Rihaku ‘Dreamy Clouds’ Nigori Tokubetsu Junmai Sake — Shimane, Japan | 720ml

Rihaku ‘Dreamy Clouds’ is one of the most technically accomplished Nigori sakes in the world — and one of the most quietly revolutionary. Brewed in Shimane Prefecture from Gohyakumangoku rice, this cloudy sake achieves something rare: a milling rate of 59% that technically qualifies it as Junmai Ginjo grade, making it one of the only Nigori sakes in existence to reach that quality threshold. Where most Nigori are sweet, heavy, and one-dimensional, Dreamy Clouds is bright, lean, and genuinely complex — a sake that invites Nigori lovers to discover an entirely new dimension of what cloudy sake can be.

The appearance is beautifully cloudy, with the characteristic milky white of unfiltered sake. The nose is nutty and inviting, with dark plum and a tangy, citrus-tinged lift. Pajé is a small 1.83-hectare (4.52-acre) strip of land facing southwest, particularly rich in calcareous marl with a high content of active limestone. The vines range from 25 to 50 years of age (averaging over 40), and all new plantings are propagated using the massale selection method — clippings pruned exclusively from the Pajé vineyard itself.

The Black Chicken Story

It all started in the 1940s when 14-year-old Aldo Biale helped his mother make ends meet by selling to insider Napans — along with eggs and produce — some of the family’s homemade Zinfandel. Over the old “party line” phone system, the code words “a Black Chicken” signified a jug of bootleg wine, keeping nosy neighbors and the authorities from finding out about Aldo’s underground Zinfandel operation. Legally produced since 1999, Black Chicken Zinfandel pays homage to the industrious patriarch of the Biale family and the prominence of Zinfandel in the history of Napa Valley.

The heart of Black Chicken is sourced from vineyards in the Oak Knoll District — among them the same family vineyard Aldo, Nonna, Bob, and the Biale family have farmed since the 1930s. Black Chicken stands as the quintessential expression of Zinfandel from the Napa Valley.

2023 Vintage Notes

The 2023 season was one of the coolest vintages in more than a decade. Several years of drought were erased in a single season as rains began just after the 2022 harvest and continued through spring 2023. Ample groundwater and cool temperatures delayed budbreak until April, with flowering in mid-May. Moderate temperatures through spring and summer allowed for balanced maturation — picking at the perfect intersection of flavor, sugar, acid, and tannin maturity. Harvesting began with earlier sites in September, with moderate heat in early October accelerating picking through the end of the month.

Just as “Flor de Pingus” and La Fleur Petrus are indicative o second tier offerings, so it goes with our La Fleur Cabernet Sauvignon.

The 2023 Robert Craig Winery La Fleur Cabernet Sauvignon exhibits deep, saturated color along with spicy, black fruit up front and a sturdy backbone of mineral and tannin. A significant amount of time in new French Oak barrels have rounded out the edges of this young Cabernet and given it a suppleness and integration that can’t be found with less expensive American oak or the dreaded barrel stave flavor treatment.

Deep rich ruby. Aromas of blackberry cobbler, ripe and dark mixed berries, graham cracker, brown sugar, vanilla, milk chocolate, toasty oak, with notes of coffee and smoke. On the palate, ripe blackberry cobbler, blueberry pie, pralines, sweet vanilla custard, brown sugar, caramel, and mocha with hints of coffee. Ripe, dense, and soft chewy tannins with toasty oak round the wine out with a lush, long, and lingering finish.

Winemaker Description 

These ancient, own-rooted País vines are 800 meters from the Bío Bío river in a dry river bed that used to hold the river. The soil is especially unique with an alluvial top-layer over black, sandy (basaltic) soils.

This is “País Franco”—as in piè franco—meaning the vine is ungrafted like most of Henriquez’s vines, but the name also draws attention to how this cuvée is one of the most honest, pure and frank versions of the variety available.

The Roc de l’Abbaye Sauvignon Blanc Val de Loire 2025 is crafted by winemaker Florian from carefully selected vineyards in Oisly, close to the Cher River in the Val de Loire. This wine receives the same rigorous selection, vinification, and maturation as prestigious Sancerre and Pouilly-Fumé — at a fraction of the price. The result is a crisp, mineral-driven Sauvignon Blanc with intense aromatics and exceptional freshness that captures the essence of Loire Valley terroir.

Monica Larner writes;  The 2018 Maremma Toscana Ornello is a blend of Sangioveto (Sangiovese), Merlot, Cabernet Sauvignon and Syrah from the design winery of Rocca di Frassinello on the Tuscan Coast. This wine pays homage to the "butteri," or cowboys, that roam this remote and hilly terrain with their sturdy horses and leather hats. This wine shows a dark and meaty character, no doubt added by the Syrah, with some burnt ember and exotic spice. The bouquet is infused with dark fruit, dried plum and blackberry preserves. ROCCAFIORE FIORFIORE GRECHETTO DI TODI 2023 | 750ML

🇮🇹 Italy — Grechetto di Todi | Todi, Umbria

Straw yellow with golden reflections. The nose is generous and expressive — pineapple, golden apple, yellow flowers, and delicate hints of white spice. On the palate it is enveloping, fresh, and sapid, with good minerality and a sleek texture that speaks to both the single-vineyard terroir and the 12 months of amphora aging. A wine of great elegance and complexity, with a drinking window that extends 3–4 years from harvest.

Fiorfiore is produced from a single vineyard of Grechetto di Todi (clone G5) planted in 1990, trained Guyot on whitish clay soils rich in marl, limestone, and chalk. Fermentation is spontaneous with indigenous yeasts; the wine is then aged 12 months in amphora and large Slavonian oak casks on fine lees, with no malolactic fermentation, followed by a minimum of 6 months in bottle before release.

Cantina Roccafiore was established by the Baccarelli family in 1999 on 15 hectares of rolling hills near Todi — the green heart of Umbria.
