At PM Spirits, we're always on the lookout not just for superlative spirits, but also for like-minded people. When we met Jose Luis Gutierrez, we knew right away he was someone special.

Having spent years working both independently and for the Mexican Trade Commission throughout Europe – promoting and establishing reciprocity of the Tequila Denomination of Origin – Jose Luis later started working closely with producers in Jalisco in order to source and provide quality Tequila directly to European brands and bottlers.

We had been wanting to collaborate with someone on bottling a PM Spirits Project Tequila for quite some time. Jose Luis' passion for and knowledge of the spirit was apparent to us from day one, and we could think of no better person to have worked with to make this project happen. Thank you, Jose Luis.

This Tequila is the product of one single oven or horno. It was distilled from 100% estate-grown Blue Weber Agave. Bottled at two strengths – 80 proof and still strength 110 proof. No additives. 

Podere Castorani · Cadetto · Montepulciano d’Abruzzo DOC · Abruzzo · Italy · 2022

Podere Castorani is one of Abruzzo’s most compelling estates — a historic family winery in Alanno co-owned by former Formula One driver Jarno Trulli, who brought a racing driver’s obsession with precision and detail to his family’s winemaking heritage. The estate farms organically, without synthetic fertilizers or pesticides, letting the terroir of Abruzzo speak clearly in every bottle. Cadetto — meaning “Cadet” — is the estate’s entry-level expression of Montepulciano: pure fruit, freshness, and organic integrity at an exceptional price point.

The 2022 pours a deep ruby with violet notes. The nose is intense and inviting — red fruit, dark cherry, plum, and light hints of spice and chocolate. On the palate, it is full-bodied with mature, smooth tannins, refreshing acidity, and a finish that lingers with spice and cocoa. Approachable now and versatile at the table.

Podere Grattamacco's Bolgheri Superiore is one of the coast's most compelling expressions — a Cabernet Sauvignon-led blend with Merlot and Sangiovese, grown on the mineral-rich soils of the Bolgheri DOC. James Suckling 92 Points | Aromas of blackberries, tar and wet earth follow through to a medium body with bright, chewy tannins and a pretty finish. Some iodine character, too. Delicious, savory aftertaste. It’s drinkable now, but will deliver more in a year or two. Drink in 2022.

Winemaker Description

This small winery is the project of Sandrino Quadraroli, the owner of one of the finest restaurants in central Marche, Osteria del Borgia. Always a champion of the wines of his region, starting in 2012 he was finally able to crown his dream of producing wine. 

The 4 hectares estate was planted in 1999, upside down Guyot system, on clay, sandy and calcareous soil 500 meters above sea level on the south-facing hills right above lake Caccamo in the township of Serrapetrona located in the mountainous central part of the Marche region. 

The focus of the winery is the grape varietal indigenous to this sub-region: Vernaccia Nera, not found anywhere else in the world. This grape has a long history, however it was traditionally vinified sparkling and semi-sweet, possibly in order to tame the bold characteristics that this varietal has: crushed white and black pepper. Over the past two decades or so, a new generation of wineries in the area is concentrating on exalting the unique character of Vernaccia Nera and are bottling still, dry wines. The results are fascinating: the wines are distinctive, aromatic, full-bodied but elegant and vibrant, with good minerality and refreshing acidity.

This 375ml half bottle brings Oddero’s 2021 Barolo to a smaller table. Made from Nebbiolo in the Langhe, it offers floral and red-fruit character, with the polish Vinous found in this vintage. Open it with a meal, or give it a little time in the glass to unfold.

I was so impressed with these 2021s from Poderi e Cantine Oddero. I suppose I should not be surprised, given where the wines have been over the last handful of years, but at the same time, I can't forget the enormous strides the Oddero family has made over that period. The 2021 Barolo is fabulous. Aromatic, pliant and wonderfully inviting. Oddero's Barolo shows just how appealing this vintage is. Crushed flowers, red/blue-toned fruit, spice and perfumed notes build nicely in the glass. Polished, silky tannins wrap it all together in style. Vineyard sources are Bricco Chiesa, Capalot, Bricco Fiasco and a bit of Galina. Drinking 2025 to 2033.

James Suckling 94 Points | This exhibits violets and tar, as well as underbrush and a distant bitter-chocolate note. The palate is angular and incisive, well-constructed with a harmonious interplay between the focused acidity, fine grained tannins and delineated, fleshy fruit. Precise. Best ever from here. Better in 2028.

The Wine Spectator by Bruce Sanderson 94 Points | A sleek, elegant red, silky in texture and linear in profile. Rose, macerated cherry, strawberry, mineral and spice flavors abound, while a line of energetic tannins shows up on the long finish. This wine's purity and structure show the potential of the vintage.

