Greywacke is the personal project of Kevin Judd — the winemaker who spent two decades building Cloudy Bay into one of the world's most recognized Sauvignon Blanc brands before striking out on his own. Named after the hard, dark stone that forms the riverbeds of Marlborough, Greywacke is a small-production estate focused on wines of genuine depth and site specificity. The Wairau Valley Sauvignon Blanc is their benchmark expression: harvested largely by machine during cool, often cold night-time conditions, picked earlier than normal over a three-week period commencing 16 March, transported directly to the winery in the Omaka Valley, lightly pressed for high-quality juice, and left on lees on individual vineyard batches until late June before blending. Marlborough Sauvignon Blanc with the volume turned down a notch — and all the better for it.

The 2025 pours a pale, luminous gold. The nose is vibrant and aromatic — lemon blossom, honeydew melon, orange blossom, passion fruit, white pineapple, kumquat, and lime sherbet, delicately infused with herb garden botanicals and a flourish of elderflower and wildflowers. Mahi is the project of Brian Bicknell, one of Marlborough's most thoughtful and independent-minded winemakers. Where much of the region's Sauvignon Blanc is made in a loud, industrial style — cold-fermented in stainless steel to maximize tropical fruit and aromatic punch — Bicknell takes a fundamentally different approach. Drawing on what he calls a "chef's philosophy," he incorporates wild yeast ferments and aging in old oak barrels to build texture, complexity and genuine depth into a variety that is too often reduced to a single dimension. The result is a Sauvignon Blanc that stands apart: more sophisticated, more food-friendly and more interesting than the category norm.

The 2025 opens with an expressive and layered nose — lemon peel, grapefruit pith, apple blossom and pastry, with citrus and tropical notes woven through secondary characters that emerge from the wild ferments and barrel aging. The palate is elegant and well-structured, with a creamy, textural mid-palate that sets it apart from the region's stainless-steel standard. Bright acidity provides freshness and lift, while the long, complex finish reflects the care and intention behind the winemaking.

About the Wine

Originally Australian, winemaker Anthony ‘Ant’ Moore moved to Marlborough on New Zealand’s South Island in the early 2000s and never looked back. His signature approach — old oak barrels and extended lees aging — tempers the searing acidity and typical greenness of NZ Sauvignon Blanc, resulting in a wine with greater texture, complexity, and tropical fruit depth than most in its class.

Winemaker's Notes:

Te Koko 2023 is initially reticent on the nose, but with time in the glass opens to reveal notes of just-ripe mango, lemon verbena and juicy sun-warmed lemon. The palate is concentrated and mouthwateringly complex. The sun-warmed impression continues, with notes of meadow hay, preserved citrus, and white nectarine, with layers of salted almond and a gentle smoky minerality leading through to a long and focused finish.
