Fabien Cazé, a tenth-generation grower, farms selected family parcels for his own small Champagne project. Naturellement is made entirely from Pinot Meunier grown across six parcels in Châtillon-sur-Marne and Vandières, on the western side of the Vallée de la Marne.
The family has tended these vineyards for generations, and Fabien's estate has been certified organic since 2018. Vineyard work is done by hand without herbicides or pesticides, with minimal soil disturbance. In the cellar, the grapes are pressed slowly and gently, moved by gravity, and fermented with native yeasts in barrels.
Extended time on fine lees and a restrained cellar approach let the fruit and place remain at the center. The result is a pure, precise Blanc de Noirs Extra Brut that showcases Pinot Meunier in a focused Champagne style.

The Rosé de Macération is a deeply individual and highly distinctive rosé Champagne made entirely from Pinot Noir grown on clay-limestone soils in Mareuil-sur-Aÿ. Rather than producing the rosé by blending white Champagne with still red wine — the conventional method — Fabrice allows the freshly pressed juice to remain in contact with the grape skins for up to 12 hours. This short maceration extracts color, aroma, and gentle tannin while preserving the freshness and precision essential to Champagne, giving the wine its distinctive pale ruby color, structure, and expressive red-fruit character.
Fermentation takes place in a combination of traditional enameled tanks and neutral oak barrels. Approximately 80% of the wine is élevaged for eight months, while the remaining 20% is aged for 18 months in neutral oak. The current year's wine is then blended with the longer-aged portion retained from the previous harvest — a thoughtful assemblage that balances the natural tannic structure of a macerated rosé with the softness, complexity, and mellow texture developed through extended aging.

Pierre Paillard's Les Terres Roses XIX is a refined and vinous rosé Champagne produced entirely from the Grand Cru vineyards of Bouzy, one of the Montagne de Reims' most celebrated villages. Bouzy is particularly renowned for its powerful, deeply flavored Pinot Noir, while its chalk-rich soils bring freshness, structure and mineral definition to the finished wine.
The XIX release is based primarily on the 2019 harvest and is composed of approximately 70% Chardonnay and 30% Pinot Noir. Five percent of the blend is Bouzy Rouge — a still red wine made from old-vine Pinot Noir — which contributes the cuvée's delicate color, red-fruit character and subtle tannic structure.
Fermentation takes place in oak, followed by approximately three years of aging on the lees before disgorgement. A low dosage of 2 grams per liter preserves the wine's dry, precise Extra-Brut character while allowing the richness of the Bouzy fruit to remain beautifully expressive.
Pale pink in color, Les Terres Roses XIX opens with pure aromas of raspberry, red currant, wild strawberry and cherry, joined by notes of grapefruit, mandarin, iris blossom and crushed chalk. Benoît Déhu’s Cuvée Initiation Brut Nature is a distinctive grower Champagne from Fossoy, on the western edge of the Vallée de la Marne in Champagne, France. Déhu is an eighth-generation vigneron whose family Champagne house dates to 1787. After working at Champagne Bollinger, he returned to the family estate and began pursuing a highly personal approach centered on biodynamic farming, parcel expression, low-intervention winemaking and the potential of Meunier.
Initiation is a blend of Meunier and Pinot Noir. The Meunier comes from Déhu’s celebrated La Rue des Noyers parcel, while the Pinot Noir is sourced from a small parcel lower on the hillside with predominantly clay and sand soils. Déhu planted the Pinot Noir using massale selections derived from a Pommard clone from Burgundy, bringing an intriguing Burgundian influence to this deeply Champenois wine.
La Rue des Noyers forms the heart of Déhu’s independent project: a 1.7-hectare parcel farmed biodynamically, with a portion traditionally worked by horse. Déhu is particularly known for fermenting and aging his wines in oak, including barrels made from trees harvested in the nearby forest of Fossoy. His Champagnes favor tension, energy and minerality rather than overt richness.
For the 2021 base, malolactic fermentation was blocked and the wine was bottled with no dosage, giving the Champagne its taut, dry and mineral-driven personality. The finished wine combines crushed-stone minerality with floral, herbal and red-fruited nuances, showing impressive energy and precision. The wine was disgorged on April 26, 2024.

The first wine tasted in a short vertical to highlight the evolution of the NV Champagne Brut over the past several years, this release is from the 2016 vintage and is composed of 44% Meunier and 28% each Pinot Noir and Chardonnay, with 64% reserve wine, with 4% cask aging. Pouring a rich straw hue, it opens to generous and lightly toasty aromas of ripe red berries, caramel, and honeycomb. Medium to full-bodied, it’s ripe, rounded, expressive, and approachable, although it feels the touch of dosage in its texture as well as the suggestion of sweetness. Its fruit is ripe and long on the palate, with a hint of walnut skin on the long finish. It is certainly the classic, old school style, and compared to the other wines, has a bit broader shoulders. Its toasty touch likely comes from the malolactic fermentation that was permitted as opposed to oak.
