PM Spirits Fino Saca Junio 2021 Jerez-Xeres-Sherry 750ml

This saca de Junio comes from a Fino solera that has aged in a bodega in El Puerto de Santa Maria. It has spent the entirety of its time aging beneath a veil of flor. Typically used for blending purposes, this remarkable solera has never previously been bottled on its own.
Nicolas Palazzi was raised surrounded by his family’s vineyards in Bordeaux and introduced to spirits, Cognac and Cognac cellars through a dear friend of Nicolas’ grandfather. This gentleman will be referred to as “Mr. X”.
Established somewhere in the Cognac region of France, Mr. X’s family started distilling at over a century ago. Recognizing in Nicolas a fledgling passion for Cognac, this mysterious man shared his knowledge and connections within the small and commonly impenetrable world of artisan Cognac. This gave rise to PM Spirits, as Nicolas began sourcing, collecting, aging and blending these rare casks and subsequently releasing limited series bottling in the USA.
PM Spirit’s passion for artisan spirits has slowly broadened its focus over the years to include within its portfolio other small-scale hand-crafted distillates such as Sicilian Grappas, French Eau-de-vies & Liqueurs, Rum, Tequilas, Mezcals.
Blandy's 5 Year Old Medium Dry Verdelho Madeira 750ml
Winemaker Description
Blandy's 5-year old Verdelho is a dark golden brown in color with the characteristic aromatic complexity of Madeira wines - raisins, dried apricots, roasted nuts, toffee and a distinctive marine note. Great with many desserts especially fruit based tarts, cakes, cheeses. Also, a great accompaniment to foie gras.
Clear, topaz color, with a golden rim. Complex nose, revealing a fresh bouquet with raisins, dried fruits, wood and spices.
Verdelho grapes are hand-harvested and fermented off the skins in stainless steel tanks. Neutral grape spirit is added to stop the fermentation at the desired level of sweetness. Then, the wines are aged in American oak casks and heated in the traditional Canteiro system, meaning they are transferred from higher floors in the lodge where it is warm to cooler floors below. The wine is regularly racked before bottling.
The island of Madeira is known for its distinctive varietal wines. Each varietal defines a particular style. Madeira wines are typically made from only one varietal, each made in one of the four Madeira styles: Dry, Medium-Dry, Medium Rich, and Rich. Madeira wines are fortified with grape spirit and have higher alcohol than so-called 'light' wines.
Chitosetsuru Junmai Daiginjo Sake Suisei Dry 720ml
Chitosetsuru Junmai Daiginjo Suisei — Hokkaido, Japan
Nippon Seishu — the brewery behind Chitosetsuru — is one of Hokkaido's most celebrated sake producers, based in Sapporo and dedicated to expressing the unique terroir of Japan's northernmost main island through the art of sake brewing. Hokkaido is a region of exceptional natural resources: pristine soft spring water, cold winters ideal for slow, controlled fermentation, and a growing tradition of cultivating sake-specific rice varieties uniquely suited to the local climate. Chitosetsuru Junmai Daiginjo Suisei is one of the first sakes ever made from Hokkaido's native 'Suisei' rice variety — a local grain with low starch content that allows for a clean, dry sake of excellent structure and remarkable elegance. The rice is milled to 45% of its original size — the hallmark of Junmai Daiginjo, the highest classification in sake — removing the outer layers to reveal the pure, aromatic core of the grain. Fermented with Kyokai #1801 yeast and soft Hokkaido spring water, it is crafted to pair with the abundant seafood of the region: best with simply prepared dishes where the ingredients shine.
The nose is clean and aromatic: light, sweet steamed rice with delicate notes of Muscat and white flowers. On the palate, it is medium-bodied with a creamy texture — refined and precise, with a crisp, structured, dry finish that speaks to the low starch content of the Suisei rice.