Jeb Dunnuck by Audrey Frick 93 Points |  One of the overachievers of the vintage for a regional Barolo and a strong contender for top of the year lists, the 2021 Barolo Ludo pours a reflective brick red color and is attractive on the nose with notes of cinnamon sticks, fresh cherries, mossy earth, and anise. The palate offers a good balance of richness in the structure of its medium-bodied frame, with ripe tannins, lovely clarity of fruit, and refreshing ripe acidity. A gorgeous entry-level Barolo, it’s stunning now and has the potential to age with ease over the next 12-15 years.

The Poderi Luigi Einaudi Barolo "Ludo" 2021 is a significant release, as 2021 is being hailed as an exceptional, "best-ever" vintage for this specific bottling. Unlike Einaudi’s single-vineyard crus (like Cannubi or Bussia), Ludo is a blend of Nebbiolo from younger vines across those famous sites, designed to be more approachable in its youth.

Why "Ludo"? The name comes from the Latin ludus, meaning "playful."

Michael Alberty of the Wine Enthusiast writes 93 Points | Every year I marvel at how such a marvelous Riesling can be $20. The Poet's Leap opens with an aromatic ode to lychee fruit, honeysuckle, almond butter and a wisp of petrol. Lemony acidity curls itself around flavors like green honeydew melon, rose water and the sweetness of a slice of peach pie. The 2023 is as good as any in recent memory. Mercy.

Vinous 90 Points | The 2023 Riesling Poet's Leap is delicate and understated, with notes of shaved lemon zest, green melon, mint and hints of petrol. It mixes ripe orchard fruits and salty mineral tones with a core of brilliant acidity. This finishes with medium length and remarkable lift, leaving a suggestion of citrus sorbet on the finish.

The 2023 Poet's Leap Riesling is a beautiful, vibrant wine showcasing aromas of white blossoms and ripe orchard fruits, complemented by subtle flinty notes. Poggio al Tufo Rompicollo — Maremma Toscana 2022

Poggio al Tufo Rompicollo is a Tuscan “Super Value,” crafted from a single-vineyard site in the Alta Maremma.

Poggio al Tufo is the Maremma estate of Tommasi Family Estates, one of Italy's most respected multi-generational wine families. Situated in the Alta Maremma near Pitigliano, the estate takes its name from the volcanic tufo rock that defines its soils — porous, mineral-rich, and unlike anything found in the more celebrated corners of Tuscany. The Rompicollo vineyard sits on a south-facing slope where the combination of volcanic soils, Mediterranean warmth, and coastal breezes produces wines of uncommon depth and freshness for the price.

The 2022 Rompicollo is a blend of 60% Sangiovese and 40% Cabernet Sauvignon — a Tuscan-international marriage that works beautifully here. The Sangiovese brings structure, acidity, and that characteristic Tuscan earthiness; the Cabernet adds body, dark fruit, and a plush mid-palate that rounds out the blend. The result is a wine that punches well above its price point: serious, food-friendly, and immediately approachable.

Antonio Galloni writes | The estate's 2009 Taffe Ta' (100% Colorino) is striking. Blackberry jam, cloves, menthol, licorice and melted road tar seem to jump from the glass. Rich, layered, and impeccably balanced throughout, the Taffe Ta' is simply stunning in this vintage.

Producer Description 

The Cherry Brandy by Pojer and Sandri is obtained from two varieties of cherries: 70% Stevnsbaer and 30% Schattenmorelle. The distillation takes place through an innovative discontinuous bain-marie still.

This distillate is part of the most traditional brandies, but unlike those produced in Switzerland, the Black Forest or Alsace, this one uses sour cherries (marasca) instead of sweet ones, which results in a more delicate product. Crystalline white color. Initially intense flavor, then soft and dry, in line with the typicality of the original fruit.

Pol Roger Brut Réserve — Épernay, Champagne, France NV

Pol Roger is one of Champagne's most storied and beloved houses, founded in Épernay in 1849 and still family-owned today. It is perhaps best known as the preferred Champagne of Sir Winston Churchill — who reportedly consumed 42,000 bottles in his lifetime and kept a standing order at the house until his death. The Brut Réserve is their flagship non-vintage expression: a blend of equal parts Pinot Noir, Chardonnay, and Meunier drawn from a minimum of three base vintages, aged six months post-disgorgement with a dosage of 8g/L. It is a Champagne of remarkable consistency, elegance, and depth — and one of the great benchmarks of the non-vintage category.

The wine pours a pale gold with a fine, persistent mousse. The nose is richly biscuity and complex — steamed rice, fresh pear, Amalfi lemon, citrus blossom, mandarin oil, honeycomb, elderflower, and fresh bread. On the palate, it's creamy and beautifully balanced: medium-to-full-bodied, fleshy and enveloping, with a rich core of red apple, stone fruit, ripe red berries, and grapefruit, lively acidity, and a pillowy mousse that dissolves into a dry, harmonious, honeyed finish. Blanc de Blancs 2002 is a champagne made exclusively from Chardonnay selected from the finest Crus of the Côte des Blancs: Oiry, Chouilly, Cramant, Avize and Oger. Produced in limited quantities, this cuvée has matured for 10 years prior to disgorgement.

