The soils are highly calcareous with very little clay over deep chalk subsoil — the source of the wine’s distinctive mineral tension. Pierre Paillard's Les Terres Roses XIX is a refined and vinous rosé Champagne produced entirely from the Grand Cru vineyards of Bouzy, one of the Montagne de Reims' most celebrated villages. Les Parcelles Bouzy XXII is the signature expression of Pierre Paillard's historic estate in the Grand Cru village of Bouzy. Based primarily on the 2022 harvest, this Pinot Noir–dominant Extra Brut Champagne balances the generosity and power associated with Bouzy's sunny southern slopes with the precision, freshness and mineral structure provided by its chalk-rich soils.
The Paillard family has cultivated vines in Bouzy for more than two centuries. Today, eighth-generation brothers Antoine and Quentin Paillard oversee an estate of approximately 11 hectares, farmed organically and situated entirely within this celebrated Grand Cru village on the southern side of the Montagne de Reims.
Les Parcelles XXII is composed of 80% Pinot Noir and 20% Chardonnay. The blend is based on 80% wine from the 2022 harvest, complemented by 20% reserve wine to add depth, harmony and continuity of style. The fruit comes from mature, south-facing vineyards in Bouzy, including Les Maillerettes, Les Mignottes and Les Mottelettes, planted over chalky soils containing a proportion of clay.
Fermentation takes place with indigenous yeasts in 350-liter oak barrels, followed by full malolactic fermentation. The wine remains in barrel during its initial élevage and then matures for 36 months on the lees after the secondary fermentation. It is disgorged with a very low dosage of 2 grams per liter and bottled without fining or filtration, preserving its vinous texture and distinctive Bouzy character.
Richly aromatic and expressive, the wine opens with roasted apricot, dried pear, ripe citrus and Seville orange, joined by notes of brown pastry, buttered toast and warm spice. The wine comes from the lieu-dit Les Dessus de Monthouzons in the Premier Cru village of Taissy. The Meunier vines were planted in 1963 on the lower, north-facing slopes of the Montagne de Reims. Here, a thin layer of clay lies directly over Champagne's chalk bedrock, giving the wine both richness and a firm mineral structure.
Produced entirely from Meunier, Taissy 2020 was vinified and aged in oak barrels. It was bottled under natural cork for the second fermentation and matured for approximately four and a half years on the lees before disgorgement. A rare and beautifully expressive still red wine from the heart of Champagne, Les Mignottes is produced entirely from Pinot Noir grown in a single south-facing parcel in the Grand Cru village of Bouzy. Rather than undergoing a second fermentation to become sparkling Champagne, the wine is bottled under the Coteaux Champenois appellation, revealing the depth, fragrance and mineral character of Bouzy Pinot Noir in its purest form.
The Les Mignottes vineyard lies on the warm, fully exposed southern slopes of the Montagne de Reims. Its chalky limestone terroir contains a higher proportion of clay than many neighboring Bouzy parcels, helping the Pinot Noir achieve excellent ripeness while retaining the freshness and mineral definition characteristic of Champagne.
The vines are farmed organically, and yields are kept low to encourage concentration. The grapes are harvested by hand and vinified in a Burgundian style, using approximately one-third whole clusters and indigenous yeasts. Following a 15-day maceration, the wine is matured for 12 months in French oak barrels, with only a small proportion of new oak. It is bottled without fining or filtration, preserving its natural texture, aromatic detail and sense of place.
The 2022 vintage is vivid and perfumed, opening with aromas of ripe cherry, wild strawberry, raspberry and plum, accompanied by violets, lavender, exotic spice, cocoa and subtle savory-earth notes. This Vermouth uses a mixture of 26 aromatic herbs such as marjoram leaves, gentian roots, orange zest and others, which all together compose our family recipe. We then add a blend of different Pio Cesare white wines, including our Moscato d’Asti. After a 15-day maceration, the Vermouth obtained is aged in oak barrels for at least 4 months. The Recipe is finally completed with the addition of caramel, which gives our Vermouth its light color, and its distinctive aroma and taste. In order to better appreciate our Pio Cesare Vermouth, we recommend drinking it in the old “piemontese style”, sipping it with no ice, but just a little slice of lemon zest.

It is round and opulent, with a fine and pillowy mousse, and retains freshness throughout, with apricot and yellow flowers. It is impressive and long, and fully luxurious. Drinking well now, it is sure to hold its own for years to come. Drink 2022-2044.
93 Points Wine Advocate: The newly released 2008 Brut Cuvée Rare is very promising, unwinding in the glass with a youthfully reserved nose of citrus oil, crisp green apple, freshly baked bread, iodine and oyster shell, as well as some rather herbaceous characteristics that depress my score a little, even if I suspect that they will resolve with a bit more bottle age. Medium to full-bodied, incisive and tightly wound, if the 2006 vintage was gourmand and demonstrative, the 2008 is slower to show all its cards. Built around racy acids and complemented by a pillowy mousse, this rendition of Cuvée Rare will reward a few years more on cork.

Jeb Dunnuck 98 Points | Originally a part of the legendary Piper-Heidsieck Champagne house, Rare is moving their Champagne Millésime to a new brand and want it to stand alone. (Think Delamotte and Salon.) The 13th vintage for this cuvée, the 2013 Champagne Millésime is a blend is 70% Chardonnay with the rest Pinot Noir, with the majority of the blend coming from the Montagne de Reims Grand Cru and Premier Cru. A bright yellow hue, its aromatics are exquisite and well-balanced, with fresh notes of key lime, candied apple, fresh croissant dough, fresh pineapple, and honeysuckle. Medium to full-bodied, it fills the palate with a rounded and supple texture and a pillowy mousse. It’s long on the palate and has a silky personality as well as a long, pristine finish. It has fantastic balance of decadence and freshness, and I could drink this all day. It’s going to have a long drinking window.

Plenty of apricot pastries, pears, brown butter, fennel and salted almonds, with some iodine. Vinous 95 Points | The 2013 Brut Millésime, a blend of 70% Chardonnay and 30% Pinot Noir from the Montagne de Reims, spent eight years on lees. A gorgeous whiff of reductive smokiness precedes a sea breeze and hints of toasted nuts. The palate is a picture of tautness, filigree foam, finesse and svelte poise. This wine is wonderfully pure and bracing, with hints of caramelized hazelnuts and almonds teasingly in the background, gaining definition from an oystershell saltiness. The longer you pay attention, the more happens in this wonderfully nuanced and sophisticated wine.
Decanter 95 Points | Initially cool and breezy on the nose, like sea spray and freshly sliced lemons. As it warms, it shows fresh pineapple, coconut, Sorrento lemons and a tiny touch of toast on the finish. This really is very youthful, taut and tingling, with very fine acidity. Lots of intrigue to come as it ages. 2013 was sunny in the early part of the season, but was also very cool. Harvest did not take place until October, the only time in the last 30 years that harvest has taken place in October. The grapes matured very slowly.
