Greywacke Sauvignon Blanc — Wairau Valley, Marlborough, New Zealand 2025

Greywacke is the personal project of Kevin Judd — the winemaker who spent two decades building Cloudy Bay into one of the world's most recognized Sauvignon Blanc brands before striking out on his own. Named after the hard, dark stone that forms the riverbeds of Marlborough, Greywacke is a small-production estate focused on wines of genuine depth and site specificity. The Wairau Valley Sauvignon Blanc is their benchmark expression: harvested largely by machine during cool, often cold night-time conditions, picked earlier than normal over a three-week period commencing 16 March, transported directly to the winery in the Omaka Valley, lightly pressed for high-quality juice, and left on lees on individual vineyard batches until late June before blending. Marlborough Sauvignon Blanc with the volume turned down a notch — and all the better for it.

The 2025 pours a pale, luminous gold. The nose is vibrant and aromatic — lemon blossom, honeydew melon, orange blossom, passion fruit, white pineapple, kumquat, and lime sherbet, delicately infused with herb garden botanicals and a flourish of elderflower and wildflowers. The result is a wine of concentration and elegance in equal measure.

The nose is rich and captivating: dark black currant, plum, and blackberry take center stage, joined by cedar, clove, and a touch of lavender. On the palate, it is full-bodied with layered dark fruit, firm but polished tannins, and a long, structured finish that speaks to Napa's finest terroir.

Plump Mediterranean mussels chargrilled over hardwood coals and preserved in bright escabeche, offering balanced smoke, brine, and acidity.

Plump and tender with smoky sweetness, briny depth, firm structure, and bright acidity.

These 14–16 count mussels showcase one of Güeyu Mar’s most expressive uses of brasa. Each mussel is grilled over glowing hardwood embers until the exterior caramelizes and the flesh absorbs gentle sweetness and smoke.

They are then preserved in Abel Álvarez’s house escabeche made with Arbequina olive oil, vinegar, and aromatics.  The bright acidity frames the fire-kissed flavor, creating a conserva that is sea-driven, smoky, and lifted.

The larger 14–16 size gives a fuller, meatier bite that stands up beautifully to both the grill and the marinade.

About Gueyu Mar:

Abel Alvarez is not a chef. He is an artist, an innovator, and above all an asador (grill master). His restaurant of the same name sits on Playa de Vega where the stars of each dish are caught and transformed. Simplicity is king at Güeyu Mar, where the ingredients are minimal, local, and intentional. Woods selected for their aromatic qualities create fire for the brasa (grill) on which each fish is kissed. Some go to lunch service at the restaurant, while others are preserved in a can for you to savor whenever the moment strikes.

The Gush Etzion Blessed Valley Chardonnay Special Reserve has an intense aroma which gives off a scent of citrus blossoms, jasmine and ginger, alongside the smell of seasoned nuts which comes from the barrels. Medium-bodied, thick and rich but at the same time crisp and acidic.