This is a thoroughbred, elegant sparkler. With its delicate acidity, apple and grapefruit flavors, and tense, steely texture, it is an extremely well-balanced wine. Although it is ready to drink now, it could certainly age in bottle for many years.

Since its 175th anniversary, Pol Roger has decided to offer a very limited range of older vintages from its iconic cuvées. After the original disgorgement, these bottles were then returned to the famously deep and cool Pol Roger cellars for additional extended maturation where they have rested undisturbed until their release. Not only do these bottles have a label, cap and collar based on a historic Pol Roger design, they also have been dressed by hand and arrive in an elegant wooden box.

The Sir Winston Churchill Cuvée was created in 1975 as a tribute to the "Old Lion", using the qualities he appreciated in champagne : robustness, structure and maturity. Whilst its exact composition is a secret guarded by family members, it is undeniable that it is based on a formula of which its dedicatee would have approved : "My tastes are simple, I am easily satisfied with the best". Made exclusively with grapes from the Grands Crus of Pinot Noir and Chardonnay already in production during the Churchill era, this cuvée is only produced in the very best vintages.

The predominance of Pinot Noir unquestionably ensures structure, fullness and robustness, while Chardonnay lends elegance, finesse and freshness. Produced in limited quantities, this cuvée has matured for 10 years prior to disgorgement.

Vinous 90 Points |  This is juicy in style and remarkably pure, with a subtle tinge of minerality and vividly ripe cherry-berry fruit notes that flow across a stream of fresh acidity. It tapers off crisp and only gently tannic yet poised with medium length. This is fantastic for the difficult 2023 vintage and not your typical Poliziano Rosso, with just 50% of production and 100% Sangiovese.

Pommery Champagne Brut Royal NV — Half Bottle (375ml)

Pommery is one of Champagne’s most storied and innovative houses, founded in 1836 and famously credited with introducing the first successful dry “Brut” style Champagne to the world in 1874 — a style they have been perfecting ever since. Based in Reims, Pommery is known for its elegant, refined approach and its iconic Art Nouveau cellars, carved deep into the chalk beneath the city. Brut Royal is the house’s signature non-vintage expression: an equal blend of Chardonnay, Pinot Noir, and Pinot Meunier, crafted to showcase the balance, finesse, and minerality that define the Pommery style. Pommery holds a singular place in Champagne history: in 1874, the house introduced the world’s first successful Brut Champagne — a revolutionary departure from the sweet styles that dominated the era. Winemaker Description

Created as a tribute to Louise Pommery, Cuvée Louise is an absolutely pure wine which quintessentially conveys the wine-making expertise of the Pommery champagne house. 

The wine has a yellow, slightly golden color with an exceptional brightness and limpidity. The effervescence is fine and delicate.

This 2005 is marked by floral notes in all their complexity. Owing to the long aging, notes of linden, hawthorn and vineyard peach. With its high purity, the bouquet is delicately blended with buttery notes. After aeration, the Pinot Noir expresses itself and the wine gains aromas of roasted hazelnuts and mild tobacco.

This wine is like a caress, its texture is velvety and creamy. The attack is frank, without asperity and imbalance. With incredible harmony and minerality, the heart of the tasting is intensive and structured. The finale, with the gentleness of honey and lemon, comes to punctuate this wine and provides the vintage with signature delicate flavor, noble bitterness and structure.

Tasting Notes

Spiced blueberries, plum and cranberry leap from the glass, followed by denser notes of dry forest floor, sagebrush and leather. Winemaker Description 

Federspiel is a designation of ripeness for dry wines, a term used exclusively by members of the Vinea Wachau.

Federspiel wines must be unchaptalized and fall between 11.5 and 12.5% ABV. The grapes are hand-harvested, typically in October, and are sent directly to press where they spontaneously ferment in stainless-steel tanks. Franz Prager, co-founder of the Vinea Wachau, had already earned a reputation for his wines when Toni Bodenstein married into the family.

Bodenstein’s passion for biodiversity and old terraces, coupled with brilliant winemaking, places Prager in the highest echelon of Austrian producers. Steinriegl is planted to Riesling and is Prager’s only vineyard west of Weißenkirchen.

The exceptionally steep, southwest-facing site has a cool mesoclimate due to its proximity to the forest, and its soil is a unique “kalksilikatmarmor,” a limestone silicate marble rarely found elsewhere in the Wachau. Bodenstein produces both an earlier-picked Federspiel and a later-picked Smaragd.

Austrian Riesling is often defined by elevated levels of dry extract thanks to a lengthy ripening period and freshness due to dramatic temperature swings between day and night.

Steinriegl’s uniquely cool microclimate results in wines of high aroma and focused acidity and its limestone soil provide compact structure and a flavor that is distinctive among Wachau Rieslings.Riesling’s high acidity makes it one of the most versatile wines at the table.

Riesling can be used to cut the fattiness of foods such as pork or sausages and can tame some saltiness. Conversely, it can highlight foods such as fish or vegetables in the same way a squeeze of lemon or a vinaigrette might.
