The AdamsWein Pares Spätburgunder 2023 is one of Simone Adams’ most ambitious and profound Pinot Noirs, produced from the historic Pares vineyard in Ingelheim, Rheinhessen. Pares is recognized as a VDP.GROSSE LAGE, Germany’s equivalent of a Grand Cru vineyard, and is widely regarded as one of Ingelheim’s most important sites for Spätburgunder. AdamsWein itself is not a VDP member, however, so the estate cannot officially place “GG” on its label.

Situated at approximately 250 meters elevation on the western slope of the Mainzer Berg, Pares combines loess and sandy loam over a limestone base. The limestone gives the wine its unmistakable tension, mineral drive and finely structured finish, while the site’s elevation and exposure help preserve freshness and aromatic clarity.

Simone Adams’ parcel has an unusual history. The land had been abandoned for roughly three decades before Adams reclaimed and replanted it, using her own selections derived from traditional German Pinot material rather than relying on Burgundian clones. The result is a Spätburgunder with an identity distinctly its own—powerful and complex, yet unmistakably tied to Ingelheim.

The 2023 Pares sits at the pinnacle of the AdamsWein Pinot Noir range. It shows remarkable depth and intensity, with raspberry and ripe cherry at its core, surrounded by darker berry fruit, floral notes, savory spice and an earthy, limestone-derived mineral character. Gerstl describes an exceptionally noble aromatic expression, with Burgundian raspberry and cherry notes rising from considerable depth, and awarded the wine a perfect 20/20. Robert Parker awarded the 2023 Pares 95 points.

On the palate, the wine is layered and concentrated without becoming heavy. There is a compelling wildness to the fruit, but also tremendous clarity, freshness and precision. Fine tannins give the wine structure while vibrant acidity and chalky minerality keep everything focused through the long, persistent finish. A recent tasting at the estate singled out the 2023 Pares as the most complete of the single-vineyard wines, emphasizing its combination of depth, layered fruit and freshness.

Winemaking

The 2023 single-vineyard Spätburgunders at AdamsWein were made with 100% whole clusters and matured for approximately 18 months in barrel. Treating the vineyard wines similarly in the cellar allows the differences among Ingelheim’s individual sites to remain particularly transparent.

Adams favors spontaneous fermentation, restrained intervention and minimal sulfur. The estate does not filter or fine its wines, emphasizing purity of fruit and vineyard expression.

Organic & Biodynamic Farming

The 2023 Pares is certified organic, with German retailer Weinfurore specifically identifying the wine as coming from controlled organic cultivation and displaying certification DE-ÖKO-022.

AdamsWein began ecological soil cultivation in 2017 and converted the estate completely to biodynamic farming in 2020. U.S. importer Bowler Wine likewise categorizes AdamsWein’s Pares as biodynamically farmed.

About the Wine

Pio Cesare is one of Piedmont’s most historic and respected estates, founded in 1881 in Alba. The 2021 Barbaresco is sourced primarily from vineyards in Treiso, with additional fruit from classic Barbaresco sites. Fabien Cazé, a tenth-generation grower, farms selected family parcels for his own small Champagne project. Naturellement is made entirely from Pinot Meunier grown across six parcels in Châtillon-sur-Marne and Vandières, on the western side of the Vallée de la Marne.

The family has tended these vineyards for generations, and Fabien's estate has been certified organic since 2018. Vineyard work is done by hand without herbicides or pesticides, with minimal soil disturbance. In the cellar, the grapes are pressed slowly and gently, moved by gravity, and fermented with native yeasts in barrels.

Extended time on fine lees and a restrained cellar approach let the fruit and place remain at the center. The result is a pure, precise Blanc de Noirs Extra Brut that showcases Pinot Meunier in a focused Champagne style.

Domaine Georges Lignier Chambolle-Musigny — Burgundy 2022

Domaine Georges Lignier’s Chambolle-Musigny is one of the quiet gems of the Côte de Nuits — and the 2022 vintage may be its finest expression yet. Sourced from a prime 0.71-hectare parcel of 70-year-old vines straddling the “Les Drazey” and “Les Bussières” vineyards, just below the Premier Cru “Les Sentiers” and adjacent to the Bonnes Mares grand cru, this is village Burgundy that performs well above its appellation. Domaine Hoffmann-Jayer is one of Burgundy’s most compelling small estates, and their Hautes-Côtes de Nuits is a masterclass in what old vines and meticulous winemaking can achieve at a village level. Sourced from one hectare of 60-year-old Pinot Noir planted in the lieux-dits En Foigery and Les Castaings in Magny-lès-Villers, the 2020 vintage is vinified with a pre-fermentation cold soak and spontaneous fermentation in cement tank, then aged 18 months in a combination of two-thirds 228-liter barrels (20% new oak) and one-third terracotta jar — a rare and thoughtful approach that preserves freshness and amplifies terroir. Bottled without filtration for maximum purity and expression.

The nose is spicier and slightly more deeply pitched than expected for the appellation: plum, black cherry, and subtle earth. About the Wine

Cuvée Laurène is the flagship Pinot Noir of Domaine Drouhin Oregon — the Willamette Valley estate founded by Burgundy’s legendary Maison Joseph Drouhin. Named after Véronique Drouhin’s daughter, this 100% estate wine is sourced from the Dundee Hills and Eola-Amity Hills, two of the valley’s most exciting sub-appellations.

The vines are planted at high Burgundian density, forcing competition for nutrients and producing small, intensely concentrated berries. The estate’s famous Jory soil (red volcanic clay) gives the wine its signature red-fruit profile and silky, elegant texture.

Lovely nose of dark fruit, cedar, and herbs. Medium-bodied with firm tannins and a structured finish.

Marqués de Murrieta didn’t just make one of the first Rioja wines — they essentially invented the category. Founded in 1852 by Don Luciano Murrieta, the estate has spent over 170 years refining a house style built on elegance, consistency, and the singular personality of the Finca Ygay estate. The 2022 Reserva is a classic expression: raspberry, blueberry, and cherry on the nose, lifted by thyme, rosemary, and sandalwood, with a juicy, precise palate shaped by fine tannins and a fresh, pleasant finish. Yann Alexandre's Grande Réserve is a benchmark Premier Cru grower Champagne assembled from four carefully selected vineyard parcels in the villages of Coulommes-la-Montagne, Villedommange, and Vrigny. Compared with his Brut Noir, the vineyard imprint here is more distinctly calcareous — giving the wine pronounced chalky minerality, structure, and freshness. The blend of 45% Pinot Noir, 45% Chardonnay, and 10% Pinot Meunier is fermented 80% in stainless steel and 20% in neutral oak, then aged seven years en tirage in the Alexandre family's cool cellar. The result is a deeply gastronomic Champagne of rare precision and sense of place.

Wet clay and stone on the nose combine with buttery shortcrust pastry and a delicate edge of honey. The Place: Aÿ Grand Cru

Henri Goutorbe is based in Aÿ, one of Champagne's 17 Grand Cru villages and the historic heartland of Pinot Noir in the Vallée de la Marne. Aÿ's south-facing slopes, deep chalk soils and warm mesoclimate allow Pinot Noir to achieve exceptional ripeness and concentration, producing wines with body, ripe red and dark fruit, and a distinctly vinous character. The 2015 Vintage

Tasting Notes

The 2015 Special Club opens with layered aromas of kirsch, cinnamon, dried flowers, ginger, citrus confit and marzipan. With air, notes of ripe orchard fruit, baked apple, toasted brioche, roasted nuts and subtle pastry cream emerge, underscored by delicate mineral tension.
