Riserva 7 Years Bortolo Nardini Selection is a grappa obtained from artisanal processes starting from pomace of multivitigno grapes. It ages for at least 7 years in Slavonian oak barrels.

Light amber in color, it offers rich spicy sensations of vanilla to the nose, enriched by hints of cherry and wild berries. On the palate it offers a complex, rich and persistent profile.

For this exceptional release, Billecart-Salmon selected the outstanding 2018 vintage, a year of impressive ripeness, concentration and freshness. The Champagne is composed of 65% Pinot Noir from the Montagne de Reims and 35% Chardonnay from the Côte des Blancs, sourced from prestigious Grand Cru and Premier Cru vineyards.

Only a small portion — approximately 3% — was vinified in oak, with the remainder in stainless steel to preserve freshness, purity and precision. For eight generations the Pasquero-Elia family has farmed the hills of Neive, weathering wars and hard vintages to build a deep, lasting bond with their land. Since 1893 their Sorì Paitin, the warmest, steepest, southwest-facing slope of the Serraboella MGA cru, has been one of the traditional benchmarks of Neive's Barbaresco.

Paitin's approach is rooted in classic Piedmontese winemaking and in patience: long macerations and unhurried aging that let the terroir speak. In 2022 the family didn't make its Vecchie Vigne, so fruit from those old vines went into this bottling instead, which makes it an especially strong year for this wine.

Tasting Notes

Dark and layered, with graphite, licorice and pencil shavings over raspberry, macerated cherry, strawberry and blood orange. Clove, hazelnut, rose and a cool mint lift emerge as it opens. The active limestone soils give it volume, firm tannins and bright, steely acidity. It's a structured, long, detailed Barbaresco that will reward cellaring.

In Piemontese dialect, sorì refers to the best exposed slope of a hill. For the Paitin estate, that means the warmest, steepest section of the Serraboella MGA, which faces southwest."

Producer Description

Amber-colored, this grappa is very smooth at the taste, but never mawkish. In its aromatic profile the ranges of fruit and spices are predominant and that's right in the grappa with a long aging and a high quality standard.

In the range of fruity tastes we can catch the one of the dry fruit, so rare to find; together with the candied fruit, the raisins and the prune we can feel the fruit in syrup, the jam and the citrus. In the range of spices the flavor of the barrel is dominating, together with pepper, licorice, tobacco and clove.

The 12-year aging process transforms the raw, high-toned character of young grappa into a complex, mellow, and brandy-like spirit:

Our Russian River Selection bottlings are quintessential Russian River Valley wines blended from some of the region’s top vineyards, taking advantage of varied climates and unique site characteristics. The 2022 Russian River Selection Pinot Noir has seductive aromas of Luxardo cherries intertwined with rose petals, fresh fennel, dark berry preserves, and a hint of savory earth. The youthful yet complex palate offers juicy flavors of sour cherries, blood orange, wild raspberries and with a dollop of tangy tamarind. Fine-grained tannins are balanced by firm acidity, creating a full-bodied texture, lending to an incredibly long, spicy finish.

Winemaker Description 

This traditional grappa has a clear, intense golden yellow to amber color. The nose is delicate and complex, with hints of bread, orange peel, wild flowers, elderberry, vanilla, plum, dried fruits, raisins and amaretto. 

The taste is smooth, rich, velvety, tannic and harmonious, exploding at the back of the mouth with authoritative aromas and long-lasting persistence, leaving notes of vanilla, almond, cocoa, tobacco, licorice and walnut bread. 

In 1968, Miljenko “Mike” Grgich went to work for Robert Mondavi as chief enologist, crafting the inaugural release of “Fumé Blanc” — an elegant, dry, oak-aged style of Sauvignon Blanc that Mondavi named after the French word for smoke. A decade later, Mike's 1973 Chardonnay famously won the Judgment of Paris, putting California wine on the world map. He went on to found Grgich Hills Estate in 1977, where he continued to champion the Fumé Blanc style as a tribute to his mentor and friend.
